It's fun feeding my husband the foods that he loves!

Sometimes the simple things can be the most delicious! My husband says that my Stuffed Green Peppers are at the top of the list of his favorite things I make...I love it when little work leads to great reward! The main dish of this recipe requires 6 ingredients, and the side dish requires about 3. The prep time is approx 10 minutes, which means a great meal with little time spent in the kitchen. As much as I love to cook, sometimes you need an easy go-to option.

This serves 2 adults.

For the peppers you will need:

2 Large Green Peppers
1/2 lb Hot Italian Sausage
A small can of Tomato Sauce (I like the basil and garlic flavor)
1 cup of cooked Rice (I use Wild Rice)
1/2 cup of Mozzarella Cheese
1/4 cup of Fresh Grated Parmesan


For the side you need 1 cup of baby carrots, 1 cup of radishes (quartered), a drizzle of olive oil and whatever spices you like to season with (I like lemon pepper and garlic salt). Throw the clean veggies on a baking sheet. Drizzle with oil and season. Set aside. Pre-heat your oven to 400 degrees.


I like to stuff my peppers whole and I want them to stand up pretty, so I cut the knobs off the bottom to make a flat surface. Should look like this:


Next I brown 1/2 lb of Hot Italian Sausage. Once it is cooked through, I add in my cooked rice, 3/4's of the can of tomato sauce and the grated Parmesan. Heat until the whole mixture is warm. It should look like this:


Next- stuff the peppers with the hot mixture until it comes just over the top of the pepper.


Top your peppers with the shredded mozzarella (Fresh mozzarella slices are even better, but I went with what I had on hand). Put the peppers on the top oven rack and the radish/carrot combo on the bottom rack. Cook for 15-20 minutes until the cheese on the peppers has started to brown, and the veggies are tender.


***Side note...if you have never had roasted radishes, you MUST try them. I don't care for them raw, but I love them roasted with carrots. They compliment each other well!***

Serve up your pepper with a generous side of roasted veggies!


The inside is cheesy and delicious. This meal is eaten quickly at my house...with a few happy sighs from my hubby :) Enjoy!

Looks yummy, Kathleen! I have never made stuffed peppers...particularly because my sweet hubby has slightly limited taste buds=) Wouldn't trade him for the world, though! You take great food pics!

I'm making stuffed peppers tonight- I've never made them before, but they're in the book ;) Ya know, I've never in my life had a cooked radish, I live a sheltered life, I guess!

I agree with the title! I love feeding my husband food that he loves, last night I did his favorites, even though it makes me gag!! It doesn't get any better... Great pictures by the way, mine always have a yellowy tinge to them for some reason, it must be the light in the kitchen because I can take photos in the living room and they are fine!?! :o)

Jena- you are so sweet!! CC- I bought them raw when I was trying to introduce my daughter to some different foods. She didn't like them and I didn't either, so I thought, why not try them cooked. Now I intentionally buy them frequently :)

I read this at work today, but didn't have time to comment. I like stuffed bell peppers, but I don't usually like bell peppers at all! I never have figured out why. I might try the radishes, but I refuse to eat cooked carrots...can you think of something else that might be good with them? I enjoyed your blog...thanks for sharing!

Lynna- you could do the radishes all by themselves...just double the quantity. They are also tasty with a little minced garlic, soy sauce and sesame seeds. Green onions would add some color if you need a little contrast! Thank you georgi porgi and Lynna for the nice comments!

That is a new way to make stuffed peppers for me to try. Did you know the green part of the radish is also edible? Here is how I do them: 1 bunch of baby radishes with radish greens, 1 Tablespoon butter, salt and pepper -- 1. Wash radishes in cold water. Cut off the greens and set 'em aside. 2. Slice the radishes thin, and saute them in melted butter. 3. Add the greens (still wet) and saute until wilted (less than 1 minute). 4. Add salt and pepper to taste. Yum.

I grew up gagging over stuffed bell peppers. Something that changed my opinion, and that of my own children, was that you can cook your bell peppers before stuffing them so they're sweet and delicious. One option is to parboil the empty pepper for 3-4 minutes until crisp/tender, but my fave is to roast the peppers like a chile and put them in a paper bag to remove the skins. Wipe them off with a paper towel or peel like a sunburned chile, and then stuff them and bake them as usual. They're sweeter, and you'll find people eating the whole pepper instead of just the filling.

Well, I'm in there with the others...I never thought about roasting radishes. I gotta give that a try. The meal looks great. I just had stuffed peppers last night for dinner. Also, I never thought about cutting the bottoms to make them stand up nicely. Because I usually make a pan full and they hold each other up. But I will keep that in mind next time I make a smaller amount. My guy loves them too.

Forgot to say, if you like the peppers on the spicy side, try pablano peppers next time. We love them stuffed too!

I love stuffed peppers but my man and kids don't care for the pepper part. To solve this problem I began making stuffed pepper soup instead and pour it over homemade mashed potatoes and wouldn't you know there is never any left not even a pepper :) I am trying those radishs tonight they look so good, thanks for the idea.

Mimi- I would love your soup recipe!!! Foodaholic- you might want to do stuffed pepper halves for the kids...easier to attack! LareinaK- Ground beef would work fine! You might want to add a little extra seasoning to the mix...italian seasoning, fennel seeds and black pepper would be great!

that looks good! i did notice though, that when they serve stuffed green peppers, ppl eat the stuffing and not the green peppers... wouldn't it work better with red peppers because they are sweeter?

I make stuffed peppers often too, but i use a bratwurst and chopmeat mixture with yellow rice. I also used orange,red and yellow peppers for taste and presentation. They were delicious.

For people who don't like green peppers, try red,yellow or orange peppers. They are alot sweeter.

These look great, I love the idea of using hot sausage. I usually use hamburger and also add about 1 cup of frozen corn, and I use red peppers and cheddar cheese. And I can't wait to add radishes to my roasted vegetable!

Sorry- I don't use it, I always just throw the leftover sauce in a ziploc and freeze it. I use them in soups, chili, on pizza or in my next batch of peppers! I should have mentioned that!

I would suggest to anyone considering making these, use the exact seasonings and the flavored tomato sauce that Kathleen suggests- it is incredibly good. Besides being super quick and simple to make, this meal is full of flavor as well!! Pretty hard to beat!

Kathleen, this was AWESOME!!! I made this last Saturday night for my boyfriend and I. I used orange bell peppers as they were on sale, and I used Johnsonville hot sausage... it came out so delicious! You were 100% right. The radishes and carrots were savory and delicious, and fit together so well. Thank you for posting this, I'm looking forward to anything you post in the future!

The year I set the stove on fire the day before Thanksgiving trying to dry out my bread for dressing... had to call the fire dept and spent the next two days cleaning up the residue from the fire extinguisher. On the plus side- my house was insanely clean for the holidays!
