Slow Cooker Italian Beef for Sandwiches

Reviewed: Oct. 25, 2010
So delicious! Everyone loved this, and it's so easy! I originally was going to slow cook a roast with another recipe, and already planned to add diced pepper & onion so I still added them to this and it was great even though they're not necessary, the flavor was just so great! I was tempted to use another italian dressing package as many suggested but with so many other seasonings I decided to try it with only the one and it was plenty. We will definitely have this regularly!

Unstuffed Cabbage

Reviewed: Oct. 18, 2010
We loved this! I took some advise from other reviews and used tomato sauce instead of tomato soup. I sauteed the cabbage in a little butter first, and mixed everything together rather than layering it. I used 1lb ground beef too. I used brown basmati which cooks longer, and added 2c beef broth rather than just 1c water - because of not using instant rice and it wasn't too much liquid. I baked it 1 hour then topped with the cheese, came out excellent. DH really loved it, will have this again!

These were really good, the flavor wasn't as intense as I thought it would be but still very good, we all enjoyed these.

Sundried Tomato Pasta with Shrimp

Reviewed: Oct. 12, 2010
This was fantastic!! My husband isn't a fan of angel hair pasta so we had it with whole wheat shells instead, but the flavor was just terrific! My husband rates his differently so I can remind him how much he liked or didn't like a recipe the next time I plan to make it - he'll rate it from 1-10, most average recipes he'll give a 7 or 7.5 etc, few get 8 or higher, he likes to leave those ratings for the most spectacular recipes. He rated this 8.5 right off the bat, he loved it very much. Thank you Brook for sharing!

Spicy Beanless Chili

Reviewed: Oct. 8, 2010
Awesome! I modified it to how it would work best for us though. I doubled the recipe, but I kept the chili powder to 2tbsp and eliminated the cayenne pepper; step-son won't eat anything too heavily seasoned. I used 1 lb hamb, 1 whole pepper and 1/2 an onion. I used a 15oz can of sauce and a can of diced tomato, and I only added about 1/4c water and simmered it 15min and served over pasta and topped with shredded sharp cheddar. Everyone loved it, we will definitely have this regularly!!

Caramel Apple Pork Chops

Reviewed: Oct. 6, 2010
These were great. Followed the recipe closely. Did add garlic & onions, cooked them in half the butter before adding the seasoning and apples and the rest of the butter. Also added 1/2c chicken broth to have more 'sauce'. Forgot to add the pecans though, everyone was eager for supper it smelled so wonderful!

Sweet Potato Rolls

Reviewed: Oct. 5, 2010
Oh my - these were phenominal! My favorite rolls so far!! I didn't make it exact, but I have no doubts that it's fine as written. I had butternut squash to use up, and where many said they used pumpkin I felt the texture was similar enough and we really loved these! I doubled the recipe, and used 3c all purpose & 3-1/2c whole wheat. They rose like no other dough I've made so far! I am going to make these often, I saved some of the butternut squash in the freezer just in case this came out good - it really did! :)

Barley Turkey Soup

Reviewed: Oct. 5, 2010
YUM! I scaled back the quantities but followed the recipe closely. The main difference was I used ground turkey (all I had) but the seasoning was terrific and we all really liked this. Will gladly use leftover turkey another time when I have some, I'm sure that would be even better!

Baked Teriyaki Chicken

Reviewed: Oct. 5, 2010
Delicious! I followed the recipe for the ingredients (except I used half the sugar), but baked it covered with the sauce poured over, and turned the chicken half way through. I didn't make extra sauce as many suggested though, and I think that was the right call, there was plenty. I also foil lined the pan, and clean up wasn't bad at all. I served with baked potatoes and butternut squash - yum!

Spinach Lentil Soup

Reviewed: Oct. 5, 2010
I loved this! But my husband didn't quite love it, but he's not a fan of lentils - I've been searching for a recipe he'd be ok with so we can have them more often - and he did like this the best so far for a lentil recipe. I used 1/2 the lentils and used more rice (brown basmati) but other than that I followed the recipe and it really is delicious.

Sausage and Zucchini Lasagna

Reviewed: Aug. 26, 2010
This was excellent! Will definitely make this again! I added onion and garlic (because I nearly always do) and I had a bunch of cherry tomatoes that really needed to be used up so I added them quartered, but they didn't alter the taste much. I used sweet italian sausage, removed the casings. It really tasted great, we all loved it. Thanks jennkl!

Best Chicken Salad Ever I

Reviewed: Aug. 22, 2010
Love it! I used craisins instead of raisins, and creamy caesar - both because that's what I had. Followed the recipe otherwise and the flavor is great. I was hoping it would stay together better to make sandwiches to bring to work so I might try adding some light mayo for work sandwiches, but I love that it's unique, I get so bored with lunches sometimes so I love having something different to make from time to time.
