Best Brownies

Reviewed: Jun. 1, 2014
The batter is divine. It goes together quickly with things I always have on hand. The frosting is VERY thick, but I think it will thin out as it goes on the warm brownies. This is JUST as quick as breaking out a box, with NO chemicals, just pure ingredients. Fabulous.

French Toast Souffle

Reviewed: Oct. 17, 2012
Well, I did the recipe as written and then dotted with butter and sprinkled with a mix of white and brown sugar and cinnamon, as I prefer it sweeter. Then family drizzled syrup over it and a shake of powdered sugar. MMMMMMM so great. I made another version of this before, but I really think this one was better. I also tossed the bread around and I put it into two round cake pans. The result was not too eggy, and it had crispy yummy bits on top from the butter and from baking. Everyone love it.

Classic Waffles

Oh boy, were these great! Everyone loved them. I did as one other reviewer and plopped everything in the blender, added a bit more milk for consistency, and presto, yummo! Everyone raved! My friend Carole turned me onto this one. Thanks, Carole!

TOO SALTY AS WRITTEN! I made just as written, and yuck. I mean I can see how it will be great, but for me, I will halve the salt, and halve the sugar... too sweet for me, too...but this is the type of recipe I was looking for... I will try again...they have pre cooked eggs at fresh n easy now. it makes it so fast.

Tacos in Pasta Shells

Reviewed: Jan. 11, 2012
Everyone in my family loved and ate this delish dish! I do my meat:onions, 2lb gr beef, some chop celery, some green onions, some garlic, cilantro, salt. added 4oz cream cheese. stuffed the cooked shells - btw, I undercooked, and kids not too happy but they ate them... I put pam, then enchilada sauce on the bottom(did not like this myself - next time will put pureed salsa on bottom)filled shells and set them in, salsa on top. Followed the rest, minus chips, which I didn't have on hand. Everyone raved. I, picky patty that I am, loved them. THis is going on the list!

Old-Fashioned Chocolate Fudge

Reviewed: Oct. 29, 2011
First try - NOT GOOD. I think I may have dropped a drop of water in the hot liquid as I was testing for soft ball stage. It didn't change at the time, but the end result was weird. As one lady said, after I pulled it off the heat, I waited to 180 then put butter and vanilla on top. I prepped for the mixer - elbow hurting- when I began mixing, in like two seconds, it was matte and glopping up. There were no grains of sugar - and I stopped stirring at soft ball stage and took off heat. I did put it in a dish, and if it still tastes good, I may coat it with something and serve as truffle or something as others have done. Later today - round two. I have prepped for it. I have put in 1/2 TBSp corn starch. We shall see how this round goes. I am not giving up. I will go broke before I give up. (2) cooked for a second time and it was a PAIN. BUT it came out crispy like a familiar honeycomb candy I recall from England. It is yummy. Look forward to round 3.

Apple Crumble Pie

Reviewed: Jul. 3, 2011
Four stars for simplicity - I like to add more things like spices, a bit of butter to the apples, and I followed what others said, and doctored it up to my liking. The crumble topping was fab! My dad said it was, "exceptional!" I used basic flaky crust, too. Turned out great. I precooked the apples a bit because my people don't like any crunch to the filling.

Luscious Lemon Snaps

Reviewed: Apr. 18, 2011
I did not care for these. Sorry. I did the "put it all in the food processor" option and they were just plain weird. I usually never fail on cookies, but this was a waste of ingredients. I used 1/2 cup butter and oil, and fresh lemons with excellent rinds.

Chocolate Chip Banana Muffins

Reviewed: Apr. 9, 2011
This is the second time I made these and I love them even more. I usually follow recipes, but I simply didn't have oil and yogurt. I used sour cream and melted butter instead. MMM mmm, good!!! I also had to add a bit of milk as the batter was too dry. That is all about making adjustments as a cook. I love love love these. Thanks.

Hamburger Vegetable Soup

Reviewed: Mar. 26, 2011
wow can't say enough about this. super easy, really yummy and everyone loved it. I followed to a T. mostly. Next time, I may saute onions with meat, as I don't like them so crunchy. I did throw in a teaspoon of Italian seasoning. I really like it and I am so picky. I had two bowls. Oh I added some garlic too.

Microwave Lemon Curd

Reviewed: Mar. 7, 2011
OMG this is WOW!!! I made it, and at first, it seemed runny, but then after it sat in the fridge for a while, it thickened up and it is tangy and fantastic. I used tart lemons, but I love Meyer lemons, so I may try that, too. I cannot believe how easy it was. Also, I used my food processor. I don't like the feel of the lemon zest, but love the taste. It came out smooth and perfect.
