About this Cook
I'm a wife and mother of two kids -- an elementary school age boy and a tween girl -- as well as a sweet, goofy black lab mix. My husband and I are more and more interested in eating healthfully ... which is sometimes counteracted by our daughter, who loves to bake!
My favorite things to cook
Creations with fresh veggies, fish, spicy stuff, low-fat marinated chicken. Simple, good food. On the other end of the spectrum, some occasional naughty, yummy things, too!
My favorite family cooking traditions
Using bay leaf in sauces. When I was growing up, the one who found it in their food was the "winner". Can't recall the prize... probably a kiss from mom. :-)
My cooking triumphs
When I was about 14, I made Baked Alaska (my dad cut the board for me). Since I've found Allrecipes, though, my skills are improving vastly -- and all of my recent triumphs have been from here!!
My cooking tragedies
When I was about 5, I made appetizers for guests using toast, pickle, and a buillon cube for garnish. Cute, but not edible. As a teen, I created a frosting with melted marshmallows that, once set, could only be served with a hammer and chisel. And finally, in college, I tried to impress a boyfriend with homemade stir fry and improvised by adding A1 sauce. Eccch. No amount of doctoring could save that dish, so after a couple of polite bites, we ordered pizza.

Easy Spinach Lasagna with White Sauce
Delicious. I added an additional layer of noodles. I used pretty generic Alfredo sauce -- still good.

Di's Delicious Deluxe Deviled Eggs
My daughter made these, and they're incredible exactly as written. I've since adopted this recipe as "mine." :-) my family is not usually keen on raw onions or celery in recipes, but the flavors and textures are just right. Be sure to chop veggies very fine, with a hand chopper if possible.

Easy Pleasy Mac N Cheesy - US Navy Style
Perfection. One warning, though-- if you make this for a potluck, make a double batch and keep one at home or else you won't get to taste it.
