Gluten Free Elbows with Mixed Mushrooms and Italian Sausage Soup

This was NOT a bland soup if you followed the recipe. Earthy mushrooms, garlicky, I used Hot Italian sausage...stick to your ribs meal. Would make again!

Three Cheese Tortellini with Chicken Broth

I took the hint of the reviews about the blandness of this soup recipe and instead of using parsley, I subbed basil. Husband LOVED it. Very easy to make for a quick lunch or filling easy dinner.

Pretty much a spice cake with apples. can't go wrong with that. It is super moist, almost too moist. Don't worry about it drying out, that is for sure.

Cheesy Beef Lasagna

Lasagna is always a labor of love. Making the sauce is task enough but I love how the whole boiling of noodles thing is gone by preparing this with dry noodles. I also made this the day before to ensure the noodles soaked up the sauce PLUS all the flavors marrying. You know how leftovers always taste better the day after? Well making this the day before helps with that HOWEVER keep in mind, if you heat this up stone cold it will take 1 hour and 1/2 instead of 45 minutes when it still warm from preparing it.

Pork Carnitas with Cilantro Tomatillo Sauce

I followed the spices in recipe exactly however I would cut off some of the fat from the shoulder after I cubed it. A lot of fat rendered from it. When it was done I did stir in some more peppers and onions. We want more veggies in our life. Be sure to heat up the corn tortillas in the microwave. It really makes a difference. I'd make this again.

Empanadas (Beef Turnovers)

I tried this recipe basically to give the empanada dough a try. I did not add alot of the seasoning because it was just too much salt. I used the Adobo only and I BAKED them instead of submerging them in all that oil. They were crispy with just a swipe of olive oil and were awesome.

Cheesy Chicken and Yellow Rice

My husband is very picky about rice and I was hoping that the mixture of cheese, adobo seasoning and tomato would do it. Score! he loved it. We used our tomatoes fresh from the garden and it really jazzed up the yellow rice.

I am glad the recipe only asked for ONE chile pepper! It gave it plenty of kick. Honestly did not bother with the mayo hoping the burger was flavorful enough without it and it was. Plenty moist without it.

Passover Chocolate Sponge Cake

I am eating Paleo so I look for flourless things as well no refined sugars. I used unsweetened chocolate and 3/4 cup of honey instead of sugar. I baked it for the hour but I think that was too long for it was started to burn on the bottom. Although it says cook for 1 hour or until cake springs back....I didn't think I needed to check it 15 minutes before. So it was overcooked and a bit dry. According the review before mine...they had problems using a Bundt Pan. For me, it fell right out. Considering this cake had very little fat....just no stick spray on my Bundt pan worked great. I'd like to try this recipe again and see how fares with less cooking time.

Family Secret Meatballs and Sauce

LOVE LOVE LOVE....aptly named. Will keep this recipe for future use. Very tender meatballs. Sauce is more a BBQ type...I wouldn't put these particular sauce on spaghetti as one of the pix shows. I'd use the meatball recipe part and cook with a more Italian type of sauce. Killer recipe!
