Horseshoe

Reviewed: Aug. 19, 2008
I made this for my husband and I the other night and we thought it was pretty good, but not outstanding. I also seasoned the beef with some Montreal steak spice to give it a little kick, I made my own (deep fried) french fries and I used milk instead of cream for the cheese sauce. We found it all a little bit bland, so if I do make it again, I'll likely add some pepper jack cheese and parmesan to jazz up the cheese sauce.

Chicken and Bacon Shish Kabobs

Reviewed: Jul. 31, 2008
Absolutely delicious!!!! I made these for dinner and the only reason the recipe does not get 5 stars is because the recipe calls for canned pineapple; if fresh were used, it would be 5 stars hands down. The only change I made to the marinade was to add 2 large cloves of garlic and I marinated the chicken/mushrooms for about 8 hours, but overnight would be better. I did follow the advice of another reviewer and used regular bacon (as opposed to thick-cut) and I boiled it for 5 minutes first. I then cut each slice into thirds and wrapped my chicken with it. This was so good...we can't wait to have it again.

Steve's Famous Garlic Home Fries

Reviewed: Jul. 31, 2008
I made these tonight to go alongside some kabobs and they were really, really good! I followed the recipe exactly with a few minor exceptions. I cut the recipe in half because there were only three of us eating; I used 3 cloves of garlic; I used half butter and half EVOO and I used seasoning salt instead of regular. The end result was really delicious and I will definitely make these again!

Ciabatta Bread

Reviewed: Jul. 29, 2008
I really wish I had read the reviews of the people who rated this recipe 1-star because it seems as though I have the same problem. This dough is incredibly sticky and it is impossible to work with. I managed to get it split into 2 pieces and onto the pan, I covered with a clean tea towel as I always do when making bread and even though I floured the bread, the towel completely stuck and deflated. It would not rise again and I ended up throwing the whole batch in the garbage. I really have no idea how some people have had such great results....for me, this was just a complete waste of ingredients.

Chicken Tikka Masala

Reviewed: Jul. 26, 2008
Wow - this is ridiculously good; we will make this again for sure! I changed the marinade only slightly by reducing the cayenne and black pepper to 1 tsp each and reducing the salt to 1 tsp. I changed the sauce by omitting the jalapeño, increasing the garlic to 3 cloves, adding a small chopped onion and only adding about 1/2 tsp of sea salt. I can't even imagine how salty this dish would be if you used all the salt called for (there must be a typo IMHO). Anyway, it's a really great/easy recipe that we will make again for sure.

Brooke's Best Bombshell Brownies

Reviewed: Jul. 22, 2008
These are so chocolaty and delicious that 5 stars almost seems like an insult. Following the advice of other reviews, I used brown and white sugar, but reduced each to 1 1/4 cups as I thought the original recipe seemed like it had a bit too much sugar in it. I also used chopped pecans in place of the chocolate chips. These brownies are ridiculously good and I'm certain they won't last long!!

Daddy's Fried Corn and Onions

Oh man! This is absolutely delicious! It's unbelievable how a few simple ingredients can come together to make something so deliciously yummy. I don't know that I will eat corn any other way now!!!

Sun Dried Tomato and Pine Nut Stuffed Beef Tenderloin

Reviewed: Jul. 20, 2008
I made this beef the other night and it was pretty good. We had a whole tenderloin which we butchered down to steaks and were left with about a 1 lb roast, so I scaled the recipe for this roast. I followed the recipe exactly except for the breadcrumbs; what was called for was way too much in my opinion. I ended up using about 2 Tbsp which I think was the perfect amount; enough to keep the ingredients together but not too much that bread crumbs are all you could taste.

Coconut Shrimp I

Reviewed: Jul. 17, 2008
I made these for supper the other night and they were pretty good. I used jumbo shrimp (U6's) and they were just too big, so I think that might have thrown off how much we like/dislike this recipe. I think I will try it again...but using medium sized shrimp.

