Italian Spinach Sausage Pie

Loved it - Tripled the recipe but only used 1 lb sausage and the 2 packs of spinach - added an extra egg and some Mrs. Dash - Instead of a pie crust - used three Jiffy cornbread mix- mixed as directed on box. spread in a greased 11x13 pan and baked ten minutes -Pulled crust out of oven partly cooked and spread filling on top - Baked 50 minutes as directed

White Sauce with Ham and Herbs

This was fantastic and simple. I made it exactly as stated as there were no other reviews to build on, and I'm very glad it worked out that way. I served this over a bed of egg noodles with fresh spinach.

Ham N Cheese Quiches

These are fun and scrumptious. I love the crust - I used my Kitchen Aid to cut in the crust ingredients After I opted to roll first then cut out with a scalloped cookie cutter, placed in mini muffin pans and then chilled the dough) Makes just the right amount of filling. Chopped the ham then pulsed in blender for 2 seconds then mixed other filling ingredients. I left out the salt due to the salt in the ham and the cheese - never missed it. Proceeded to fill and each cup received equal parts of the filling, super quick and efficient.

Grandma Minnie's Old Fashioned Sugar Cookies

This is the perfect sugar cookie and should be followed to the letter - including mixing instructions. I loved that it didn't crack or swell up so much that the cookie lost it's original shape. The flavor was excellent. As a decorator, what I loved most about this cookie is that it could stand up to the humidity and extra moisture from a color flow icing. This is my go to recipe from now on.

Gingerbread Boys

This was a very good tasty recipe. It isn't the best in the world for making gingerbread houses though and I was far less delighted in how much the cookies swelled and cracked. But if you know how to handle dough and when and when not to work in extra flour it is good for a pinch. Check out my gingerbread house to get an idea.

Cornmeal Bacon Waffles with Cheese Sauce

These are really good. I was surprised at how light and wonderfully textured the waffles turned out to be. I do suggest like others microwaving the bacon just enough to melt the fat off and make it crispy. The bacon does a lovely job cooking into the waffle. I had left over cheese sauce that I added milk and water (water cut the salty taste a tad) to. I whisked those together until I got a gravy consistency -next time I will make the cheese sauce even thinner. A little goes a long way. I also cheated and used corn muffin mix - same thing as cornmeal just extra baking powder in the box lol. Made 4 Belgian sized waffles. Worth a try for the curious minded. :)

Apple Bread

Oh wow! This stuff is amazing. The last thing I wanted to do was make another bland apple bread. So I made as directed minus 2 things. One I subbed the vanilla for pineapple extract. Two: I made a glaze with 1 cup confectioner's sugar, 1 T water, 1 T of Caramel Machiota Creamer, and 1/4 tsp of pineapple extract. Wonderful results without overpowering the sweet factor. Highly recommend!

Oven Fresh Seasoned Potato Wedges

These are awesome. I always make a ton of these at a time. I cheat a little and after scrubbing and cutting them - I put the wedges in the microwave for 3-4 mins. When they come out I sprinkle them with cold water so the goodness will stick to wedges. I throw them in a huge pampered chef mixing bowl with a lid and just shake away. Then I put them on my pizza stone until they are crisp and golden brown. That way I never have to turn them. I'm lazy like that! Delish!

Apple Streusel Muffins

Made as they are these muffins leave a lot to desire. However, they are a great base. What I did: For the batter - I doubled the apples (used Winesap), beat the sour cream and butter for several minutes, then added eggs. Added 1/2 tsp vanilla and 1/2 tsp banana extract. For the dry mix: kept everything the same and added - 2 tsp of apple pie spice (cinnamon, allspice, nutmeg). I then folded in my chopped apples into dry mix and then folded that mix into the wet. For topping I used cinnamon sugar and crushed graham crackers. Baked @ 400 for first 5 mins then finished at 350. (Done in about 15 mins) Cooled for 10 mins and then drizzled cream cheese frosting on top. Super!

Apple Butter Pork Loin

Did not want to heat my house using the oven so slipped this in my slow cooker. After rubbing the pork with seasoned salt i placed in cooker with apple chunks then added other ingredients. Awesome stuff. and made perfect gravy If using slow cooker and apple chunks I might cut the liquid to half.

Focaccia Bread

Don't change a thing with this! This bread is the easiest thing I have ever made. I mix it all by hand and knead it for a few minutes. I like to work in about two tablespoons of olive oil while kneading and then put it in a happy spot to let it rise. After that, you just work it with your palms into the shape you desire and poke it with your fingers. I just brush it with olive oil and then poke it again and bake. With or without the cheese this bread is a timeless piece of tasty art!

Braided Egg Bread

Wow! This bread will make you a star in the kitchen. My farm makes this with our fresh products and this sells like crazy. This bread is worth the time and love it takes to prepare it. Don't shy away. I work the entire recipe by hand and it produces beautiful results. I like the tip about throwing in a tablespoon of instant potato flakes. When this gets out of the oven I like taking honey butter and rubbing it into the loaf. The shine with the egg white and the aroma makes those passing by weak at the knees! Enjoy!

Jalapeno Corn Bread

This cornbread is super easy and beautiful. I love baking this and wrapping with ribbon and presenting it as a gift. When I am able I use fresh buttermilk form the farm and the same with our garden's jalapeno plants. Other days, I just use milk and the tbls of lemon juice sub and canned jalapenos. Either way this recipe demands great flavor and is a hot topic at the table!

Pizza Dough III

I added a teaspoon of Mrs. Dash Original Blend and a tsp of Oregano. Other than that I didn't change a thing. I worked it all together with my hands and maybe added a tbls of flour and tbls of oil as I kneaded and shaped the round. The critical step is proofing the yeast and never be in a rush with any type of bread. Be gentle and work all the ingredients with your palms. The same thing after the rest, patience and gentle working it into your desired shape. This the perfect crust. Bakes well, slightly chewy, not to bready, excellent flavor and texture. Enjoy the simplicity of the ancient ritual of bread making.

Coconut Ambrosia Salad

It is a good quickie salad. It was a bit bland for me. I like my food to make a statement even if it is subtle. Second time around I added a chopped gala apple quickly dipped in lemon juice. Skipped the milk and used yogurt instead and I had some vanilla syrup and added a tbls. Also let the fruit sit in a strainer for 1/2 hour. Much better ambrosia salad offered a delicate sweet vanilla tone and a cooling tropical fling.

Groovy Green Smoothie

The only reason I was brave enough to try this was because of other reviews. Luckily, the did not disappoint. My son (who is not big on fruit) loved this and asked for 2nds! It was just a tad tangy for me (it was the brand of yogurt) so I threw in 2 tsp of honey. It did the trick. My Vita-mix just tore through this. I wasn't big on the smell and I ended up throwing in some ice. Overall it is worth trying and at the very least a great St. Patty's drink!

Oven Scrambled Eggs

Okay my two cents: Definitely use a bigger pan. I used a 11x13 and it was 2/3 full. My hens lay pretty big eggs, but still! I try to cook without salt whenever possible, but everyone knows you can indulge with eggs. I used 1 tsp of salt, 1 tsp of garlic powder, and 1 tsp of Mrs. Dash Original Blend. Yum-yum! This recipe calls to the creative cook. Have fun with it - after all they're just liquid chickens! :p
