Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

I served this for Christmas, and it was fabulous!! I used a 4 pound pork loin to serve 8 people, and it was beautifully browned once done. The only change I would suggest is instead of using whole garlic cloves to stuff it with, coarsely chop the garlic before cooking it in the olive oil, until soft. Then, use the smaller pieces to stuff the loin along with the apricots (also coarsely chopped) and cranberries. The pan sauce is amazing with the pork, and especially good on roasted garlic mashed potatoes. This was yummy, my entire family raved about it!!

Baked-Bottom Nanaimo Bars

My daughter & I made this recipe in a tart pan and it turned out beautifully. I don't think I would want to try eating it out of hand due to the pudding making it extremely messy. It was yummy, and we would make it again! My daughter even said it was 'better than some cupcakes' she had eaten. Thanks for an easy recipe--I'd make it as a tart again ; ) *I did toast the coconut prior to sprinkling it over the top.

Mint-Cucumber Mojitos

This is OUT OF THIS WORLD good! My new favorite drink! The cucumber adds a perfect amount of refreshment and my husband even liked it. Definitely a great drink to share with girlfriends--thanks for posting your recipe!!

Cheesecake Crepe Roll-Ups

This is the first time I've ever made crepes and they turned out wonderfully. I used fresh fruit since it's in season and the filled crepes are delicious. I would be very happy if my family made these for me for Mother's Day (hint, hint!). Thanks for sharing this recipe.

Fiesta Corn Tortilla Pizzas

My family LOVED these and they are so easy to put together! I did use chives instead of green onions because I have an herb explosion in my backyard right now--including cilantro! These are perfect for a quick Cinco de Mayo party, and so simple to do you can throw a party in minutes ; ). We ate ours with sour cream and taco sauce. Thanks Lucylove!

Corn and Black Bean Guacamole

OLE! This is a wonderful guacamole that could be used as a side dish to any Mexican feast (like we did!). I love the colors and the fact that it's FULL of vegetables, and even my 10 year old ate it happily. 10 stars!! Thanks for sharing your recipe!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

I loved the freshness of this recipe, and the ginger-lime dressing adds an incredible depth of flavor to the salsa. Next time, I would add chopped red pepper and red onion to the salsa for more color and flavor. The only change I made was to use soft white corn tortillas, which we prefer. Thanks for a unique and fun recipe!

Amy's Cilantro Cream Sauce

I can't believe I've never rated this! It's been on hand so many times in our house over the years, and we love it. It's excellent on beef or chicken tacos, with tortilla chips, and my husband likes to slather it on black beans, tossed salad, and anything else he deems to be worthy of it. This sauce is delicious, and perfect as written. Thanks to Amy!

Spring Veggie Bagel Sandwich

My daughter asked for these for her lunchbox, which means it's a winner! We grow our own radishes and arugula, and will have our own tomatoes later this Summer, so this is a perfect way to use our garden for a quick and healthy meal. We prefer the thin bagels over regular, and pictured is a whole wheat version. The cream cheese mixture has a subtle but savory flavor, and combined with the spiciness of the radishes and arugula, it's a definite treat. I'll make these often when my garden grows! Thanks!

Southern-Style Barbecue Sauce

This is really, really good, and I like the fact that the sugar has been reduced from what the normal sauce would have. It's wonderfully tangy, and could compete at any Southern backyard barbecue! Great with chicken!

Oh Chef John, your reputation precedes you! From your how-to videos to your numerous published recipes, you've earned your title. I was craving Summer and happened to find this recipe, and while I don't have end of season tomatoes yet, this gazpacho turned out incredibly. If you love to cook, but take satisfaction in the preparation of the dish, then try this recipe. I had some time on a Saturday afternoon all to myself to create, and chopping the vegetables was a great source of relaxation. I felt like a character in a movie (have you ever seen Julia & Julia?) while I was preparing this soup. OK, maybe that's a bit dramatic, but the finished product is DELICIOUS! Don't be intimidated by the steps, and here is a great tip from the video--to peel tomatoes easily, dip them in a pot of boiling water for a few seconds. You'll be able to pull the peel off easily before dicing them. THANKS for a wonderful, fresh, healthy recipe! I can't wait to share this with my friends.

Incredibly easy, and I used halved grape tomatoes since that's what I had on hand. This was my family's favorite of the McCormick Gourmet Seasoning meals. Sprinkle with parmesan at the end, it's delicious!

Herbes de Provence Roasted Chicken and Potatoes

Yummmm! This smells incredible while cooking, and the outcome is foolproof. I did broil it for a minute or two at the end to get a nice brown color on the chicken. A perfect meal to serve to family or friends, and the seasoning packet makes it easy on you--PLUS since you cook it on a foil lined pan, clean up is easy. 5 stars all the way!

Roasted Broccoli & Crispy Polenta with Roasted Pepper & Asiago Chicken Sausage

Yummmm! This is a delicious dish that reminds me of our Southern 'shrimp & grits' (without the sauce) in a unique way. I prepared my own polenta so that made the cooking time much longer, but prepared polenta would be a breeze and help you stay within the 15 minute & dinner's ready timeframe. My husband enjoyed it and so did I. This is the third recipe I've made using al fresco chicken sausage and I have been extremely impressed with their quality and the flavors are out of this world! Please check my photos for the other 2 recipes, they are worth your time. Thanks al fresco, you've added a lifelong customer!

Healthier Southern Peach Cobbler

I really liked this--just be sure to watch it or it could burn if it bakes too long. It took about 20-25 minutes for our topping to get brown enough, 30 minutes would have been too much. The main thing I liked is that you don't feel like you're eating pure sugar. The peaches shine, and if you wanted to add a small scoop of vanilla ice cream to it you won't blow your diet. Pecans would also make a nice addition. Thanks for sharing your recipe!

Best Chicken Salad Ever II

This is amazing! Unlike any chicken salad I've had, it has wonderful citrus notes from the lemon zest and lemon pepper. I did have to make one substitution because I forgot to buy red grapes: fresh blueberries. Lemon and blueberry pair wonderfully together, and while I would like to try this with grapes, it was incredible! The dressing makes this salad. This recipe will go in my family-favorite craveworthy file. It's perfect if you want to impress someone with a different and delicious meal. THANKS!

Gourmet Egg Salad Sandwich

Incredible! I accidentally mixed the pesto into the egg salad instead of following the directions (oops!) but LOVED it. My 10 year old thought it was the best egg salad she's ever had, and I agree that it is delicious. This is going in our school lunchbox file as a sandwich filling! 5 stars all the way, thanks!
