About this Cook
I am a stay-at-home-mom of 2 little girls. I love to cook fresh meals everyday for my family. I avoid frozen prepared foods and canned/boxed food. I try to use organic and all natural when I can afford it. I am from Minnesota and also have been attempting a garden lately. I pretend to know how to cook at an intermediate level but I fail many times. I try and try until I can perfect good dishes and I search allrecipes first and usually last. I have so much luck on this site I had to get a membership!
My favorite things to cook
Everything. Ethnic foods. Steak. DESSERTS! Candy and cakes. Pastas. Bread, pizza, soup, one-dish casseroles, crock pot meals, easy to freeze meals, healthy dishes. I love Asian foods, Indian food, Mexican, Phillipine foods, French and Irish food. I try it all. I love love love fresh quality seasonings and herbs. Penzeys spices is my favorite place to buy them.
My favorite family cooking traditions
Dinner. Home cooked, every night. We eat together all the time. When I get a bigger kitchen we'll cook together, too.
My cooking triumphs
I spent 2 days making Julia Child's Boef Bourgonion for my husband on our anniversary. It turned out nice. I also made the worlds best buttercream and coconut cake with a pineapple filling. Yummy doesn't say enough. Emeril's 3 part fish tacos are worth bragging about when you get through the shopping, prepping and cooking and assembling. I also make an amazing Irish Shepherd's Pie and it's all about the ground lamb and using the *right* seasonings.
My cooking tragedies
Overcooking salmon happens often with me. I've made many attempts at buttercreams that failed until I found the ONE that hits every mark. My children would tell you I fail 3 times a week but they won't eat much unless they are starving. I used to attempt white sauces without any knowledge and would burn them or make them too thick and corn starchy but I've overcome that and become wiser.

Make-Ahead Vegetarian Moroccan Stew
I followed this recipe 100%. It is awesome. Don't change a thing. Great as leftovers as well. I did cook it on low for 3 hours and added potatoes in more towards the end to keep them a bit firm and not mushy, but I love the sweet potatoes mushy. Topped it with cubed avocado once and that's good too. Makes enough for 2 dinners for a family of 4 (2 kids). Complex flavors from the spices make it very tasty and interesting.

Slow Cooker Chicken Marrakesh
I'm a big fan of Moroccan foods and this one is easy and delicious. I use Tyson grilled (frozen) chicken strips for convenience and saves $ too. I serve with coconut basmati rice and it is so good that I can eat it until I am immobile. Don't change a thing, everything is perfect just as stated.

Mini Meatloaves
My PICKY kids LOVE these! I also used a muffin pan to make meatball cupcakes (the kids loved the name). I followed the recipe to a T but added garlic powder and onion powder. You couldn't taste the oats but they add a great texture, keep the moisture in and hold it all together. The cheese inside is a great addition too. This is now a regular recipe in our house. Did I mention... SUPER EASY to make! (my kids loved that this had no onions in it too. I didn't miss them either).
