Make-Ahead Vegetarian Moroccan Stew

I followed this recipe 100%. It is awesome. Don't change a thing. Great as leftovers as well. I did cook it on low for 3 hours and added potatoes in more towards the end to keep them a bit firm and not mushy, but I love the sweet potatoes mushy. Topped it with cubed avocado once and that's good too. Makes enough for 2 dinners for a family of 4 (2 kids). Complex flavors from the spices make it very tasty and interesting.

Slow Cooker Chicken Marrakesh

I'm a big fan of Moroccan foods and this one is easy and delicious. I use Tyson grilled (frozen) chicken strips for convenience and saves $ too. I serve with coconut basmati rice and it is so good that I can eat it until I am immobile. Don't change a thing, everything is perfect just as stated.

Mini Meatloaves

My PICKY kids LOVE these! I also used a muffin pan to make meatball cupcakes (the kids loved the name). I followed the recipe to a T but added garlic powder and onion powder. You couldn't taste the oats but they add a great texture, keep the moisture in and hold it all together. The cheese inside is a great addition too. This is now a regular recipe in our house. Did I mention... SUPER EASY to make! (my kids loved that this had no onions in it too. I didn't miss them either).

Fisherman's Quick Fish

Mine turned out soupy. I didn't put the marinade in either, I drained it first. The taste was just ok to me and my husband didn't like it and the kids didn't like the way it looked so they wouldn't even try it. Oh well.

Easy Chicken Satay

Didn't change a thing. One of the best dishes I've ever had. The flavors were complex and really explode. This is a MUST try. You won't be disappointed. It's also very easy.

Grilled Lemon Herb Pork Chops

We followed the recipe to a "T" but the chops came out dry dry dry. We marinated them overnight too. Not sure what went wrong. We did not overcook or substitute a thing. I think this type of chop should be pan seared before cooking, it can dry easily. The sauce gave little flavor to the chops too.

Cake with Buttercream Decorating Frosting

Tastes good, like powdered sugar frosting, but like another reviewer said, it was either too cold to spread or too warm that it got runny. After my crumb coat, and refrigerate the cake, I took out the frosting and gave it a stir to soften it up. It gets pretty hard in the fridge. I took the cake out, began frosting it and in a matter of minutes, like 3 or 4 minutes, the frosting got a greasy sheen to it and was sliding (melting) off the cake! It was devistating. I tried to salvage it as best I could with much help from the pros but this is good for decorating only, IMHO.

Blueberry Buckle

I made it just the way the recipe says. No changes although I did use frozen blueberries. It turned out very good. HOWEVER: there is no way this was cooked in 25 minutes at 375. No possible way. I think the author needs to correct this. It takes at least 45 minutes in a 8x8 pan. It is so thick and dense and moist... I kept checking mine every 5-7 minutes for 3 or 4 times past 25 minutes.

Lemon-Orange Orange Roughy

It was good. Not great. It was easy, convenient and cheap. Cub foods has frozen wild caught Orange Roughy from Canada, nice. I can't give it 5 stars because it's not a restaurant quality recipe. It's adequate, not complex or mouthwatering, but it's good. I'd make it again because it's healthy and convenient and my UBER-picky 4 year old loved it.

Refreshing Summer Orzo Salad

Don't change a thing! Unless you add some cherry tomatoes. Made this with a lemon marinated lamb chop and roasted beets. Very filling, I cut the recipe in half and it made enough for 6 servings!

Roasted Beets and Sauteed Beet Greens

The beets were awesome & simple, just like my mom used to make. The greens I won't do again. They were soft but bitter. Not that tasty. I might cut them smaller and add to an orzo for the nutrients. The beets I cut in half before baking but they still were al-dente, not soft enough, after 1 hour. They were hard to peel so we just ate the peels, we didn't even notice they were still on. The beets are just so flavorful this way.

Chicken Piccata II

Just like Buca's! I pounded my chicken breasts first, then had to double the flour mixture to cover the larger chicken pieces. The egg/lemon mix does not need to be doubled. After browning, I removed them & added 1/3 cup white wine to deglaze pan. I doubled the water/lemon juice/chicken boullion sauce (I also added a tspn of cornstarch to this sauce to thicken just a tad, otherwise it's too thin. I've made this twice so far.) ADD CAPERS 5 MINUTES BEFORE SERVING! YOU MUST ADD CAPERS! YUM!

Cajun Chicken Pasta

Finally! A true restaurant quality dish. I mean it. It will surprise you. I didn't have the half & half or whatever it called for, so instead I used 1 1/2 cup 1% milk heated on the stove top with 1/2 stick of butter. Then after adding it to the chicken (which I coated with a little flour mixed with the cajun season) I added some water mixed with a little corn starch while boiling. It thickened right up! I used orange bell peppers instead of green. I trippled the green onion to 3. I used 3 chicken breasts instead of 2. I also added minced garlic with the veggies as well. I am so happy with this recipe & it was quite easy to do.

Chicken, Garlic, and Sundried Tomato Pasta

This was just ok. I used canned chicken from Sam's which was really tender and good. The sauce was bland so I added white wine. Onion would be good too. This is a quick meal that will satisfy your family though.

This is very good and healthy! I served it on brown basmati rice. I also added more curry. It is hard to believe that one serving is 8 points on WEIGHT WATCHERS!!! OUCH!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

Fresh ingredients make this A+ I love how the flavors of both sauces compliment each other AND the fish! A great & easy dish, yes it's easy even though it looks like alot of work, to impress your guests with. I used a mini food processor $30 from JCPenney. Worked awesome! Will definately make again!

Baked Chicken Nuggets

An excellent dish for toddlers! My 2 year old NEVER eats chicken or fast food chicken nuggets so I had my doubts. I can't believe she ate 8 pieces for lunch! With ketchup, but still! I don't like frozen chicken with preservatives so I made extra to freeze for later lunches. I also used egg instead of butter and garlic herb bread crumbs. This is a great dish to freeze and much healthier than grocery or fast food nuggets. DELICIOUS!
