Dog Treats II

I made these yesterday for my Bichon Beau and for the furkids of friends and made the following changes: 1 c rolled oats, 1/3 c. butter, 1 c boiling beef stock, 3/4 c cornmeal, 1 T. Splenda, 1/2 c milk 1 1/2 c cheddar cheese, 1/3 c gr. parmesan cheese, 1 egg and 2 1/2 c of all purpose flour. My "Bubba" went nuts for them! He is somewhat finicky, also a diabetic receiving insulin twice a day, which is why I used the Splenda...but he loves them, and today has taken to "talking" to them before he eats them...no idea what that is about!

Butternut Squash Soup II

Just finished my soup and am giving it 5 stars with my changes...if I had made it as written I would have given it four. I used 2 Tb butter and softened the mir poix (2 celery, 2 carrots, small sweet onion about 1/4 c., 1 diced apple, and 1 clove of garlic minced) I roasted my butternut, cut in half along with one white sweet potato (not yam), at 400 degrees for 1 hour, peeled the skins and cubed them and added to the veggies. I added 32 oz of chicken stock, I seasoned with one bay leaf, cumin, parsely, cinammon and nutmeg and a pinch of cayenne pepper, and salt and pepper to taste. Bring to a boil and then simmered for about 40 minutes. After blending the soup I added about 1/2 c. of heavy cream. Served with a dollop of sour cream, this was delightful!

Soda Cracker Chocolate Candy

My daughter made this last year, she has made it for several always taking it to work and it disappears. Well she was sending a batch down to her Poppy so I had it in the car to bring home. Now I had never had this before.....wellllll lets just say ol' Dad got about 3 pieces! OMG good and yummy and a lot less time consuming than my toffee and just as tasty! Please note....for heavens sake please - please - please go to the store and buy a candy thermometer if you are going to make ANY candy....they are inexpensive and totally necessary! You cannot "gauge" what 300 degrees is....so go buy one!

Holiday Peppermint Bark

Super easy, super yummy,. Microwave melting of chocolate is always risky, the extra few minutes using double boiler method is well worth it! Improvise one from 2 pans if you don't have a traditional double boiler. Tip: soft candy canes are to die for on their own....but are much more tender than using the starlite mints.

My Amish Friend's Caramel Corn

I am giving this a 5 star rating even tho I should have used different popcorn. Taste is outstanding...I set temp at 250....next batch I will definitely lower the heat. I used pecans and it is yummy. I used orville plain micro popcorn...way way too many husks...so will by regular popcorn and do it on the stove, and I know that will be much better. The micro corn tends to break up in bitty pieces...sooo I will have happy birds and squirrels tomorrow morning! A+ rating for taste and ease! I used 2 roasters, finally transferred all to one and stirred for frequently! Awesome snack and gift...thank you!
