Pork, Broccoli and Rice Casserole

Wow - loved it, we all did! I was so surprised because SS claims he doesn't like rice but this was great. I even made it with extra rice (3c water - 1-1/2c brown basmati) because the pork I used was about 2lb but I kept the qty the same on everything else. I didn't know if the curry would be too different from what I usually make (seldom use it) but the amount was just right and I just love this recipe way more than I expected :)

Sausage Scalloped Potatoes

I loved this, DH & son liked it pretty good. The only change was to use regular brown potatoes (red potatoes have a higher glycemic index) and whole wheat flour. I made this in the oven, but I did microwave the kielbasa as recipe states to do so I could discard a good amount of the grease - that was a quick and convenient way to do that! We'll have this again.

Zucchini Bisque

I loved this but DH barely liked it - not exactly sure why because he likes zucchini & soups generally - but it was a nice way to help keep up with excess zucchinis, I'll make it again :) I used half the butter and added garlic, that's the only changes - oops I used half & half also. Yum!! I thought the flavor was better than I anticipated :)

Easy Creamy Chicken Casserole

I liked this more than I thought I would - but curiosity made me want to try it and I'm glad I did. I didn't modify it much - I used a little less sour cream based on comments that it was too much, and even with just 2c of sour cream with the large can of cream of chicken soup, it definitely would have been too much - it was quite soupy even with reducing the sour cream! I added onion & garlic to the soup mix. I think next time I'd like to add celery too. We served this over noodles - I had wanted to serve it over mashed potatoes, but I didn't have enough potatoes to make that work out - but serving over noodles was great (my DH has a pasta addiction so he was thrilled lol). We'll have this again :)

Pepperoni Penne

This was pretty good. I got a stick of pepperoni and cut it in quarters lengthwise first then sliced to get bigger chunks than just the thin precut slices (from other recipes using pepperoni we found that we prefer bigger chunks than the slices). I didn't have fresh parsley so I used 1tbsp dried and added 1tsp oregeno. My DH only liked it, but wasn't crazy about it - my son & I liked it well enough to want to try it again, we'll see.

Antipasto Pasta Salad

I love this salad!! I followed the recipe very closely, I did use whole wheat pasta but everything else the same, but I ended up adding more balsamic vinegar - I know many said it was too much but apparently we like a lot of balsamic vinegar because both DH & I felt it needed more. We'll have this again.

Vera Cruz Tomatoes

I was surprised at how much we all loved these. DH isn't a huge fan of tomatoes so I expected he'd be 'ok' with them but he couldn't stop commenting on how good they were. Even my son made a point to say he liked these a lot. I did use frozen spinach that I defrosted & squeezed out the liquid. Otherwise I made them according to the recipe, oh I did add garlic. Will definitely make these again!

Meat Pie (Tourtiere)

I loved this, my son liked it and DH thought it was just ok. My mother made something like this once in a while, and it was similar to how she made it. I thought the flavor was just great. I followed the recipe exactly, but I did microwave the potato to save time as another review had mentioned. I'll make this again, but probably not too often since DH isn't crazy about it :)

'Calabacitas Guisada' (Stewed Mexican Zucchini)

Excellent - we really enjoyed this more than we expected. Can't wait until friends give us more excess zucchini to make this again!! Only one change, I added 1tsp oregano - sooo good!! And so easy - perfect combo!!

Roasted Red Pepper Chicken

Excellent! a little challenging getting the roasted red peppers to stay in the chicken (I did use toothpicks, helped a little lol) but well worth the effort. I love the sour cream 'sauce', used some on my vegetables too yum! I didn't need as much bread crumbs, so maybe set up less (had it in a bowl and gently coated my chicken) and add more if needed. I blended the feta cheese with the sour cream & peppers so those in my family that claim they don't like it wouldn't decide before trying it that they didn't like it because of seeing the feta :) we all really liked it!

