Best Marinara Sauce Yet

Pretty tasty. I did use Moscato because it was the only kind of wine I had. Also, I added about 2 T of sugar to make it sweeter after making/tasting as is.

Ambrosia Fruit Salad

I was looking for a fruit salad to bring to our first visit to the lake in 2012. This recipe was great but I don't think anyone really enjoyed the "ambrosia/coconut." I loved it but I think I'll continue to look for a more traditional fruit salad.

Summer Vegetable Ratatouille

Time consuming cutting up the veggies into cubes and cooking the veggies but worth the effort. I've never had Ratatouille so I have nothing to compare this recipe too. I would like to omit the 15-20 minute cooking time and just add the tomatoes and parsley, cook another 10-15 minutes. Served with Giada de Laurentiis recipe for Lasagna Rolls.

Quite tasty. I did marinate for 8 hours. Next time I would like to decrease the salt by half. Served with Asparagus Cashew Rice Pilaf and grilled mixed veggies.

Zippy Rice Pilaf

Tasty and added a little extra "zip" to ordinary plain rice. I did wash the rice a few times prior to cooking but otherwise I made exactly as is. Served with Grilled Tilapia with Mango Salsa.

Chili I

WOW! I was very pessimistic about the dark beer, coffee, and cocoa powdeer but this recipe was really good. Maybe next time I would decrease the dark beer by half for personal taste. Also, I tried to find chile pepper but after going to 2 stores, I gave up my quest. Next time I would like to use the peppers since my dish lacked spice. I'm not complaining though because my daughters can't handle the heat. Served with Fiesta Blend Cheese and sour cream.

Spanish Flan

I forgot to cover my baking dish with aluminum foil and remembered to do so halfway through the baking process. Needless to say the flan was lumpy but still tasted great. Also, when making the sugar syrup, make sure you smear the baking dish rapidly because the syrup hardens fast. Last of all, the hot syrup should be an amber color.

Beef Pho

WOW! Love it! I did use the cinnamon stick I bought from the Asian market. It was rather large (4-6 inches long, 1 inch in diameter) but it didn't overpower the broth like I expected. Also, I added 2 packs of meatballs because I love beef and meatball pho. Wonderful for such a cold, wet, and windy day. ***UPDATE*** The second time I made this, I added 3 sliced lemongrass and cooked for 10 hrs. It tasted great!
