Happy Shrimp

Delicious! I didn't change it except for making more 'sauce' as many suggested. I used 3 tomatoes, added 2/3c heavy cream and 1/2c wine. We loved this! I was nervous to add too much cayenne but next time I'll use a little more, and a little more garlic. But the flavor was good, just could use a little extra. We had it over whole wheat spaghetti - fantastic! Definitely making this regularly!!

Spinach Beef Bake

Came out great! I didn't vary from the recipe too much. I did pre-cook the rice, I used brown basmati and it takes longer normally anyway - and I doubled the rice to make sure to have leftovers. I used fresh baby bella mushrooms; I added some basil and a can of diced tomatoes. I baked it for only 30 min since everything was pre-cooked - the flavor was great but not overpowering in any way - we all really loved this.

Garlic Chicken Sausage and Summer Vegetable Saute

This was amazing! I feel guilty to review it though because I know it was posted by the makers of that brand sausage but I didn't use that, I actually used kielbasa because it's what I had. I never had polenta so I made my own with sundried tomatoes and garlic added - then I broiled it brushed with olive oil to be crisp. Everything else was per the recipe and the flavors were amazing. My son didn't care for the polenta but my fussy husband didn't mind it because the flavor of the sausage & veggie part was so delicious. Oh ya, I did use a zucchini but I also added a summer squash as well. And I put the rest of the sundried tomatoes in with the sausage & vegetables. Definitely making this again!!

Italian Cheese Loaves

I was disappointed with this, and I was so hopeful that a no-rise recipe would work out but I found this to be terribly blah. I added the 1tbsp of seasoning as one review recommended and I also added 1c each of both flavors of cheese but it had no taste and it was very dense which could have been my pans (stone pans) but because of the bland taste I won't even try to find a better way to bake this.

Ground Beef Lo Mein

Quick & delicious - just what I love! I made more than the recipe calls for to have leftovers and took some advise from other reviews. I used 1lb spaghetti and 1lb hamburger - we used whole wheat spaghetti. I did use one jar of gravy, but about 1/4c soy sauce. I browned onion & garlic with the hamburger. I added ginger & oyster sauce too along with the pepper and vegetables. This was perfect for needing a quick meal after a long work day - we'll definitely have this regularly!

Scrumptious Chicken Vegetable Stew

I really loved this - it seemed so healthy and hearty - but my husband and step-son didn't care for it. My husband isn't a fan of lentils - I even cooked them separate to keep them from getting hard but even with them perfectly soft he just didn't care for it. I didn't have fennel seed; I added diced summer squash & broccoli to use them up and I really did love it. Oh well.

Ham Tetrazzini

Fantastic! So quick and very yummy! The whole family really liked this. I did take advise of some reviews as well as making more servings than the recipe calls for. I used a whole package of whole wheat noodles. I used a half an onion and added garlic. I did used the can of cr of mushroom soup and 1/2 a can of water (so slightly more than 1/2c) a cup of shredded cheddar, about 1/2c white wine, and a 1lb ham steak; I did add the pimento and parsley too. Oh and I added a half bag of frozen broccoli. Not only was it delicious, it looked so terrific too. Maybe not a fancy meal but very good and most important to me was how quick it came together. Definitely having this regularly!

Greek Pasta Salad

I made this very close to the recipe, the only difference was that I left out the olives. Oh and I used olive oil instead of vegetable oil. I thought the flavor was a bit bland, I let it sit a while before tasting to let the flavors blend too. I did end up adding Italian dressing to spruce it up and with that I give it 4 stars.

Banana Butterscotch Bread

My son & I loved this, came out great. I swapped 1/2c of the flour with 1/2c whole wheat flour to make it a little healthier and it was just terrific! I loved making something different from the same old banana bread. The loaves weren't tall but they weren't "heavy" either. I did have to cook it 20min longer than the recipe states though.

Parmesan Pork Tenderloin

This was delicious. We followed the recipe closely. We found that it needed more oil, bread-crumbs, and parmesan than the recipe called for though (yet I used more than a pound of pork). We seldom fry anything but we wanted to try something different and we'll make this again. I used one zucchini and one summer squash with the onion and garlic, I often use one of each in recipes that call for either or. Thanks for the advise to press the pork between cutting boards Mallinda, that was a big help and made it so easy to flatten :)

Shrimp Asopao

Fantastic! I followed the recipe very closely - but I did take the advise from the reviews to use a couple of cans of diced tomato to make up some of the 7c of water. Also I used frozen broccoli (husband hates peas). I used brown basmati rice - love that! but it does take longer to cook. When it was nearly done I sampled it and it was a little bland so I added a couple of spoons of beef broth granules which added just what it needed. I will definitely be making this again, it was so good and a nice variety for cooking shrimp.

