I’ve been daydreaming and planning on sharing this story for a while now.  If it’s too gloomy I apologize; however, I think it will be a sweet way to share and celebrate a special time with my mother.   My mother & I were very close friends.  I miss her.  She found peace earlier… MORE

About this Cook
There's not much to say. I'm happily married, and I have two grown sons, one still living with me - my husband says becauce of my home-cooking :) I work too much, usually 2 jobs Monday through Friday so most nights have to be quick meals - but I do the best I can in spite of that.
My favorite things to cook
In general I like simply making delicious & healthy meals. I love slow cooking but I seldom have the time in the mornings to get anything set up.
My favorite family cooking traditions
To not be too fussy in measuring (except for the first time trying a new recipe!) My mom seldom measured, and aside from baking I don't think most things have to be exact - even my best assistant (my husband) is getting good at not having to measure everything lol
My cooking triumphs
My youngest son loves fresh homemade cookies - everyone loves my brownies - and there's so many meals that everyone loves, probably my lasagne is everyone's favorite
My cooking tragedies
ha ha when I catch the stove on fire (happened a couple of times on me already - oops!!)

Zesty Slow Cooker Chicken Barbecue
We loved this recipe, it was a hit with everyone! And it's so easy & convenient to have supper cooking when the football game is on in the afternoon :) The only thing I did differently was to add garlic. I might like to add a half an onion, chopped, next time. We will definitely have this again!

Pecan Pie Bars I
I love these!! So delicious and pretty easy. I made a half batch as Soprano39 had done and that was the perfect amount. I did cook it longer too as many had commented about, and I'm glad I did - they weren't runny at all. I made this because my son in the air force requested them, and he & I are the only ones in the house that like pecan pie, so I was able to get most of these sent off to him leaving me with a few to enjoy too. I'll definitely make these again!

How to Make Perfect Polenta
This was really good and quite easy. It cooked up a lot quicker for me, I have a flat top stove so I probably needed to have it set on a lower setting, I'll remember that next time. Still it came out so smooth and tasty! And easier than I imagined, I've never even had polenta until recently, so I'm really glad to have a new option to serve with meals. I also watched the video so that made me feel a lot more confident to try this.
