Champagne Shrimp and Pasta

It's crazy how good this is- it reminds me of bisque meets pasta. I made mine without mushrooms, because that's how I've had it 4 other times :) Since I didn't use the mushrooms, I left out the olive oil too. I also subbed dried parsley for the fresh. Totally amazing. Restaurant quality and very impressive for company. Worth every calorie- don't try to cut them!!

Kalua Pig in a Slow Cooker

My husband and I brought back Hawaiian Sea Salt after visiting Maui. I eyeballed this for a long time, but was reluctant to try it, as I don't like liquid smoke. I'm so glad I decided to go for it! I didn't change a thing- and it was perfectly wonderful. I can't stop eating it, and know I will make it anytime I wish to impress someone :) I served it on sandwiches with BBQ sauce for one meal and over white rice with some of the pan drippings for another meal. Perfect recipe!

Soft Garlic Breadsticks

WOW!!! I am absolutely in love. This recipe is a perfect replica of Olive Garden's breadsticks, but homemade! I brushed mine with melted butter and sprinkled with garlic salt- out of this world. Will make again and again!

Smoky Southwest Chicken and Wild Rice Soup

Good, but I think I would like a little more spice :) I didn't have chipotle powder, so I used a little canned chipotle in adobo and a pinch of jalapeno powder. I also used fresh carrots in place of canned, fresh shredded chicken and used all chicken broth instead of cream of chicken soup. Because of these changes, I did need to add some salt. Lovely flavor and a nice way to change up a favorite!

Fantastic, just as I expected! I had to use Parmesan because I couldn't find cotija, but it was still AMAZING! Served over seared Tuna Steaks. Can't wait to use it again.

Iced Pumpkin Cookies

We love these cookies! They are so easy to personalize too- we love to add mini chocolate chips and substitute orange juice for the milk in the frosting. Any way you mix them, these are 5 star cookies!

Black Bean and Salsa Soup

I can't believe I haven't already reviewed this recipe! I've made it so many times, and I love it more every time! I use chicken broth in mine with a Medium Heat salsa. Sometimes I cook garlic and onion first to beef it up. We love ours topped with shredded cheddar and crushed tortilla chips. Fresh chopped tomatoes on top are great too. Delicious any way you like to top it. This freezes beautifully too!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Yum- so good. I made half the recipe and ate the whole pan, then realized the recipe was only written for two servings- thank goodness! Delicious and gorgeous, will make frequently! I used zucchini and yellow tomatoes from my garden. Perfect.

Apple Oatmeal Crisp

I made this into 8 individual portions using large ramekins. Lessened the baking time to 30 minutes- perfect presentation for a dinner party. Delicious recipe! I needed about twice as many apples as the recipe called for.

Cinnamon Raisin Swirl Bread

A little bummed. I doubled the filling and I can barely tell it has a swirl. I will triple or quadruple it next time. The texture is very nice and I had no problems with the filling splitting the bread or leaking out...just a little light on flavor.

Mozzarella Basil Bread

This makes two ENORMOUS loaves of bread...which is wonderful! Like the other reviewers, I also found the amount of flour to be way off. I used almost 6 cups. Texture and flavor are wonderful- will make again for sure.

Tasty Lentil Tacos

Not quite what I was expecting, but not bad! I used our regular taco seasoning to keep hubby happy. It's healthier for sure, but we still love traditional tacos. Might try to mix it with ground beef next time. Giving this 3 stars because my lentils took over an hour to cook and I needed more liquid (over a cup more), following all directions exactly for the cooking process.

Mall Pretzels

Easy and tasty. I made 20 smaller pretzels for my hubby to take in for a work party. Served with cheese sauce. Not quite Mall Pretzels, but pretty good for homemade!

Texas Egg Rolls

Yum Yum Yum! These were so great! I used Wontons to make little appetizer rolls. I diced the green chilies and chopped my cheese into tiny bits. I used the baking method on non-stick foil and the end result was a such a hit with my family. The little bits of cheese that oozed out got crispy (which we LOVE) and they disappeared so fast. I served mine with a mexi sour cream dip. Thanks NANA! Update- Made these again for company this weekend and fried them. They were great baked but they were over the top amazing when fried. YUM!!

Rick's Special Buttercream Frosting

Wonderful...just don't make the same mistake I did. I wanted WHITE frosting and bought Butter Flavored Crisco by mistake...which is very yellow. Lesson learned....but the flavor was wonderful!

Delicious and so simple! I did need almost 4 cups of confectioners' sugar to get the mixture thick enough to mold. I rolled smalls balls in granulated sugar and then molded- turned out perfect!

Chocolate Zucchini Bread I

Excellent! I made 5 mini loaves and 8 mini muffins. Mini chocolate chips were perfect in this recipe. Make sure and let your loaves cool completely before removing from the loaf pans :)
