Monterey Spaghetti

We tried this over the weekend, but I used 1lb of spaghetti (whole wheat) and baked it. It was a tiny bit dry but we loved the flavor and we would definitely make this again! I think a couple of chicken breasts cubed and lightly browned then added to this would be fantastic and would make it a complete meal.

Italian Meatball and Cheese Tortellini Soup

I loved this, DH & DS really liked but didn't love as much as I did but they wouldn't mind having it again - which is good because I definitely want to have it again! Followed recipe exactly - except for using frozen tortellini. It was pretty easy too - good choice for a work night :)

Chili Dog Casserole I

This was excellent - a huge hit with everyone! I followed the recipe closely, but the actual items you use can affect the flavor. We use Hebrew National hot dogs, the 97% fat free, and the spicy beanless chili by Hormel (DH will not eat beans), oh and two cans of it. For the buns I tried making my own using the Buttermilk Wheat Bread recipe that I make hamburger rolls from - they were a bit dense this time but that actually worked perfectly in this, they didn't get soggy and the bottoms got a little crispy which I really liked. For the cheese - although I love cheddar, I had some Montery Jack to use up so I used half that and half sharp cheddar. I did add the onion & mustard too, that's how I like my chili dogs anyway :) Everyone really loved this and we'll have this again!

YUM I loved these, and to my surprise so did DH - I used half whole wheat flour and half all purpose but that's the only change - definitely having these again!

Grandma's Butter Noodles

These were very good, I used half whole wheat flour and half all purpose but that's the only change. I thought when I was rolling out the dough that I had it really thin but when it came time too cook them it was clear that they could have been thinner - but it's well worth trying these again - practice makes perfect lol

BBQ Chicken Calzones

These were excellent - I followed the recipe closely, using crescent rolls for the dough. it was a little tough getting the dough rolled out and sealed after filling them but it did work out - i worried they would be too flimsy after they cooked but they worked out great and had good flavor. The guys really liked them, we'll have these again!

Simmered Swiss Steak

This was really good & tender & easy! The only change was slight, I used 1c of broth because some had commented that there was some loss of liquid - but we probably would have been alright with the 1/2c. That or we'll use more steak next time :)

Danish Potato Soup

Yum! So good - I wanted a recipe to use a hambone but didn't include beans or peas so this worked out great. I followed the recipe nearly exactly - I did use whole wheat flour but other than that was just as written. Everyone loved it and my place smelled so great - we'll have this again!

Cheese Souffles

Yum! I was nervous to try this, but I like to try new things - I was so pleased with how well they came out and DH & I really loved them (DS not so much). I followed the recipe exactly, except I only had smaller ramekins but they worked out well. Oh, sorry, I used whole wheat flour so I guess it wasn't exact but very close :) We'll have this again.

Breakfast Upside Down Cake

This was alright, I thought I'd like it a lot more. The potato flavor seemed to take over the flavor of the dish but it's not bad, just not what I expected. I followed the recipe exactly too except for using a square pan vs a round one - that shouldn't impact the flavor though :)

Ham & Peppers Penne Pasta

This was so good! We all really liked this and we'll have it again. I followed the recipe exactly except for using rotini instead of penne, although I'm sure penne would be great too. We used whole wheat rotini and whole wheat flour. The 'sauce' is thick and at first we thought it would be too thick but the vegetables and ham add liquid as they cook so it came out fantastic - no changes needed! Thanks Carrie for sharing this recipe :)

Runza Casserole For Two

This was delicious, everyone loved it! I doubled the recipe and made it in a 9x13 pan. I've never had Runza before and have been wanting to try it for so long - I'm glad this is the recipe I tried for the first time making it - we'll have this again! The dough was good too, it didn't rise as well as other dough recipes I've tried, but for this recipe it worked really well.

Half and Halfs

I like these, I don't love them as much as other cookie recipes I've tried. The flavor is just pretty good, and I followed the recipe exactly. I made them into heart shapes for valentines day which was some work but that has nothing to do with the recipe. I followed the recipe exact too. And since they're a butter cookie I chilled the dough before baking so they wouldn't flatten out too much, that helped but they still stayed soft so I might like to try half shortening and half butter some time.

Peanut Butter Bars I

YUM! such an easy and tasty recipe. I tried with 1-1/2 sticks of butter and had a slight crumbling problem but not so bad to not make it worth while to reduce the butter. We'll have these again!

Amish White Bread

Oh my was I surprised! I was determined to find a recipe that was similar to store bought white bread that my son & step son would use for sandwiches. DH didn't think homemade bread could come out as soft but this recipe is what I was looking for! I avoided this recipe because DH can't have white flour breads and I'm not a fan of it - but like I mentioned son & step son prefer it - and now I can make it as needed - was very pleasantly surprised :)

Spicy Chicken Rice Soup

Excellent soup! I followed recipe exact, using brown basmati rice though and cooking it 45min because that rice takes longer to cook. So delicious, not too spicy at all! It didn't make 6 servings in my opinion though - but we'll have this again - we all loved it!

Slow Cooker Corn Chowder

This was excellent - usually I'm not a big fan of corn chowder but DH really likes it so I tried it and everyone really liked this! I only made one change, like many I added a can of creamed corn in addition to the other can of corn - we'll have this again!

Roast Sticky Chicken-Rotisserie Style

Delicious! We took the advise of many and cut the salt to half but will need to reduce it more still - was very salty but the other seasonings made this very tasty - all we changed was the salt (oh and put some minced garlic in with the onion). I used bigger chickens and they didn't cook evenly in my pan because they were snug so we'll have to handle that differently next time if I decide to use bigger chickens again, but that has nothing to do with the recipe - the recipe is fantastic and we will make this again!
