Chef John's Chocolate Lava Cake

This is a super easy and tasty recipe. The end product will be as good as the quality of the chocolate you use, so be sure to use a high quality baking chocolate. I don't recommend the water bath as it caused my cakes to bake unevenly (slightly ironic considering the wonders they do for cheesecakes). My first batch, the top half of the cake looked done when the bottom half was still completely runny. If I had baked them for any longer, the top would have been overcooked. The second batch I didn't use the water bath and they came out perfect, no problems releasing the cakes from the ramekins. Even after keeping in the fridge for 2 days, I found that the best time/temperature combo for my oven was 350F for 15 minutes.

Lemon-Pepper Salmon

This was delicious! I'm amazed at how a few simple ingredients could combine to such a tasty dish. I used freeze dried cilantro and it worked out well. I also substituted angel hair pasta for couscous instead as I prefer this particular type of pasta to go with simple oil-based sauces (honestly I considered using quinoa instead but felt it would be a little weird because the sauce is really like a pasta sauce). Otherwise I made it exactly as described, and it was ready in 30 minutes as stated in recipe. So easy, yummy and quick!

Spinach Stuffed Chicken Breasts

Very easy to make and really tasty. Great for serving at dinner parties! The bacon really keeps the moisture trapped in the chicken. I often find that cooking chicken in the oven makes it very dry--not this recipe though! I cut down on the amount of spinach and used fresh instead of frozen because I don't like the textured of thawed frozen spinach. This recipe actually made enough filling for a total of 6-8 chicken breasts rather than the 4 as stated. My husband loves this and can't get enough of it!

Butter Cake

My go-to cake recipe for all of my vanilla cupcakes and fondant-covered cakes. This is a dense but moist and easy to make cake...if it's dry like cornbread, you're overbaking the cake and/or mixing it too much. Mix in the flour JUST until it's blended and the cake will stay moist. If you over mix it, the gluten in the flour will make the cake "tough" plus you'll add excess air into the batter. That said, I've brought tons of cupcakes to work made with this particular recipe and people always love them. It hold its shape very well. Thanks for this amazing recipe!
