Ultimate Side Dish

This was different. DH liked it more than I did. The only change I made was to use frozen potatoes instead of canned (really hate the canned) but other than that I made this according to the recipe. I'm sure we'll have it again to have something different.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made just the cake part of this recipe for my son's birthday (was recommended in 'the buzz') and used the frosting from "Daisy Brand Sour Cream Chocolate Cake" - that went very well with this. I thought the cake was delicious, DH thought it was dense but everyone else said it was good. I used almond extract instead of vanilla, DH really can't stand vanilla - I loved that extract in this, I'll make it again :)

Sopapilla Cheesecake Pie

WOW this is great! I don't have mexican vanilla but I just tried with regular vanilla anyway. I am sure the mexican vanilla would be excellent, but I thought this was worth trying anyway. I omitted the honey, but followed the recipe otherwise. Mine were messy - the butter on top pooled up and saturated the top so I tried cutting it knowing it was too soon but to let the butter drizzle down through it - it helped a little but it stayed messy. I would use less butter next time but the flavor was surprisingly great, everyone enjoyed these.

Kim's Summer Corn Salad

I made this for a cookout that I went to, and it went over really good. I really love it and will have it again. Unfortunately DH didn't care for it. I used frozen corn & peas though. Because I was worried about about mayonnaise I made and oil & vinegar dressing instead - per one other review. I used a drizzle of sesame oil and 1/4c vegetable oil. I also used 2tbsp balsamic vinegar, then added a drizzle more - so maybe more like 3tbsp? I also added sesame seasoning mix along with the salt and pepper. I also cubed up a block of sharp cheddar cheese to mix in - that went so well with everything else. My MIL really loved this.

Fruity Krispy Treats

These are very good. I'm just not a fan of marshmallow at all - but I had a bag of the mini colorful ones to use up. I tried this with the cocoa pebbles like erikagee recommended because I didn't want them to be too sweet like so many commented on. The flavors go great together. I used a 9x13 pan as well - worked out well, made the squares a good size in my opinion :)

Spicy Beef & Broccoli Chow Mein

This came out really good - my guys (DH, DS & SS) all really liked it. I doubled the recipe for all of us though. I'm don't usually order chow mein but DH especially likes it so I was eager for his opinion lol. I just didn't have the right noodles, the picture looks like they are a type of pasta - I'll keep looking for something like that. But we used the dry noodles in the package of Hoo Mee chow mein - DH's favorite noodles. I made the sauce just as written (low sodium soy is a must, it still is salty) and used up some green onion & a few mushrooms, they went well with this. We'll have this again! Thank you Raquel!

Barbeque Beef Casserole

I really loved this but DH just thought it was ok. I did make "Buttery Corn Bread" instead of using boxed mixes so I don't know how the quantity compares to how it would have been, but he said he'd try it again with less corn bread on top :) I did add about 1/4c more bbq sauce too - the flavor was really good, and this is very different too - yum! Oh, and I did need to bake it longer - like someone else said the cornbread looked cooked, and the toothpick came out clean but it wasn't cooked completely. I made cuts in the top of the bread to get the heat into the uncooked layer and that helped.

Pineapple Fried Rice II

Yum! We all really liked this! I made the rice the day before - used brown basmati like I always do. I used mixed vegetables instead of peas (DH hates them). And as one reviewer recommended, I reserved the liquid from the pineapple to mix in the rice and didn't add sugar - that gave it a little more pineapple flavor too. It's really good, DH especially loved this :)

Spinach and Sun-Dried Tomato Pasta

This is very good! I didn't have enough sun-dried tomatoes for what this recipe calls for, and it seemed that I had a lot too lol but I made it with about half and I think that worked out great, DH likes tomatoes but as long as they're not too much. I added a 2nd cup of vegetable broth too, it was a bit dry with just one cup. I didn't have any pine nuts either, didn't realize I had run out so I just made it without, no substitute - I'll try this with them next time but we really liked it without. I also doubled the crushed red pepper flakes, wasn't too much at all. We added cooked shrimp as well - so good with this recipe!!

Broccoli Delight Salad

I really love this salad and didn't realized I haven't rated it yet. I made it for a birthday party and it went well. I make the recipe as written but I reserve some of the dressing - I add about 2/3 of it and bring the rest in case someone thinks it needs more but usually people like it with less dressing. It's very good!!

I love this! I made it for a birthday party and it was well liked. I served with chips and veggies - it went well with both. The flavor was great and not to spicy with the cayenne, it was just right. I will definitely make this again!

These are very good! I made them for a birthday party and most people really liked them. My son didn't care for them, and he usually likes everything but you can't win them all. I followed the recipe exact - I'd make these again - they were well worth the effort and they looked really good too.

This was pretty good. I made it for a birthday party and it wasn't a hit unfortunately. I did use half the seasonings per the many reviews that suggested that. I also used a little less coconut & marshmellows.

Zucchini Alfredo

This was pretty good, a little dry and a little bland. I like the idea of using zucchini in a sauce for noodles, will have to try adding a little seasoning next time though. I did add a little more milk to get it to be a little less dry.
