Basic Crepes

My teenaged granddaughter pulled this recipe and proceeded to make it Christmas Eve. She followed the instructions and the fun began. It became to glob of goo. She then tried the hand mixer and then the stand mixer. The goo went right up the blades. At that point, I saw what was happening and told her she had to add liquid and the goo immediately started behaving. The "fluids first" process works much better for the less skilled and it produces wonderful crepes. She enlisted the help of my teenage grandson. Both are pretty good cooks for their age. They had so much fun flipping the crepes. We stacked them in the crockpot (for lack of anything else handy) with parchment between each, put them in the fridge and Christmas morning was quick and easy - no waiting for the crepes to be flipped!

Pecan Chewies

My Granddaughter made these for us. They were very good but I forgot to tell her one thing. I had adjusted the servings to 9 and was going to cook it in an 8" x 8". She followed the instructions, so used the 9" X 13" pan so they are very flat but still very good. Remember to adjust the pan size if you adjust the number servings.

Skillet Apple Brownie

Received my allrecipes magazine and found this recipe. It is worth every one of the 5 stars. As I reviewed the recipe, I really didn't think it would fit in my 8 inch iron skillet but it does fit perfectly. I used less than 1/4 teaspoon of the cloves as I don't care for cloves. When it came out, I could taste the cloves but it still was delicious. This morning, I decided to try some as a coffee cake. Oh my, other reviewers were absolutely correct. The cloves blends in and isn't so strong the next day. This is great at dinner with ice cream while it is still warm but it is also wonderful the next morning as a coffee cake. I like things I can do the evening before and still have it be special the next morning (not a morning person). Next is to try to make it so that I can serve it to my diabetes friends and family.

Grandma Jeanette's Amazing German Red Cabbage

Excellent. I made 2 small changes that had been suggested. I added about 1/4 c diced onions (sauted) and 2 strips of crumbled bacon. I think they added to the recipe but the recipe is just so good. I have eaten a lot of red cabbage at German restaurants and this is the best I have eaten.

Easy Pork Roast

Delicious. Only changes were that I forgot the rosemary. I used other suggestion of rubbing roast with salt and pepper but also used some Pork Magic before browning the roast. I served it with the Irish Colcannon (great), corn bread, and the Superfast Asparagus (also great recipe). My guests came back for seconds so fast that I was amazed. I did take the roast out of the liquid to make it easy to serve. I then put a couple of cups of the liquid including some of the roast vegetables in a pan and thickened it with corn starch to make a gravy for the meat or potatoes but it really wasn't needed. Will use another auggestion and make soup out of the rest of the liquid. Definitely worth making.

Superfast Asparagus

This is almost too easy! I was a little afraid of the cajun seasoning since I was serving it to guests so I went with a little seasoned salt and a little cajun seasoning. It was great. Even my non-cooking friend asked for the recipe because she thought even she could handle it. Using the foil in the pan and the spray olive oil makes it even easier but it looks like something special.
