Pork Marsala

Reviewed: Nov. 1, 2011
I made this exactly as the recipe listed and it was very good. The sauce has a wonderful flavor that went perfectly with the natural flavor of the pork. Kids and hubby all loved it and hubby snatched the leftovers for lunch the next day! I'm not a huge pork chop fan but this recipe I will keep and reuse.

Slider-Style Mini Burgers

Reviewed: Oct. 28, 2011
These little gems are so good! I had five kids gobble them up so fast, (and I doubled the recipe!) I made these exactly like the recipe and served them with dill pickle slices. I used whole wheat dinner rolls, which tasted so great after being toasted in the oven. I'm putting this in my weekly menu rotations. New family favorite!

Beef Nacho Casserole

Reviewed: Oct. 9, 2009
A great classic to cook for the family. Easy to memorize, ingredients are always on hand, and everyone loves it! My only modifications were using 1 1/2 cups of sour cream and 2 T of mayo (instead of all mayo) and I also threw in a can of black beans. This is really good comfort food and the kids say they like it even better than tacos!

Green Punch

We made this for St. Patty's Day and everyone loved it! Yummy lime carbonated punch! Will make again for an adult Halloween party with a little bit of adult spirits thrown in! ;-)

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Apr. 20, 2009
Glad I stumbled on this recipe! The cajun seasoning pairs oh so nice with the dill sauce. Excellent flavors working here! I fried the tilapia in olive oil and 1Tbs of butter instead of baking and it was fantastic, juicy, and flaky. The Man and the 4 Kids raved and scarfed all seven filets! No leftovers here.

Slow Cooker Sweet and Sour Kielbasa

Reviewed: Mar. 3, 2009
Ok so, I'm kind of on the fence with this one. I expected jubilation and fireworks from the family based on the high ratings of this recipe but what I got was, "umm, Ok, guess so.." Don't get me wrong, the flavor is very, very good. But this seems to be more of a 'man food'. Perfect for Super Bowl and the like. If you have kids that aren't very keen on tangy and sour sauces then this may not be a sure bet. Worth a try if you're desperate to find something new to do with kielbasa. (I was!)

Chicken Cordon Bleu II

Reviewed: Mar. 3, 2009
Oh Yes! This was packed with flavor and very easy to make. My husband and four young kids devoured it and said it's a "keeper"! The only changes I made were using half butter and half olive oil, (instead of all butter), and using chicken broth instead of white wine. Just fantastic! Be sure to steam fresh broccoli with this. It's Oh So Good with the cream sauce!

Garlic Parmesan Chicken

Reviewed: Feb. 1, 2009
This is a very flavorful way to wake up boring baked chicken. It has a wonderful garlicy taste that goes very well with the french fried onions and bit of mustard powder. I followed the recipe exactly and was not disappointed! My four children gobbled it up and declared it, "mom's best chicken EVAH!"
