Chicken with Chipotle

I really liked the flavor of this chicken. I didn't like it so much by itself, but I cut it into thin strips and served it inside of a corn tortilla and it was great. I also added black refried beans, mexican rotelle tomatoes, and mexi corn (all simmered in one pot), mexican rice, lettuce, shredded mexican cheese blend, and sour cream into the tortilla. Regarding the sauce, I thought the milk made the sauce a bit too thin. Maybe next time I will try cream instead. I also used 4 small chipotle peppers instead of 2 and thought that the amount of chicken boullion made the sauce a bit too salty so I didn't added more salt to the simmering sauce. Will make again, thanks!

Four Cheese Margherita Pizza

This was soooo good. I added Italian sausage meatballs. Yummy! I also used the leftover tomato marinade as a dipping sauce for Italian bread.

Boilermaker Tailgate Chili

I am so excited about this chili! The first day it was a medium heat and seemed to be mild the next day. I cooked this in a 7 quart slow cooker with no room to spare on high for 4 hours. I am only cooking for two people, but I made a full batch to freeze the leftovers. I didn't overly alter the recipe as I usually do based on the amazing reviews. I did add 1/4 c extra premium light beer, 1 small can chopped green chilies (couldn’t find green chilies in the produce department, but saved work on chopping), and doubled up on the Worcestershire and garlic. I used an amazing chopper so this recipe was extremely easy for me (I hate to chop). Other than that, it did not take long at all since you are simply measuring 1t or 1T of several spices (all of which I had on hand) and dumping them, along with canned ingredients, into a pot.

California Italian Wedding Soup

Wow this was really great. I was able to find ground italian sausage near the store prepared meats and used that instead of ground beef. formed small meatballs and baked until brown in the oven so that they do not come out gray as some other users suggested. I also found and used acini de pepe instead of orzo as other users suggested and spinach instead of escarole. Next time I may use 6 cans of chicken broth (I used 33% less sodium broth) instead of 4. That way I will have more broth to noodles and it will also cut the lemon flavor just a little bit. I also added two chopped green onions, a teaspoon of ground pepper, a teaspoon of chopped basil, and about 1/4 c of matchstick carrots at the beginning of the boiling process. This was really great. I couldn't stop eating it!!!

Slow-Cooker Barbecue Ribs

ill come back and rate this tomorrow since I haven't tried the ribs just yet. its the night before and i just got done preparing the sauce. i halved the recipe since i am making this for two people and the ketchup taste was a bit overpowering. seemed like it should go on a burger instead of ribs. i added a teaspoon more of vinegar and worcestershire sauce and added a 1/2 t of molasses. i also went a bit heavy on the salt and pepper. think im gonna love it.

Brooklyn Girl's Penne Arrabiata

this was really good. i think the addition of the red pepper flakes made this more than just a chicken parmesan pasta dish. i only used 3/4 t red pepper flakes and used 2 large chicken breast thin sliced. i did not cut them smaller before adding them to the sauce. i also sliced two large zucchini and added it to the sauce and simmered it for the full time. the zucchini soaked up the flavors so well. i also added a sprinkle of mozerella cheese onto the prepared bowl of pasta. so yummy. next time i may add parmesan cheese in with the bread crumb mixture. thanks!

Key Lime Cake II

im trying to make little mini bundt cakes with this recipe using a mini bundt cake pan. I overcooked them slightly at 20 minutes. I also added 7 drops of green food coloring. I may only use 5 next time. I also added a drop to the icing, but it ended up st. patrick's green, haha. I wish I knew how to make the icing stick to the top rather than soak in. I tried thicker icing and letting the cakes cool a bit this time, but it still set in. I'm going to try this a few times more till I get it right. Mini bundt cakes are so cute, especially key lime.

Chicken Parmigiana

i gave this five stars because it was super easy to make. i think four stars on the taste. not because it wasn't delicious, but because i am not a big chicken parmigiana kinda girl. therefore, five stars overall. i covered the chicken in garlic powder and italian seasonings after coating with the bread crumbs. i also used italian bread crumbs and half mozzarella and half parmesan cheeses. will definitely make this again. thanks!

Lasagna Alfredo Roll Ups

This recipe was great, but I had to make some alterations. In a skillet, I browned Italian sausage mixed with the onions and a tablespoon of garlic. I then added this to the spinach/ricotta mixture. Without the meat, the dish was way to creamy/heavy. I also cut the Alfredo sauce in half (I used 10 oz only and did not pour any over the roll-ups). Otherwise, this recipe was terrific and not very difficult at all. Update: I made my own alfredo using the "Quick and Easy Alfredo Sauce" recipe from this site!! so good and easy!

Sour Cream Chicken Enchiladas

This was really good. I couldnt find cans of salsa, so I just improvised. I used 1/2 of a jar of salsa and then half of a jar of white cheese dip. I also used pepper-jack cheese on top instead of the Cheddar. The prep time is a little off because it doesn't include the time it takes to cook and shred the chicken (it is simply listed in the ingredients, instead of the instructions). Will make again. Thanks.

Stuffed Green Peppers I

wow, i'd give this 6 stars if i could. i made these because my boyfriend likes stuffed peppers, but we both loved them!! i made a few modifications. instead of the tomato soup and whole peeled tomatoes, i just added 2 tablespoons of garlic, 3 teaspoons of italian seasoning, two 8oz cans of tomato sauce, and one 14.5oz can of diced tomatoes (with garlic, basil, and oregano) into the simmering meat mixture. i also used lean ground beef and a parmesan/mozerella cheese mix vs. the cheddar. its really good if you put the extra stuffing mix in the baking dish around the peppers. in the last 10 minutes of cooking, i topped each pepper with mozerella and parmesan cheeses and broiled until browned. so yummy!!

White Chocolate Raspberry Cheesecake

my friends loved this recipe so i will definitely make this again and again. it wasn't very difficult either. i created a double broiler by floating a small pot inside of a medium sized pot that contained simmering water. i also added a water bath in the oven to keep the cake from cracking and topped with fresh raspberries when cooled. loved this recipe... thanks for sharing!!!

Classy Chicken

this was pretty good! i doubled up on all ingredients, except the chicken so that i could pour the sauce over vermicelli pasta. i think i could have done without the Dijon mustard. i also used Italian bread crumbs mixed with Parmesan cheese instead of flour.

Chocolate Lovers' Favorite Cake

i will never ever ever ever need to search for, or make, another chocolate cake recipe... ever!!! this one is so delicious and so moist. it almost tastes like those mousey flourless cakes. it is amazing. the chocolate chips melt nicely into the batter. its delicious. i cant wait to make this one again. my friends loved it and requested it for their birthdays :) thanks so much for the recipe!!!

Banana Pudding IV

this was so amazing! i'm not even a big fan of banana pudding, but my pregnant friend at work is, hhaha so i made it for her. you cannot go wrong with cream cheese, sweetened condensed milk, and vanilla. even i loved it. our friends went back for thirds. i made this in a trifle bowl and loaded up on the banana and wafer layers.

Pork Tenderloin with Dijon Marsala Sauce

Gosh I was really excited about this recipe and it just didnt work out for me. I think I may have a different opinion if the pork was not overdone. Maybe the recipe should call for thick cut pork. The sauce was really good. The pork was too "mustardy", but as I said, maybe that would have been ok if the pork was not overcooked.
