Summerly Squash

very good. added the garlic that other reviewers suggesting and substituted EVOO for veggie oil. have both zucchini and squash in my garden so I'm thinking this will be come a weekly staple through growing season.

Lime-Curry Tofu Stir-fry

Good but a little too much liquid for me. I did use lite coconut milk so perhaps that is why. will not use quite the whole can next time. I made a cup of marinate buy doubling the sauces (I did sub 2 Tbs of fish sauce for 2 Tbs of soy) and I let the tofu marinate in that for about an hour before stir frying it then I just added 8 Tbs of the remining marinate in place of the sauces since the measurements ended up being the same. will make again and will try with different veggies too.

Chipotle Mayo

made this to go with some crab cakes. I loved it. hubie said it was good but was lacking "something" I think it was the squeeze of lemon juice I put on my that he did not put on his. making some veggie burgers later this week and excited to try this on those as well.

Fruit Salad in Seconds

Couldn't be easier if it tried and my 2 yr old had 2 bowls with dinner so this one is a keeper in my book :) not a flashy recipe, wouldn't make it for a potluck or anything like that, but a great way to get some fruit into a picky eaters diet (like the above mentioned 2 yr old LOL). Works for any meal(s) of the day, Breakfast Lunch dinner and/or snacks. Sill be a summer staple in my fridge!

Refried Beans Without the Refry

FABULOUS recipe! will never buy canned refried beans again! Super easy, just toss in crock pot and walk away then come back 8 hrs later and hit with a hand mixer = DONE. Tastes just as good, if not better, than anything I have ever had out of a can or in a restaurant. its vegetarian (bonus!). I used a whole seeded jalapeno and I didn't find it to be spicy at all. My 2 year old was gobbling them up! I also cut the salt down to 3 tsp and next time I will only use 2 as less salty suits my tastes better. makes the equivalent of about 2 large cans so i used half and froze the other half. Love that this recipe doesn't use (or need) lard for texture/flavor and you can control the salt & spices PLUS you don't have to worry about BPA lines cans! LOVE LOVE LOVE it!!

Vegetarian Cottage Cheese Patties

Mixed reviews on this one in my Family. i personally am not inclined to make it again but MR said he liked it. 2yr old would not touch it I just thought it was OK. I found it to be a but too salty and I wasnt a fan if the soup on top where as MR said the soup made the recipe. Will keep recipe around and maybe try again but I'm not in a hurry to do so.

Melon Lime Cooler

yummy and easy. kinda tastes like key lime pie when you top it with whipped cream. want to make an adult versoin with a few shots of Midori in the mix. bet it would be FAB-U-LOUS

Chicken Flautas

turned out yummy. I slow cooked the chicken in a crock pot with some taco seasoning so I omitted the cumin from the actual recipe. i did not use more oil that the recipe called for as I wanted to keep these as healthy as I could and the tortillas still wrapped up nicely however once baked they were more on the chewy side rather than crisp. not bad but them being crispier would have been better. I felt like this recipe was intended for them to be deep fried. will make again but think I will use flour tortilla which I know are not authentic for this recipe but that I think may work better in the oven.

Magic Mango Bread

This bread tastes pretty good although not as "tropical" as I expected. I found the Mangos to be a pain to cut up but that is just me. very moist, would probably do it as more of a coffee cake in a 8x8 next time maybe with some kind for icing.... bread bakes up darker than I expected so I thought it was done, toothpick came out clean, took it out and realised it wasn't done and had to put it back in. would make again if a few mangos fell into my lap like they did this week but wouldn't go out buying mangos to make this.

Rhubarb Cherry Pie

Could not have been easier to make and it turned out really good. I let mine sit for over 4 hours and the inside was still just a touch runny so i would say make this a day in advance and let it sit in the fridge overnight before cutting it. Will have to make another one as I have all the ingredients and my rhubarb plants are in full swing. Will try my make ahead suggestion and update my review with the results. UPDATE - changed from 4 to 5 stars. let sit overnight in fridge and it set up beautifully plus the flavors were even better he next day YUM. making another one this week!

Apple Strudel Muffins

An easy to make and good tasting muffin but recipe as written has no real WOW factor. Made these to use up some apples I had. Needs more cinnamon I think to really make them sing. They are a solid muffin as is but just need a pinch more pizzaz to make them fantastic

Chef John's Cottage Fries

A delicious little fry and easy to make! I like that these are baked and not fried thus healthier. I baked mine for just shy of 45 min and they turned out good but I think i will leave them in for just a tad longer next time bc I like them really crispy however if you like a more tender fry 45 min seemed about right. 30 min for me was not brown enough but that could be personal taste. these have a hint if spice to them from the cayenne but its subtle however, if you are at all sensitive to spice I would just omit this and they will still be delish. I did use the optiional step shown on the video and place my fries on a rack for the last 10-15 min. liked the added crispness but as CJ said, not a necessary step. This one will me in my regular rotation.

Morning Glory Muffins I

good tasting muffin and love all the nutrition packed in. Great "on-the-go" breakfast. while the taste was fabulous as written, for the sake of my waistline I may use less sugar next time. A tad more labor intensive than some other muffin recipes I frequent but a solid go to breakfast muffin recipe that seems to pack in more nutrients than most.

Banana Crumb Muffins

Delish!!! moist and yummy. looks like they came straight out of the bakery when they are done. a go to recipe for using up bananas. Oh and they freeze great so make as many as you need to use up those bananas before they turn and pop in the freezer for future use.

Spinach Enchiladas Verde

I thought these tasted good but My Hubster said they were excellent. I did have to take off a start bc I found some of the measurements and directions to be off. The recipe calls for you to mix together half the salsa and sour cream but then it is not totally clear how you were to use it. it says to fill the tortilla with some sour cream and salsa but does that mean the mixture or the reserved ingredients. I decided to mix all the salsa and sour cream together and use it that way. put a bit in the bottom, used some to fill the tortillas then poured the rest over top and that seemed to work. Also it called for a bunch of spinach. While I am sure "a bunch" ranges form grogery store to grocery store I found this to be WAY too much. I would say half a bunch as my tortillas were filled up and I have tons of leftover shredded spinach. Also if you put the rolled tortillas seam side down there is no need to secure with a toothpick so save the time and the trees. since it was a hit with the MR I will be making again but with these changes.

Chicken Enchiladas II

better than I expected. thought cr of mushroom soup was a weird ingredient but it worked. added some taco seasoning to the chicken and let it slow cook in the crock pot until it could be shredded and it was a wonderful filling. Will make again.
