Super Easy Chicken Noodle Soup

This is THE BEST chicken noodle soup without going through the tedious task of making it the traditional style with a whole chicken etc. This is 10x easier and tastes just the same, in my opinion. I did add celery and carrots, and used thin egg noodles. It is the number one go to dish I make for myself on a cold day or for my loved ones when they are sick.

Grilled Lamb with Brown Sugar Glaze

The flavor of this dry rub was outstanding and very unique. I was a little nervous this would be too dry but it wasn't even a little bit, very juicy. This was enjoyed by everyone, even myself who does not prefer eating lamb cooked in any preparation. I'd really like to try this on pork ribs for an interesting/new taste.

Linguine with Clams and Portobello Mushrooms

This was really great. I used fresh portobellos instead of the dried porchini as suggested by another user and it came out wonderful. I used generous portion of red pepper flakes as I like my meals spicy, without it I think it may have been a little bland for me.

Grilled Tuna Teriyaki

The flavor was great, but this was a little too salty for me, even while using reduced sodium soy sauce. I think I may have to try this again by using half soy sauce half balsamic vinegar.

Perfect Berry Shortcakes

So easy and so delicious. I love the technique of grating butter, it makes a perfect biscuit. I used the leftover biscuits for breakfast the next morning, toasted with some jam or fresh fruit.

Strawberry Cheesecake

Rave reviews from boyfriend, friends, etc. this is delicious and pretty easy to make. I am pretty sure I added more strawberry to swirl into the cake than it called for, and I used fresh strawberries and added a little bit of sugar. The fresh strawberry taste was to die for.

Pear and Blue Cheese Salad

Beer Margaritas

Oh these are sooo good! Be careful--a whole pitcher will be gone in a flash, and they are relatively strong! I use corona, what better for a margarita? It isn't the prettiest color in the end, but I assure you it will be finished quickly. Have more ingredients on hand to make a second batch.

Peanut Butter Noodles

I absolutely love this recipe and I've made it a bunch of times now. The last time I made it I added some chicken to make it more of a meal and it was a great addition. I omit the green onions for personal taste, and I use grated ginger, not fresh, as it is just what I usually have on hand. I found that for me it is hard to find udon noodles in my grocery store, and I have made this with spaghetti every time and it still tastes delicious. I think next time I might add toasted sesame seeds... I think this would really go great with many additions.

Honey-Balsamic Vinaigrette

I absolutely LOVED this dressing. I didn't find it too strong for my tastes, but a little did go a long way, so don't drench your salad in it. I used it on a leafy salad that had some goat cheese in it as suggested and it was outstanding. I want to make this in a larger batch to keep on hand!

Sweet Restaurant Slaw

This really is just like you get at a rotisserie or fried chicken restaurant. This is a really sweet slaw, and while it is really good, I enjoy the more vinegary ones as well. I used reduced fat mayo and there were no problems whatsoever, but I happily cut down on the fat content!

Fresh Blueberry Pie II

This is a really good blueberry pie. It was super easy to make too. I did add a top crust, and because I had to throw it in the oven with the blueberries to bake the top crust, I think it detracts a little bit from the consistency of the fresh/not cooked berries, because they get cooked a little bit in the oven. But it was still delicious, and I think that adding the top crust makes it better, so I would do it the same next time.

Easy Batter Fruit Cobbler

This was good. Very easy, but next time I will change a few things. I would use less butter, maybe cut it down to 2 or 3 tbsp, and I would top it with some kind of streusel. I mixed a little bit of cinnamon with the sugar to go on top and it was a nice flavor. I used all blueberries, and I actually think I may have used a little too much because the ratio of cake to fruit was a little off, but delicious none the less. I cooked mine for 50 minutes exactly and it came out perfectly brown--my favorite part is that the edge of the cobbler was all caramelized and crispy... soo good!
