Moroccan Lentil Soup
I've made this twice now, and it never fails to cure my craving for lentils. The first time I made it, I didn't puree any of it, and this time, I pureed nearly all of it. Really, it tastes the same either way. Aside from pointing out that this isn't truly a Moroccan dish, as others have pointed out, (I don't think it's rude, I think it's more of using correct terminology) it's pretty good. It is bland in it's entrance, but a little sea salt right before serving helps a little with that, and also brings out some of the other flavors. I also only used 1/4 of the cayenne, since the heat overtook a lot of the other flavors. Next time I will use chicken broth instead of water. Maybe that will make it a 5!

Sweet Potato, Carrot, Apple, and Red Lentil Soup
Like a few others, I was kind of on the fence about adding in apples. I am so, so glad that I stuck to the recipe (with the exception of taking the chili powder down to 1/4 tsp for my kiddos' sake)... This soup is awesome, and I will be making it again... And SOON! Thank you for sharing this recipe!

Rollitos de Pollo en Salsa de Guajillo (Chicken Rolls in Guajillo Pepper Sauce)
I gave it 4 stars overall... The sauce is a fabulous 6 stars, but the stuffing is about a 3. All I could find for the chilies were dried ones, but I still destemmed, and emptied the seeds as much as possible, and still boiled them for about 30 seconds. I think this is a great recipe for three chicken breasts, and if you're going to make six, double up on the stuffing and really stuff those breasts!! I'll probably make it again, it just takes a lot of time to prepare. Thank you for sharing!
