WWII Oatmeal Molasses Cookies

My cookies weren't as puffy as other featured photos but still very good. I overcooked my first batch and then got the hang of it. For me, they were perfect after 10 minutes! I like a soft textured cookie. I didn't have raisins so I used craisins which I plumped in hot water for about 15 minutes.

Orange Cream Fudge

Very rich, creamy and delicious! After reading so many reviews about the consistancy being grainy, I cooked the first 3 ingredients for about 15 minutes while stirring constantly. My fudge wasn't grainy at all.

Yum! The only downside for me is that it becomes a gooey mess if it doesn't stay chilled. I wish the texture was more firm. Next time I might try cooking it 6.5 minutes instead of 5 like others have suggested.

Easy Tuna Casserole

Added about 10 turns of fresh cracked pepper. About 2 cups of dry pasta yielded 3 cups of cooked pasta. My casserole barely filled a 8x8' square pan. Very tasty and easy but dry. I think adding milk would make it a better consistancy.

Orange Cream Cheese Frosting

I omitted 1 tbsp of orange juice to avoid it being too runny. Since I was making frosting for cupcakes, I wanted it a bit firm for piping. If I were to use this for cinnamon buns, I'd probably follow the recipe exactly. Great flavor!

Marinated Baked Pork Chops

The marinade was pretty good. The recipe didn't specify but, I would recommend using a thick pork chop. Mine were thin. They were well done (and bone dry) after baking for 30 minutes.

Whipped Potatoes

These were delicious. I followed the recipe exactly as written. I used Yukon Gold potatoes. They were a tad dry but, that could be because I had a 5lb bag of potatoes and was guestimating what was 1/2. We had these as left overs the next night. I added about 1/4 c. of chicken broth while reheating and they tasted just as good as the night before. Thanks for sharing. Hubby and the kiddos really loved these.

My Chili

I was really reluctant to try this very simple recipe. I am so happy with the results! This was very hearty and delicious! I did sub 2 cans of Rotel diced tomatoes with chili peppers for 2 of the stewed tomato cans because I had them in my pantry. I also added another can of kidney beans because we like beans :-) I don't need to search for the perfect chili recipe because I have found it!

I get so excited when a new recipe turns out as well as this one did! Don't change a thing! I can't believe how beautiful, easy and delicious this was! My only regret is that I didn't get a picture of this masterpiece before my guests devoured it!

Spicy Oatmeal Raisin Cookies

Not bad but, like others have said, these cookies don't spread. Nor do they brown. It's a bit of trial and error to get the right cooking time. Also, I'm wondering if dropping by "teaspoonfuls" is an error. I tried that, and they were about the size of a nickle. I used a tablespoon for measuring and that seemed to be a good size. Definitley will want to flatten these cookies before baking.

Dawn's Easy Red Velvet Sandwich Cookies

These are delicious and beautiful! I left out the bourbon in the mix. I measured my dough with a 1/2 tbsp to make each cookie uniform in size. The cooking time was perfect at 8 minutes for my oven. I did not add evaporated milk, coconut or nuts to the icing. These need to be refrigerated. They taste better if you let them get to room temperature before eating.

Slow Cooker Pepper Steak

Really good and even better on day #2! Instead of using 2 green peppers, I used 1 green pepper and 1 red. I doubled the cornstarch and added 1.5 tsp of red pepper flakes because we like things a little spicy around here. Also, I added my peppers/onions with just 2 hrs remaining so they wouldn't become too soggy. Oh, and I omitted the salt. The soy sauce makes this recipe salty enough.

Coconut Poke Cake

Very rich and delicious. I made the mistake of using 2 9inch round pans rather than a 9x13. (I like the look of a layered coconut cake but, I was unscuccessul in acheiving a pretty cake) If you like coconut, this is heaven on earth!
