Cindy's Jambalaya

This was absolutely delicious!! I made it just as instructed but omitted the shrimp and used pre-cooked organic smoked pork sausage instead. Served with some crusty bread. Can't wait to make again!!

Spaghetti Squash I

This was DELICIOUS!!! I baked the squash halves for 40 minutes and they came out perfect. I also eliminated olives simply because we didn't have any. My husband loved this, too -- can't wait to make again!

Best Buckwheat Pancakes

These were delicious! I used whole milk instead of buttermilk since that's all I had, and doubled the recipe. They do come out quite flat, but not at all flat on taste. Will definitely make again -- even my kids (1.5 and 5) gobbled them up! Topped them with berries and syrup.

Spinach Cheese Manicotti

I made this for dinner tonight and it was really good - very flavorful and the manicotti was cooked perfectly! I followed some reviewers' advice and... * Added fresh chopped garlic * Added fresh chopped onion * Added fresh chopped basil * Used only 1 jar of tomato sauce plus 1+ cups water * Used a Ziploc bag to pipe the filling into the uncooked manicotti (so much easier!) I used reduced fat ricotta and frozen chopped spinach. I also used freshly grated Parmesan cheese. I will definitely make again! (Even my 20-month-old and 5-year-old ate it!)

Honey Chicken Stir-Fry

What a great dish! It's so easy, and most of the ingredients are those you'd have in your pantry already. I made it exactly as described -- delicious!! Even my 5-year-old ate it (although I kept all the ingredients separated, haha).

Sausage and Mushroom Calzones

This was so good! I used fresh, refrigerated pizza dough, and sauteed the mushrooms in a little butter and olive oil beforehand. And at the suggestion of another reviewer, after baking them for 20 minutes I brushed some olive oil on the top of them then sprinkled with some Parmesan, and baked them for another 3 or 4 minutes. I had a tough time keeping the calzones pressed together, so I used a couple toothpicks each to keep them secured so they wouldn't fall apart. These were delicious!!

New Orleans Corn Bisque with Smoked Sausage

This was incredibly delicious (and easy)! We made it exactly as described, but added 1 or 2 minced cloves of fresh garlic. We used Yukon Gold potatoes and 1% milk. Not exactly low in fat, but so yummy that it just doesn't matter. Would definitely make again!

Lemon Garlic Tilapia

Absolutely wonderful! I made sure to saute the garlic in some melted butter beforehand, and I placed the tilapia fillets on foil and tented them. I baked 3 large fillets at the temp listed for about 20 minutes and they were melt-in-your-mouth perfect! Not fishy at all either!

Simple Turkey Chili

Best Brownies

I made the recipe exactly as instructed and it turned out wonderful! I only cooked them 15 minutes and they came out a tiny bit underdone, but that's how I prefer them -- more fudgy rather than cake-like. Delicious! I did use an electric beater on low to mix everything together for about 30 seconds or a minute. I didn't make the frosting. YUM!!

Bella's Rosemary Red Potatoes

They were very good, but didn't blow me away. If it weren't for the rosemary there wouldn't be much flavor. And even though the potatoes were cut into small chunks, they needed much more cooking time (close to an hour's worth). I would make again as a more simple side dish.

Bacon Wrapped Pork Medallions

Delicious! I followed the instructions exactly as written except I used all olive oil and no butter. Would definitely make this again. Even my husband said that although he doesn't usually like straight pork tenderloin, this was really good! Even our 4-year-old daughter ate it!

Carrot Rice

Excellent side dish! (We paired this with "Curried Coconut Chicken" which was delicious.) I added only a couple pinches of cayenne pepper and used powdered ginger instead of fresh ginger root. We loved it, although our 4-year-old complained that it hurt her tongue ... so perhaps we will eliminate the cayenne pepper altogether next time. Will definitely make it again!

Curried Coconut Chicken

This was delicious! I made it exactly as instructed except I used a little less sugar (nervous it would be too sweet) and I used lite coconut milk. Oh, and I mixed in a few tablespoons of corn starch towards the end of the cooking time to thicken up the sauce. We paired it with "Carrot Rice" (also delicious). My husband and I love curry, and even our 4-year-old daughter and 9-month-old son ate it!
