Mama's Italian Wedding Soup

This is REALLY good soup!! This was my first attempt at Italian Wedding Soup and we loved it! I added 1 clove of garlic to the meatballs and just eyeballed the rest of the ingredients. Next time I would add more garlic (2 large cloves). I also added a lot more fresh spinach than called for, I used a 10oz package of roughly chopped baby spinach and thought it was the right amount; I also used about 1 cup of orzo. The recipe made 66 meatballs (I rolled out the meat mixture and cut with a knife) and found that the meatballs probably should have been smaller. All in all - a delicious soup that we will definitely make again.

Corn Chowder with Chiles

This soup was delicious!! I made it for Darryl's family and doubled the recipe and omitted the chile's. Really, really good - everyone enjoyed it! I made this a second time and made a few changes. Used an anaheim chile and although it smelled great, I don't think it impacted the end result because we couldnt' taste it, so I dumped in almost a whole can of chopped green chile's. I also pulled out about 2 cups of the soup, pureed it and added it back to the pot. The end result is quite good, satisfying soup. The next time I make this, I will remove all the bacon (used 7 slices) and just top the soup with it.

Apple, Parsnip and Sweet Potato Crumble

This was ok - not too time consuming to make. I added leek to the apples and I omitted the brown sugar because I thought it might be too sweet with it. If I make again, I will likely add the brown sugar. Also, I don't think the chicken broth/apple juice added much to the flavour.

Peanut Butter Cup Cupcakes

Well I don't know if I did something wrong, but while the flavour of these was good, the texture was extremely crumbly. I didn't use any muffin liners, and the cupcakes were really hard to get out of the pan and I ended up breaking probably 50% of them. This recipe makes a lot - I made 12 regular sized cupcakes and 24 mini cupcakes. For the mini's, I just cut my PB cups in half and that seemed to work out just fine. All in all - good flavour, but not likely that I'll make them again considering how difficult they were to get out of the pan.

Homesteader Cornbread

I made this recipe exactly according to the recipe (for once) and the end result was good. Had I reviewed the recipe last night after we ate it for supper, it would have received 5 stars, but I waited until today and I'm glad I did. While the bread was very good last night (still warm out of the oven), it was significantly dryer today (requiring a lot of butter to give it some moisture). The texture of the bread was almost cake-like, but I suspect that's because I soaked the cornmeal in the milk for 5 minutes, but then I also whipped all the ingredients in my Kitchenaid mixer for another 4 or 5 minutes. So I will likely make this again because the flavour was very good, but next time I won't mix it for quite as long.

Millie Pasquinelli's Fried Chicken

I made this chicken for supper tonight and it was pretty good. I followed the directions exactly but scaled to 4 servings and used only chicken breasts cut in half. The only minor change I made was to use lard instead of vegetable oil. The end result was good, but could have been a bit more flavourful for us. The chicken was super moist though, so we'll likely make this again!

Watermelon and Strawberry Lemonade

I made this 'lemonade' for a picnic playdate we're having tomorrow and while this juice is pretty good, there's nothing much 'lemonade' about it. I reduced the sugar to 1/2 cup (which was plenty) and increased the lemon juice to nearly 1 cup. This is a pretty expensive drink to make, so while it was pretty tasty, it's not likely I will make it again.

Frog Cupcakes

I made these cupcakes today to take to a picnic playdate tomorrow and they are very, very cute...and although they are 'easy' to make, don't confuse easy with 'not time consuming'. The cupcakes took a long time to prepare (nearly 3 hours including time for the cupcakes to cool), but I think in the end, they will be well worth it - the kids will love them!

Banana Pudding Parfait

This was really simple to make and the end result was quite tasty - although a bit too much banana for Darryl. I used amaretti biscuits instead of shortbread, but I bet the shortbread would be better. I made four desserts in ramekins and I think the 6 (as per the recipe) would be better, because it made 4 really big desserts.

Broccoli Chicken Divan

This recipe gets 5 stars from me (and I don't hand them out easily!) because not only is this dish really delicious, it's reasonably healthy and super quick to make. I cooked 2 boneless, skinless chicken breasts with some seasoned salt and used that. I also added a dash of Worcestershire sauce to my sauce . The only change I will make next time is to add 1/2 cup milk (instead of 1/3) as I found the sauce a little too thick. All in all, a really good, satisfying meal.

