Jo's Rosemary Bread

Reviewed: Sep. 5, 2011
Put it in breadmaker on dough, then cut into 16 pieces, rolled into balls, placed on greased cookie sheet, brushed w/olive oil, sprinkled w/sea salt & crushed rosemary. Baked @ 375 for 17-20 min. Place 9 x 13 pan full of warm water on bottom rack in oven for crusty rolls.

Strawberry Jam

Reviewed: Mar. 21, 2010
With only the addition of a Tbsp of butter to minimize the bubbles, I followed this recipe as directed. I was a little apprehensive as I have only ever made jelly before, and then I used Certo pectin. As suggested by other reviewers, I gradually increased the heat and did the freezer plate test 10 minutes after it reached a full rolling boil. I ended up using all three plates, about two minutes apart, until I felt I had a good result. Now I'm sitting here with a little grin for each lid I hear pop as it seals shut. I wiped out the pan with some bread and yes, it's sweet, but it's GOOD! Already the jam was thickening up nicely even as it cooled in the pan bottom.

Baby Back Ribs

Reviewed: Aug. 6, 2011
Excellent fall-off-bones! I used beef ribs and a dry rub up to the time I put them the grill. Perfect!

Rachael's Superheated Cajun Boiled Peanuts

Reviewed: Jun. 14, 2010
I don't know how to rate these ... the flavour was great but soft peanuts? From what I've read, Southerners, who are raised with these, will like this recipe, but Northerners (like myself) who are used to crunchy peanuts likely will not. Sorry I can't rate this higher ... just personal preference I guess!

Broccoli Cheese Soup

Reviewed: Feb. 20, 2010
Excellent, and even better a couple of days later! I pureed the whole lot with my immersion hand-held blender. Also doubled the cheese and it still wasn't overly cheesy. Hubby would have liked more cheese and less puree, but that didn't stop him from cleaning out his bowl! Served it with herb garlic bread from my breadmaker.

Famous No Coffee Pumpkin Latte

Reviewed: Oct. 22, 2012
Love this! Mixed everything but milk, then added milk last. Used brown sugar in place of white, and pumpkin spice in place of cinnamon. Made w/fat-reduced lactose-free milk.

Quick Chicken Marsala

Reviewed: Feb. 7, 2012
Do not, as I did, sub in Red wine! I knew Marsala to be red, and didn't read carefully that I could use white or sherry. My version was a 1-star, which I continue to debate if I should toss it, but I will not hurt the ratings because of my own poor judgement. Mine tasted like a lot of cooked red wine with red pieces of chicken floating in it. Yuck.

Watermelon and Strawberry Lemonade

Reviewed: Jul. 9, 2010
I had a wonderful sweet watermelon to use up, and was really looking forward to this, but found it only okay. I finished to batch I made, but I wouldn't make it again. The lemon took a real back seat to the watermelon for me, and I didn't get that contrasting tart bite I was hoping for.

Mushroom Blue Cheese Turkey Burgers

Reviewed: Jul. 2, 2010
I don't rate many recipes, but this one was GREAT! I halved the recipe, added the cheese in with the meat (as suggested by other reviewers) and used a combination of dark and white ground turkey. Very moist, very tastey. Had to keep the neighbours away from my grill!

Southern Pulled Pork

Reviewed: Feb. 20, 2010
I liked, hubby LOVED. I thought it could use a little more flavour but I do like my food strong with flavour. Served on fresh home-made bread from the bread maker.

Banana Oatmeal Cookie

Reviewed: Feb. 20, 2010
Delicious! I was hesitant to make these because some of the pictures had that uncooked look I have obtained in the past with oatmeal cookies. But mine turned out with nice colouring. I used 1/3 wheat flour and added some vanilla and extra cinnamon. Also, my ripe banana had been in the freezer awaiting such a recipe, so it was also browned thoroughly. I'm sur these things contributed to the colour, so I'm pleased! 10 minutes was exactly the right amount of time in my oven.

Bread Machine Calzone

Reviewed: Oct. 27, 2012
Used Exquisite Pizza Sauce from AR.com. Used 2/3 cup wheat flour because ran out of white. Cut dough into four and made rounds, filled, folded in half. Brushed w/EVOO, garlic powder and salt. Baked only 30 min. Sprinkled w/Parmesan 5 min before finished cooking. Let sit after filling if time and dough will keep rising.

White Bean Chicken Chili

Reviewed: Jul. 22, 2012
Delicious! Used fresh tomatillos instead of canned, and frozen corn instead of fresh. Only made a half recipe, but used a full can of bean and full amount of cumin. Finally, used full can of tomatoes with diced green chiles in them, rather than 1/2 can of each.

Made these into burger patties and loved them. Skipped the spinach because wouldn't fly with husband, but wished I'd made mine with it!