Zucchini Bread with Cinnamon Sugar Topping

This recipe is good, sweeter than most zucchini bread recipes though. I liked the topping. I made this recipe exactly as written but for some reason it fell apart a little when I took them out of the pans. We'll still eat it but I never had that happen with zucchini breads before. Not sure if it was the recipe or not. Would try with less sugar next time.

Pear Zucchini Bread

This recipe is pretty good. I never cooked with pears before. They didn't add as much flavor as I thought they would. I didn't make many changes - I added 1tsp cinnamon as many commented on and I used 1-1/2c of each flour. The texture of this bread was great though, I'm glad I tried it.

Cheddar Mashed Potatoes

These came out great - I followed the recipe and it did seem 'thick' but I had to see how they came out as written before deciding if I'd want to make any changes. The only thing I'd change would be to add more cheddar, that's it - these are really good and we all really liked it.

Jan's Pretzel Dogs

I love these!! We all did, DH a little less than me & the boys. I followed the recipe really closely - I did use 1-1/2c whole wheat flour and the rest was bread flour, that worked well. I didn't make 18 pretzel dogs though, just 10 - and half of them we used linguica dogs. I experimented with the rest of the dough and made 'pretzels' with it. I never boiled dough before baking and one review commented that they didn't know what the boiling in baking soda water did for them - it made a big difference. The dough not boiled tasted more like salty bread and the dough we boiled first came out like soft pretzels, was really good! I can't wait to make these again :)

Elegant Zucchini and Tomatoes

This was really good! I had a couple extra slices of bacon to use up so I just doubled the bacon - there was plenty of zucchini so the amount seemed right for how much we had. The only thing I'd do different next time is drain some of the liquid the vegetables release before adding the seasoning & tomatoes next time. There'll still be some liquid but not as much as we had - seemed to steam/ boil some of the squash because of it. DH cooked this for me while I prepared the rest of the meal and I didn't realize the liquid issue until everything else was added. The flavor was great though - great way to use up some zucchini!

Ham and Cheesy Potatoes

YUM this was so good!! I intended to follow the recipe very closely but I accidentally added 1tsp oregano (had it out to refill my container) and I also added a bag of frozen broccoli. That's the only changes I made. The potatoes did take much longer to cook for me even though I sliced them very thin before cutting them julienne and I covered the pan with foil but I still had to leave this in the oven for 30 more minutes. Even though I'm not a fan of velveeta I had some to use up, and with that I also used 1c shredded sharp cheddar. That along with the seasoning was just so tasty - we'll have this again!

Spinach Balls

LOVE these!! I followed the recipe exact and they're just delicious. Everyone liked them but my son & I really loved them and (DON'T TELL HIM) he hates stuffing, he hasn't had any of any kind in years - he's refused to eat any since he was little so needless to say I didn't tell him that these are made with stuffing mix lol and he said quote "the spinach balls were a lot better than I thought they would be!" I'm so happy about that - we'll definitely have these regularly :)

Turkey Ranch Wraps

These were just great!! We all really liked them, they're quick and easy too, always a hit with me! I followed recipe exactly although it's one that can easily be modified to different tastes but we happen to really like all the ingredients listed so I tried it the first time as written. I might like to try feta on mine next time, DH thinks bacon would go good on these. We'll have them again :)

Rice Mess

This came out really good - 5 stars because even my step son who doesn't care for rice ate this without much complaining lol. I followed the recipe closely. I made it go further by making more rice (3c water & 1-1/2c brown basmati) and I had some grape tomatoes to use up so I chopped them up and added them to the ground beef mixture and that's my only changes, they're minor - just modifying the quantities of items in the recipe (chopped tomatoes and tomato sauce similar enough) and that worked well for us. We'll have this again.

Cherry Pound Cake

This came out awesome - I love it!! I made an icing with the cherry juice and conf sugar and some almond extract, it was tasty but I made it too thin and it absorbed into the cake which is good too but it's not as nice looking as I imagined it would be lol but it'll get eaten, my son and his friend really like this cake too.
