Bread Machine Calzone

Reviewed: Sep. 6, 2010
Excellent! We dressed up with a bit of herbs in the dough. We also simplified the wrap by dividing into 5 balls of dough, rolled out, filled, folded over and cut slits. Turned out great.

Salmon Cakes II

Reviewed: Dec. 4, 2010
Used fresh salmon, added a bit more egg, used crackers, substituted parmesan for cheddar, fried in olive oil, added a bit of soy sauce, and served with the dijon-mayo suace... turned out very good. I didn't chill for 20 minutes and it turned out fine.

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 3, 2014
This was very good and EASY! This was a hit with my husband and two children. I did not use store bought biscuits. I made homemade dough and pinched off rounded tablespoon amounts of dough to add for the last 45 minutes of cooking. I pushed the dough down into the "gravy" as I needed the space. I did not have cream of chicken so I substituted cream of mushroom soup and added about a half a teaspoon of paprika and garlic powder per other reviewers' recommendations. I did not add any liquid to the soup mixture but would add about a 1/2 cup to 1 cup of liquid for more gravy. If you don't mind about 10 minutes extra work it is really worth the effort to make homemade biscuit dough.

Banana Smoothie I

Reviewed: Feb. 13, 2010
This was very good. I doubled the recipe, but used one frozen banana and one fresh. I substituted a 1/4 cup of honey for the sugar and omitted one egg. I also added a 1/4 cup of plain yogurt and and 1/4 cup of orange juice. I will make this again. It's a great after exercise snack.

Rosemary Ranch Chicken Kabobs

Reviewed: Jun. 5, 2011
Very good. Like another reviewer, we'd cut olive oil in half. Grilled directly and it turned out flavorful enough in combination with some of the sauce, which we cooked separately on the stove.

Black Beans 'N' Rice

Reviewed: Feb. 27, 2012
This was very good. I did not have time to cook the beans so I skipped step one and used two cans of black beans and rinsed them and cooked them in two cups of chicken stock instead of 7 cups water. I cooked the beans with the other ingredients uncovered for about an hour and 15 minutes. I added raw chopped onions as a garnish and topped with feta cheese instead of cheddar. Yum.

4 star as is. 5 star with some tweaks. Less sugar in dressing. More hummus.

Mini Chip White Cupcakes

Reviewed: Mar. 8, 2013
I wonder if the reviewer who said they were not fluffy did not sift? I made these with my daughter and frosted them with butter-cream frosting. We did not add all the chips required. The cupcakes turned out light and the lemon adds a nice zip. They turn out like a delicate white cake. We served them at a family event (mostly adults) and everyone thought they were good. I would make them again!
