Pumpkin Crunch Cake

This came out really great, even though I forgot to drizzle the butter until 20 min. before the cake was done. I also only used 2/3 c. butter, and also shorted the sugar. To top this, we melted half a can of cream cheese frosting and drizzled it on top of the slightly cooled cake (as one reviewer suggested -- thanks!). We also didn't use nuts because some people are picky. So, basically, you can forget stuff and short ingredients and it's still delicious!

Easy Spinach Lasagna with White Sauce

Di's Delicious Deluxe Deviled Eggs

My daughter made these, and they're incredible exactly as written. I've since adopted this recipe as "mine." :-) my family is not usually keen on raw onions or celery in recipes, but the flavors and textures are just right. Be sure to chop veggies very fine, with a hand chopper if possible.

Home-Style Scalloped Potatoes

So good, and not complicated to make. The only modification I made was to grate a half of a brick of yellow/white cheddar and mix it in after the sauce was removed from the heat. It would have been delicious without it, but my family has a fixation with cheese. Perfection!

Chicken Breasts Supreme

This recipe is not only delicious (exactly as is -- no modifications, other than a smidge less Worcestershire) -- it resolved a major dinner dilemma for me. Our house is half vegetarians and half carnivores, and this recipe happens to be one that is still absolutely perfect when you substitute Quorn chikn breasts. So I make a batch of each, and everyone is happy. The veg version is one of my daughter's favorite meals.

Hearty Vegetable Lasagna

I made this according to directions, but with the addition of spinach as other reviewers mentioned. My family liked that this veggie lasagna recipe didn't seem overly "vegetable-y", with chunky, layered veggies. Sauteing and incorporating the vegetables as part of the sauce made it great. I wasn't sure about the green peppers, but they make for a really rich flavor without adding chunkiness.

Mean Woman Pasta

Oh. My. Gosh. Simply wonderful. Made this exactly according to directions, and ate it right away. With the pepprocinis it sounded like it might be too spicy, but the flavors are absolutely perfect. I can't wait to see how it tastes tomorrow after chilling overnight. Served this with an alfredo sauce option for family members who aren't veggie fans, and they liked mixing the two together. This will be added to my regular dinner repertoire!

I modified the original posted recipe to remove garlic (just didn't seem right in chili), as well as the jalapenos to meet the needs of a finicky kid. I took one reviewer's suggestion and crumbled up veggie burgers (Morningstar's grillers prime) instead of using the packaged crumbles. Brilliant idea -- finally succeeded in putting one over on my carnivore husband!

Quick and Easy Brownies

These were good, but cake-like and had a delicate milk chocolate flavor (my family prefers chewy, fudgy brownies). But if you prefer the cakey variety, these are very good and fast/easy to make.

The Best Vegetarian Chili in the World

Quick and Easy Brownies

These were definitely fast and easy to make, using ingredients I had onhand. (I also reduced the flour to 1 cup, as other reviewers suggested.) The brownies came out cakelike, with a very mild chocolate flavor. We prefer dense, chewy brownies with a fudgy flavor. This just wasn't the brownie for us, but it would be great if you prefer a cake-like, subtly flavored brownie.

Glorified Hash Browns

I doubled the recipe and used O'Brien potatoes for a little extra flavor/texture. The first time I prepared as written, and the second time I used, for the doubled recipe, 8 oz of onion/chive cream cheese and 8 oz of plain lowfat cream cheese. Personally I liked it better using half plain cream cheese -- more of a delicate flavor -- but people ate up both versions. Great potluck dish -- no leftovers!

Best Bruschetta Ever

Best bruschetta I've had. Like others, I added some diced onion. I brushed the tops of French bread slices with olive oil, broiled on low until just toasted, then added topping with shredded mozarella and broiled on low 'til melty. First batch disappeared before I could try it -- had to make more!

Richard's Chicken Breasts

I didn't change a thing, other than using what I had on hand -- regular mushrooms and shiraz wine. These were a great dinner in a pinch that served like a special occasion meal. My husband -- not a fan of white meat chicken -- said these were awesome. A keeper!

Tofu and Cheese Stuffed Shells

Wow -- this blew me away. The flavor was even better than traditional cheese-stuffed shells, but no one would ever guess that there's tofu (or shredded veggies) in these! I used zucchini squash, summer squash and carrot for the veggies, doubled the filling, and doctored up prepared spaghetti sauce. My son, who avoids anything with vegetables or texture, ate this up. Thanks for a phenomenal vegetarian main dish!

Peach Cobbler Dump Cake I

Delicious and perfect, exactly as written. I used the method of slicing off thin squares of butter and placing them all over the face of the crumb topping before baking ... it really didn't take long. So easy and excellent!
