Eggplant Snack Sticks

ANY food that will have my extremely picky toddler asking for "MORE!" deserves 10 stars in my book! These do take awhile to put together, but the results are worth it. Eaten alone or dipped in marinara, these are fantastic. I can't wait to try this method with zucchini and other soft vegetables to see if my toddler will eat them as well. Try these, they are great for everyone!

Vegetable and Feta Latkes

These were really delicious! I tried these to encourage my picky toddler to eat more colorful vegetables, and she loves french fries. I portioned a cup of the mixture out before adding the feta for her because I know she does not like it, fried some small ones, called them 'fries' and she ate them. The rest of the family enjoyed theirs with feta. Thanks for a great recipe!

Grilled Steak Wraps

YUMMMM! We loved these, and they were fairly easy to make. The flavors complement each other very well. Steak & salad inside of a portable wrap--these would be great for lunch. I'll definitely make them again!

Veggie Pizza Faces

We had so much fun making these for our weekly pizza night! I made a crazy face, and my daughter made a puppy pizza (see photos). You can use any vegetable you have, but we included baby broccoli, red onion, spinach, brussels sprout leaves, carrots, red pepper, and mushrooms. We'll make these again, and kids LOVE ranch dressing, so having the flavor on the pizza was a bonus. It only took a bit, but the family fun is worth it.

Grilled Eggplant Moussaka

This was so delicious! My husband decided he was making a Greek eggplant appetizer (this was his ONLY plan for dinner) so I had to come up with something quick that would complement his choice. We enjoyed this so much! I forgot to add the egg yolk, but it didn't seem to affect the outcome. My family was very happy with this dish, and my husband's appetizer came out great also (in case you were wondering). Thanks for sharing this Greek treat, we'll make it again!

Slow-Cooker Chicken Tortilla Soup

This was so good, but I have to admit I made a couple of changes based on earlier reviews. I used ALL chicken stock and no water, and I added a can of black beans. This will be in my what-to-do-with-all-this-leftover-turkey? file for after Thanksgiving also!! Thanks for sharing!

Lots O'Veggies Sausage Spaghetti Sauce

We made this exactly as written, except for the carrots (I forgot to buy them). The recipe instructions do not include every step for some reason--this should be edited to include adding the meat with the veggie mixture before simmering. I can see how this would make a wonderful lasagna sauce! My husband & daughter opted to eat it over spaghetti, and I ate it out of a bowl with garlic bread. We loved it, loved the vegetable content, loved the fresh flavor, loved everything! Just don't expect a super thick sauce, it has no tomato paste or thickening agent--but it is wonderful without it, and you don't feel heavy after eating it. I'll definitely make it again!

These are great! Not too sweet, and completely portable, as long as they aren't being crushed. I can see many ingredient possibilities with this recipes--sub pecans for the almonds and add mini chocolate chips for a German chocolate version, add chopped dates or raisins for another. Thanks!

Shrimp Remoulade Galatoire's

I loved this remoulade! All others I've had in the past have been smooth, so I appreciated the thicker texture of this sauce. It really clings to the shrimp, and the flavors blend really well. The parsley is my favorite part of it because it gives a wonderful freshness. I would serve this for a true N'Awlins' dinner party. Thanks for a terrific recipe!

Crawfish Cornbread

I must admit, I was afraid of this recipe. Have you ever seen a crawfish? I'm a Southerner and had never eaten it, but this recipe intrigued me. The texture is a blend between a cornbread and a casserole, so the name is a bit misleading but...........I really liked it! If I make it again, I would add some more seasoning, maybe some minced garlic and Old Bay. It definitely reminded me of something you would find at a Southern family reunion--comforting and somewhat mysterious ; ).

Stuffed Tomatoes with Grits and Ricotta

This was truly delicious! We ate it with grilled shrimp instead of as an appetizer. If I did make it as an appy, I would make it in cherry tomatoes. Be sure to watch it at the end because a couple of my tomatoes split in the oven, and spilled on the pan which doesn't make a pretty presentation ; ). Delicious!

Cherry Balsamic Short Ribs

Let me start out by saying this: We rarely eat beef at our house, maybe 6 times a year tops. This recipe was so delicious, my husband ranked it as one if the best things I've ever made AND he was looking for more when we were finished! I made it exactly as written, with the exception of discarding the veggies and cherries after taking the ribs out of the oven. When you work hard at it, why throw away the delicious flavor from those ingredients? Just pick out the bay leaves and herb stems, and serve with the ribs. Divine! Worthy of company, worthy of family dinner, and worthy of a 10 star review. Thanks so much for a delicious dinner!

Eat Your Veggies Pasta Salad

This was good, but not fantastic. I was the only one in my family who did not add anything to improve the flavor of it once we started eating. I love all of the nice raw veggies that go into this salad and you can mix and match to suit your family's tastes (I added a few radish slices), but the dressing turned out sweet. It reminded me of a good coleslaw dressing. I'll definitely use this idea again, but will make a vinaigrette instead of the Splenda/mayo/vinegar dressing.

Radish Revival

My 9 year old daughter LOVED these, but she has an extreme affinity for radishes. I liked the simplicity and pure nature of this idea, but I think I would rather eat the radishes without the salt and pepper. This would make a BEAUTIFUL decoration for a rustic or French themed dinner table!

Grilled Fish Tacos with Chipotle-Lime Dressing

100 stars!! I have FOUND my fish taco recipe! I did use corn tortillas and could not use the adobo sauce because the rest of my family doesn't like spicy. Instead, I used a tsp of smoked paprika for the smoky flavor in the sauce. Fish tacos are my favorite food and now I can make GREAT ones at home! Next time, I think I'll try mahi-mahi. Wonderful recipe!!

Mom's Baby Berry Pies

These were a hit, and my 9 year old daughter was able to help since they're so easy to make. I didn't use the sauce since the pies are perfect on their own, but I think it would make a nice ice cream topping. So, next time if I need extra calories, I'll add a scoop of vanilla ice cream topped with the sauce ; )! Delicious recipe, thanks for sharing!

Slow Cooker Bolognese

This was GREAT and my family loved it. I definitely appreciated the convenience and lack of mess--normally when I simmer pasta sauce it splatters and creates a mess, but this solved the problem. It won't become my go-to bolognese, but it was flavorful and delicious!

Turkey Burgers with Brie, Cranberries, and Fresh Rosemary

These were DELICIOUS!!! I made a raspberry dijon to 'dress them' by mixing some melted raspberry preserves with whole grain dijon mustard, and they were fantastic. I'd love to make these for company, and next time I'll use my grill pan to cook them. YUM!

Green Onion Muffins

These were just okay as written. I would make them again, adding a full cup of sliced green onions for more flavor and possibly more cream cheese. These would also work as drop "biscuits" due to the texture of the batter, which is thick although when baked they are similar to a bread. I'll re-rate them if future changes help them a little.