Beer Margaritas

Reviewed: Jul. 17, 2008
I made these for a Canada Day party we had and they were excellent! I used white tequila and Corona beer and apart from that, didn't change a thing and these were a huge hit.

Summer Corn Salad

Reviewed: Jul. 16, 2008
Yummy! This salad is like summer in a bowl. I mistakenly took the corn off the cob before cooking it, so I put the corn in boiling water for 5 minutes and it was still tender-crisp and delicious. The end result was a really beautiful, tasty salad. The only change I made was to use red onion instead of white.

Plum Clafouti

Reviewed: Jul. 16, 2008
This is my idea of a great dessert recipe. It was dead-easy to make and the end result tasted great. I used blueberries (about 1 cup of fresh) instead of plums and the lemon and blueberry flavour was a very good natural combination. Next time I make this, I will reduce the amount of vanilla though as it was very strong. Unfortunately, I overcooked it...so next time 55 minutes will be perfect I think!

Busy Day Chicken Rice Casserole

Reviewed: Jul. 14, 2008
I have been making this for years...it is literally the quickest meal I make. 5 minutes of prep and throw it in the oven. The only changes I make are to omit the sliced mushrooms and garlic powder...and I generally use bone-in chicken (the end result is not as dry given the long cooking time).

Summer Potato Salad

Reviewed: Jul. 12, 2008
I made this potato salad and it was really good - everyone ate it up. It was a little on the tangy side which isn't what we're used to...but I will make it again and probably add some grated carrot.

Allison's Pasta Salad

Reviewed: Jun. 22, 2008
I made this salad tonight to go alongside some ribs and I'm giving it 4 stars, but I think with one minor change, it could be 5 stars. I did make some changes; I used 5 slices of crisp, cooked bacon in place of the ham (could have used 6 or 7 though), cubed mozzarella cheese in place of the cheddar (won't do this again), and added a bit of red onion along with the green (I didn't have quite enough green). I will make this again, but next time I will reduce the Dijon mustard down to 1 tsp as the amount called for was overwhelming and we could taste very little else.

Lemon Rosemary Salmon

Reviewed: Jun. 17, 2008
I made this salmon for dinner tonight and we weren't very impressed with it. The only change I made was to add some lemon pepper seasoning to the fish and I omitted the olive oil as it's really not necessary in my opinion. The flavor of the rosemary completely overpowered all the other flavor's (including the fish). Therefore, we probably won't make it again.

Mediterranean Crusted Chicken

Reviewed: Jun. 16, 2008
Oh yummy! I made these tonight using butterflied chicken breasts and they were really good. I didn't use quite the whole 2T of basil though and I wish I had (maybe even a bit more). What else can I say? it was delicious, juicy chicken that we'll make again for sure.

Quick and Easy Grilled Potatoes

Reviewed: Jun. 15, 2008
My husband made these to go along with some grilled pork tenderloin and they were really good. He didn't cut them lengthwise, but instead cut them into very large chunks, tossed in olive oil, seasoning salt and pepper...then grilled. The end result was pretty yummy (especially when you don't want to heat up the house!)

Indonesian Pork Tenderloin

Reviewed: Jun. 15, 2008
I made this pork for a dinner party we were having and it was a massive hit. I doubled the recipe as I was using 2-1 lb pork tenderloins. Instead of using stir-fry sauce, I used BBQ hoisin sauce and I used cayenne instead of the flakes. The end result was very tasty, tender pork and it got rave reviews from everyone.

French Onion Soup Gratinee

Reviewed: Jun. 8, 2008
I made this French Onion soup for dinner tonight and it was really good! I followed the recipe exactly with one minor modification; I used 1 tsp of balsamic vinegar in place of the 1 Tbsp (did this based on other reviews of strong balsamic flavour). Next time I make this, and there will be a next time, I will reduce the amount of Worcestershire by half (to 1.5 tsp).
