Chinese Pork Chops

I found these easy to make and they tasted much better than expected. I turned the sauce into a gravy for the pork chops and my super picky 6 year old devoured them.

Apple-Filled Cranberry Muffins

I thought these were very tasty. Easy to make, but I don't think I'd take the extra couple minutes to put the apple in the center, I'll just mix it in with the batter next time. It didn't seem to make a difference.

Spicy Sweet Potato Salad

I love curry! I don't know where I went wrong with this recipe, but I wasn't a huge fan. The flavors were over the top, which I usually prefer, but in this case I didn't. It wasn't bad by any means, just not what I was hoping for based on the reviews.

Lentil Soup with Lemon

I have an abundance of dried lentils and usually make the typical lentil soup with ham. I really wanted something different and a new way to eat lentils. I tried this because I had all ingredients on hand and it sounded great. Turned out wonderfully! I followed the recipe exactly which is quite rare for me. I was very please with the results and enjoyed my leftovers the next day:)

White Chili I

I made this tonight along with baked corn tortilla chips and WOWZA! It was a hit even among my 2 and 6 year old. I only had 1 can of green chiles, but it was probably for the best considering kiddy taste buds. I also used ground chicken, because that's what I had on hand and I loved it. Huge hit!

Baked Tortilla Chips

I love this recipe! I skipped the cumin and chili powder because I was making it for my kids, but I would have much preferred the extra kick. I baked mine for about 11 minutes because I was scared of overdoing it, but they were a little chewy in the center still. Kids loved them, Husband and I loved them so I'm thrilled! They are so easy and we always have an abundance of corn tortillas around.

Rhubarb Muffins

These are great! I substituted applesauce for the 2tbsp oil and had no problems. I skipped the topping because I didn't want the extra sugar. I love these! Next time, I will probably use extra rhubarb.

Indian Turkey Burgers With Lime, Cucumbers, and Chutney

I love this recipe! I have made so many variations of it as well as sticking to the original. My favorite so far has been with ground lamb and cardomam replacing the coriander. It tastes best on folded flat brad (Kangaroo is my preference). It's a lot like pita, but not so dry and definitely tastes closer to naan. My husband hated the mango chutney, so I made my own "tzaziki" type sauce with greek yogurt, lime and cilantro that he loved with it. I liked both sauces on it. Definitely a winner!

Green Bean and Mushroom Medley

Ahhh-mazing! Made this tonight and the hubby and I were above and beyond pleased with it. What a delicious veggie dish! I thought it was a bit salty, but I eyeballed my measurements. It was soooo good that we probably had only three servings out of this six serving recipe! I was unsure of season salt, because I'm not usually a fan, but I reallly enjoyed it. I also used garlic powder instead of salt.

Gnocchi with Sage-Butter Sauce

I love this recipe! I've recently become a fan of gnocchi and purchased a whole wheat sweet potato variety to try something new. I've always used gnocchi with chicken or in soups and was a bit nervous how this would turn out. Fan-freakin-tastic! I loved it. My husband loved it more than me. I think 2 servings for this recipe is nuts because we only used a 16oz package and had at least a third leftover. We also made green bean and mushroom medley from this site and it was a delicious meal. Thanks for this recipe!!!!

Tuna Noodle Casserole

I really enjoyed this casserole. I thought it had a bit of a tang to it and it didn't really resemble any casserole I've had before. I added a bunch of veggies and we ended up eating it off the stove top because it was so tasty!

Turnip Souffle

I'm not sure where I went wrong, but my turnips were never tender enough to mash. I had to use a handheld mixer to smooth them out a bit. All the reviews sound so great so maybe I was unlucky since I scaled the recipe to half.

Chicken and Gnocchi Soup

This was sooo sinful! I cooked a fryer chicken in the crockpot to make my own broth and it came out wonderful. I followed the recipe exactly and had such a positive outcome! Love this!!

All-Around Good Smoothie

I went rogue and made several changes. I used coconut milk and honey greek yogurt. I also omitted the tspn of honey. I used a few extra strawberries and it was super delish! Plenty sweet. This is a great base recipe to experiment with.

Cranberry and Cilantro Quinoa Salad

I LOVE this recipe! All the recipes I have found that call for quinoa don't appeal to me. This one has all of my favorite veggies and ingredients. I followed as written and the only change I would make is to add more lime juice, but my lime may have been a little dried up. I love the taste of this recipe and how filling it is for such few calories!
