Ice Cream Cone Treats

These were a tremendous hit at my daughter's 6th birthday party. To combat the soggy cone issue, I did bake them the night before, but before serving them, I baked them for a few minutes at 350 the next morning, allowed them to cool, then piped on the frosting. The cones were crisp when they were served. I used funfetti cake, strawberry frosting, and decorative sugar sprinkles. The 'cherry' on top is a red sixlet! I'll definitely make these again.

Slow-Cooker Chicken Tortilla Soup

This was so good, but I have to admit I made a couple of changes based on earlier reviews. I used ALL chicken stock and no water, and I added a can of black beans. This will be in my what-to-do-with-all-this-leftover-turkey? file for after Thanksgiving also!! Thanks for sharing!

Grilled Eggplant Moussaka

This was so delicious! My husband decided he was making a Greek eggplant appetizer (this was his ONLY plan for dinner) so I had to come up with something quick that would complement his choice. We enjoyed this so much! I forgot to add the egg yolk, but it didn't seem to affect the outcome. My family was very happy with this dish, and my husband's appetizer came out great also (in case you were wondering). Thanks for sharing this Greek treat, we'll make it again!

Veggie Pizza Faces

We had so much fun making these for our weekly pizza night! I made a crazy face, and my daughter made a puppy pizza (see photos). You can use any vegetable you have, but we included baby broccoli, red onion, spinach, brussels sprout leaves, carrots, red pepper, and mushrooms. We'll make these again, and kids LOVE ranch dressing, so having the flavor on the pizza was a bonus. It only took a bit, but the family fun is worth it.

Grilled Steak Wraps

YUMMMM! We loved these, and they were fairly easy to make. The flavors complement each other very well. Steak & salad inside of a portable wrap--these would be great for lunch. I'll definitely make them again!

Eggplant Snack Sticks

ANY food that will have my extremely picky toddler asking for "MORE!" deserves 10 stars in my book! These do take awhile to put together, but the results are worth it. Eaten alone or dipped in marinara, these are fantastic. I can't wait to try this method with zucchini and other soft vegetables to see if my toddler will eat them as well. Try these, they are great for everyone!

Roxie's Bran Muffins

We really liked these, but I think I'll leave the raisins out next time (just a personal preference). They weren't dry at all, and my daughters loved them--I loved that they're all-natural and full of wholesome ingredients! I'll definitely make these again!

Fresh Fruit Minty Dip

Super-Delicious Zuppa Toscana

FABULOUS. I decided to make it ahead so we could grab it and go before soccer practice, so I made everything and did not add the spinach. To serve, I placed the torn, fresh spinach in our soup bowls and ladled the hot soup over it. Stir, and it cooks the spinach just enough to where it still retains its bite. Wonderful, delicious, my family devoured it and it warmed us up after getting chilled outside. Will make again and again!

High Protein Peanut Butter Balls

LOVE this recipe! I didn't have they whey powder, so I unfortunately had to substitute ground oats and added some cocoa. I wanted to make these forever, and had some bananas that were ready for a recipe. My daughter ate one and said "these are the best things I have ever eaten, seriously!" I plan on keeping some stocked in the freezer. They are truly like a bon bon, without the guilt and sugar. THANKS for a wonderful 'clean' recipe!

This is a good, basic savory cheese ball. I mixed everything together in a food processor and it was super-easy. Just make sure the folks you will be serving it to like green olives.

Big Soft Ginger Cookies

Wonderful! Made these as part of Cookies Across America, and they are delicious. Just the right amount of spices! To achieve the attractive crinkly top, I chilled the dough for 1 hour, portioned out a dozen for baking using a cookie scoop (if you don't have one of these, you need on in your kitchen! It looks like a small ice cream scoop with a spring-loaded handle), then chilled the remaining dough as they baked. I think that's the secret to getting the tops to look like the primary recipe photo.

Lots O'Veggies Sausage Spaghetti Sauce

We made this exactly as written, except for the carrots (I forgot to buy them). The recipe instructions do not include every step for some reason--this should be edited to include adding the meat with the veggie mixture before simmering. I can see how this would make a wonderful lasagna sauce! My husband & daughter opted to eat it over spaghetti, and I ate it out of a bowl with garlic bread. We loved it, loved the vegetable content, loved the fresh flavor, loved everything! Just don't expect a super thick sauce, it has no tomato paste or thickening agent--but it is wonderful without it, and you don't feel heavy after eating it. I'll definitely make it again!

Bean and Sausage Soup

This soup is great! If you use dried beans, you can really control the sodium content (I did use canned because I was short on time, but next time will use dried). I also used lower sodium chicken broth. This recipe is full of vegetables, has no added processed "junk" and the flavor is clean, allowing the ingredients work together naturally. My family loved it!

Fisherman's Catch Chowder

I used mahi mahi since I had it on hand (any firm white fish will do) and this chowder was wonderful! Next time I think I'll use halibut or cod since they have a milder flavor. It's incredibly savory with the tomatoes, clam juice, and white wine creating a broth that begs to be soaked up with a nice crusty bread. I wouldn't change anything, and will definitely make this again.

Green Tea Shake

This was nice, but didn't taste like the Starbucks green tea frappuccino that inspired it. Green tea powder would probably make it taste more authentic. Regardless, my daughter and I enjoyed the flavor. Be sure the brewed green tea is completely chilled so you don't melt the other ingredients, and we didn't use all of the sugar listed. This is a nice change from heavier milkshakes! Thanks for sharing your recipe.

Fruity Gelatin Salad

What a TREAT! I used unsweetend frozen whole strawberries since I had some on hand. I thawed them, blended the bananas in my food processor, added the thawed strawberries (drained) and pulsed it until they were blended with the bananas but still chunky, then stirred in the pineapple. I realized that I used large bananas, so it didn't set completely in the refrigerator, so if you do it also, here's a tip: FREEZE it! It is delicious, like a healthy chunky fruit sorbet. The kids loved it, and they chose it over ice cream for dessert ; ).
