This was my first time having tofu. I think this recipe is great! I ate mine over a plate of basmati rice with cilantro and green onion on top.

great german apple pancake! I used splenda and egg whites and it turned out so tasty. I'll definitely be making this again. My version has under 150 calories and 8 servings.

Tangy Pear and Blue Cheese Salad

Love this salad! I used splenda in the dressing, which I won't be doing next time. The recipe for the dressing did make more than necessary, but it was good so it'll be used. I'll be making another salad for lunch tomorrow. Yum!

Bacon and Blue Brussels Sprouts

I only had frozen sprouts and this turned out great! I followed the recipe, probably used a bit extra vinegar and gorgonzola, but that's to my taste:) great recipe since i'm not a big fan of brussels sprouts.

Watercress Pesto

I had never tried watercress before, nor had I made my own pesto. I really like this pesto a lot. I added lemon to mine after putting it on pasta. This recipe is great! Leftovers for lunch tomorrow:)

Zucchini Coconut Loaf

I cannot believe how good this is! I made a lot of changes to make it a little lighter. I completely replaced the oil with unsweetened applesauce, used 3/4c Splenda and 1/4c light brown sugar, 1c white flour, 1/2c wheat flour. I also used Craisins instead of currants. I think that if my version is so good, the original has to be awesome!

Old-Fashioned Chicken and Noodles

The only change I made was adding a bay leaf while cooking. I've never made noodles before and these turned out great. They were a bit of a pain to make, but they tasted better than store bought. Next time we make this, I'll add extra seasoning and probably double the noodles. It turned out more like chicken noodle soup than chicken and noodles. still great!

Browned Brussels Sprouts with Orange and Walnuts

I'm not a huge fan of brussels sprouts. I loved this recipe! I had fresh baby sprouts on hand so I didn't halve them. They took a bit longer than 15 minutes to cook and we used double the amount of orange juice. We ran out of liquid so we added some lemon. I love citrus so this worked great for me!

White Chili I

I made this tonight along with baked corn tortilla chips and WOWZA! It was a hit even among my 2 and 6 year old. I only had 1 can of green chiles, but it was probably for the best considering kiddy taste buds. I also used ground chicken, because that's what I had on hand and I loved it. Huge hit!

Best of Everything Veggie Burgers

This was my first homemade veggie burger. I had to triple, maybe quadruple the breadcrumbs to get them to a manageable consistency. I didn't love them as burgers... but I ate crumbled up the leftovers and used it for taco meat. As a burger, I'd give this three stars. It was too mushy for my preference. I'll stick with this recipe for my black bean tacos from now on though.

Grilled Cheese with Tomato

So simple! I made this on whole wheat bread and it was still awesome. I didn't really follow the recipe exactly, I just threw the sandwich together. I'm sure it would be even better on a tastier, less healthy bread :)

Baked Tortilla Chips

I love this recipe! I skipped the cumin and chili powder because I was making it for my kids, but I would have much preferred the extra kick. I baked mine for about 11 minutes because I was scared of overdoing it, but they were a little chewy in the center still. Kids loved them, Husband and I loved them so I'm thrilled! They are so easy and we always have an abundance of corn tortillas around.

Jalapeno Hummus

This was my first attempt at making hummus. I've never been pleased with store bought, but I always enjoy restaurant hummus. This recipe was great! Definitely nothing like I've tasted before but I enjoyed it very much.