Tomato Bacon Squares

This was SOOOO good! I followed the recipe exactly with exception of using yellow pepper in place of the green. I used a cheese flatbread in place of the pizza crust and just sprinkled the dried basil over the mayonnaise. Speaking of mayo, I did double the amount I used and added 2 cloves of garlic and a touch of fresh lemon juice. The end result was so good, I will definitely make it again on a regular basis!

Mid-Summer Italian Bread Salad

Yum, this was really good! I followed the recipe exactly with a couple of minor exceptions. I cut the recipe in half, I added a squeeze of honey to my dressing to cut through the vinegary taste, I added S&P to the dressing and I omitted the thyme because I don't really like it. I did toast the bread cubes lightly and the end result was really delicious, satisfying salad!

Crustless Spinach Quiche

I made this quiche for dinner tonight and we thought it was just ok. I followed the recipe exactly with exception of the cheese. I reduced the cheese to 2 cups and used swiss instead of muenster. We thought it needed more eggs for sure and I think if I were to make it again, I would further reduce the cheese as that's all we could taste.

Citrus-Basil Vinaigrette

I've made this dressing twice now. The first time I followed the recipe exactly except I cut the ingredients in half as I was only making dressing fro 2 people. I made it again tonight, again following the directions, but replacing the lemon zest and orange juice with red grapefruit. It was really delicious and I'm sure would be good with any combination of citrus you had on hand.

Horseshoe

I made this for my husband and I the other night and we thought it was pretty good, but not outstanding. I also seasoned the beef with some Montreal steak spice to give it a little kick, I made my own (deep fried) french fries and I used milk instead of cream for the cheese sauce. We found it all a little bit bland, so if I do make it again, I'll likely add some pepper jack cheese and parmesan to jazz up the cheese sauce.

Chicken and Bacon Shish Kabobs

Absolutely delicious!!!! I made these for dinner and the only reason the recipe does not get 5 stars is because the recipe calls for canned pineapple; if fresh were used, it would be 5 stars hands down. The only change I made to the marinade was to add 2 large cloves of garlic and I marinated the chicken/mushrooms for about 8 hours, but overnight would be better. I did follow the advice of another reviewer and used regular bacon (as opposed to thick-cut) and I boiled it for 5 minutes first. I then cut each slice into thirds and wrapped my chicken with it. This was so good...we can't wait to have it again.

Steve's Famous Garlic Home Fries

I made these tonight to go alongside some kabobs and they were really, really good! I followed the recipe exactly with a few minor exceptions. I cut the recipe in half because there were only three of us eating; I used 3 cloves of garlic; I used half butter and half EVOO and I used seasoning salt instead of regular. The end result was really delicious and I will definitely make these again!

Angel Hair with Sun-dried Tomatoes and Goat Cheese

made this tonight and followed the recipe with two exceptions. First I chopped some pancetta and browned that, removed it from the pan and then added the onions/garlic (had to drain some of the grease off though); I used spaghettini instead of angel hair pasta and I used feta instead of goat cheese. The end result was pretty good, but not super. It definitely could have used more cheese. I might make it again using the goat cheese though (Darryl will just have to suck it up)

Ciabatta Bread

I really wish I had read the reviews of the people who rated this recipe 1-star because it seems as though I have the same problem. This dough is incredibly sticky and it is impossible to work with. I managed to get it split into 2 pieces and onto the pan, I covered with a clean tea towel as I always do when making bread and even though I floured the bread, the towel completely stuck and deflated. It would not rise again and I ended up throwing the whole batch in the garbage. I really have no idea how some people have had such great results....for me, this was just a complete waste of ingredients.

Chicken Tikka Masala

Wow - this is ridiculously good; we will make this again for sure! I changed the marinade only slightly by reducing the cayenne and black pepper to 1 tsp each and reducing the salt to 1 tsp. I changed the sauce by omitting the jalapeño, increasing the garlic to 3 cloves, adding a small chopped onion and only adding about 1/2 tsp of sea salt. I can't even imagine how salty this dish would be if you used all the salt called for (there must be a typo IMHO). Anyway, it's a really great/easy recipe that we will make again for sure.