Hearty Mince

I really loved this! I made slight changes based on reviews; I used a can of diced tomatoes instead of tomato juice. I used 2c beef broth instead of water. I used 1tbsp worcestershire; 1/4c wine; added basil & oregano. Just about everything else the same as written - and I did top with Parmesan & bread crumbs. It was rather unique and delicious - thanks!!

Rita's Spinach Casserole

I made this a 2nd time last night (forgot to review after the first time) and it came out awesome. I modified it just a little - I browned onion & garlic with the ground beef. For seasoning I used 1tbsp Italian seasoning instead of the thyme. In addition to the sauce I added a can of diced tomato. I did use the sour cream. I used fresh spinach (matter of preference, shouldn't change the flavor) and I put that in with the beef & sauce before adding to the oven pan. I used a mix of mozzarella & cheddar to use up open packages of each. Used shells (can't find w.w.bow tie pasta). We loved it with these modifications, we found it dry & bland otherwise. Hope you like it :)

Spicy Sausage and Peppers Over Rice

YUM! We all loved this. I used kielbasa but this would be just as good with any type of sausage you prefer. I also used a can of diced tomato because it's all I had, and I didn't have any pimento (I thought I did when I chose this recipe) but I used everything else as how it's written. However because it was kielbasa and didn't need to brown as raw sausage needs to I started everything in the skillet at the same time as I started the rice. I used brown basmati so that takes a while to cook - and everything was so delicious and we will definitely be making this regularly!! Yum!

Greek Chicken Pasta

LOVED this!! My husband and son really liked it too which is good lol but I really loved it. The only thing I did different was not adding feta cheese only because I didn't have any and I'm sure that would have made it even better but my husband isn't a fan of feta. But I did everything else as written and it was just so good!! **update** I was able to get this started before DH got home and I added the feta without telling him - he liked it so much better (we all did) so I told him after and he laughed, so we'll have this with the feta from now on :)

Classic Whole Wheat Bread

This was pretty good. My husband liked it better than I did. I made them into rolls, I often prefer rolls to a loaf of bread. It rose great, but was just sort of plain. I took some advise from the reviews and swapped the flour, 2c whole wheat and 1c all purpose. I will make this again but maybe with molasses instead of white sugar.

Hot Dog Soup

I didn't expect this to be as good as it was but we really liked this. It's good to have variety. I sauted everything in olive oil instead of margarine. I used frozen mixed veggies instead of just green beans but that's a matter of preference and wouldn't change it drastically. I did take the advise of one review and added thyme & marjorum, as well as garlic which I usually add to everything, and some chopped celery in addition to the mixed veggies (carrots, cauliflower & broccoli). We'll definitely make this again.

Pork and Sea Shells with Summer Vegetables

We all loved this - I wish I could give it more stars! I - for once - followed the recipe exactly lol. My husband's only comment was that maybe another can of diced tomatoes would be the only change he'd make. It was so tasty though, and lots of good veggies for a nice well balanced meal. We used whole wheat shells too.

Wendy's Quick Pasta and Lentils

This was pretty good. I've been trying different lentil recipes because my husband doesn't care for them but because they're such a healthy food we've been hoping to find a recipe he won't mind as much. He loves pasta so this is a good option to try on occasion. The only thing I did different was to use fresh spinach. I tried some leftover cold with a sprinkle of italian dressing, that was really good.

BBQ Chili Pasta

This was great! I made more for leftovers by using 1lb pasta (whole wheat) and 1lb ground turkey. I left all else the same. As a result of making extra pasta it could have used more sauce yet it wasn't too dry. I want to use a can of diced tomatoes next time with the juice instead of the tomato sauce. I added 1tsp cumin but all else according to the recipe. I loved that it was quick and made plenty - my husband likes to take some leftovers with his lunch for variety, and he really enjoyed this very much, and the boys did too. We will definitely be making this regularly! **UPDATE** I made this last night and didn't realized I was out of regular canned corn, and I had no frozen corn either so I used a can of creamed corn, my DH REALLY loved it all the more making it that way - that's the only thing I did different too, well still adding my can of diced tomatoes as I had mentioned in my first review but that's how we have it all the time now.
