Eagles Tailgating Burgers

Did not change a thing. These are some of the best burgers ever. Perfect for the grill. UPDATE: We've made these a number of times now, so we don't always have all the ingredients on hand. You can substitute italian style bread crumbs for the garlic and herb, any type of full bodied beer will do (we used Michelob lager, beer just gives it more moisture). You can use parmesan instead of romano and you can use 1/2 to 1 Tbsp. of dried basil vs. fresh or just leave it out depending on your tastes. After mixing everything together and making the patties we always leave them in the fridge for a half hour to let all the ingredients time to settle before grilling.

Japanese Potsticker Dip

This stuff is sooo good! I made this the other night to go with steamed dumplings we ordered and unfortunately we didn't have enough sauce. For some reason one small cup for me just doesn't cut it. I used low sodium soy sauce and subbed sesame oil for the chili oil - I also added some finely chopped green onions. If you want to make it a bit sweeter add just the tiniest bit of brown sugar. You can change it up with ginger as well. Just play with it to suit your tastes.

Cracked Sugar Cookies I

Wow! There aren't enough stars on here for this cookie. This has to be the most perfect sugar cookie I have ever come across. I followed the recipe exactly and got excellent results. They come out picture perfect, almost too good looking to eat but absolutely irresistable. I don't think any bakery could compare.

Mexican Cucumber Salad

Refreshing, light, and delicious, that is if you use fresh ingredients... I opted to use some leftover grilled corn, cherry tomatoes that I cut in half and fresh cilantro vs. dried. I also upped the amount of garlic and cut the abount of red pepper flakes in half. All it need was a little fresh lime juice and overall, it was very tasty.

Red, White, and Blueberry Fruit Salad

Simple, delicious, and with the July 4th holiday just around the corner this would be a great pound cake or short cake topper, not to mention vanilla ice cream! I cut the recipe in half and used Splenda instead of sugar. Great after dinner treat!

Chocolate Butter-Creme Frosting

Oh so good, and oh so chocolately! I doubled this and used Ghiardelli chocolate sqares. Very easy to work with and so good it was hard not to eat this before it got on the cake! I used it to frost and fill "Four Egg Yellow Cake" from this site.

Mom's Gourmet Grilled Cheese Sandwich

OH MY is this ever good! I didn't have sourdough bread (which is my favorite) so I used thick sliced italian bread. I softened the butter and added the parmesan to it along with a bit of garlic and oregano (kinda like a garlic bread paste). I actually made two of these they were so good. The second one with tomato in between sprinkled with a bit of salt and cracked black pepper. These would be great with tomato soup!

Cathy's Banana Bread

Excellent recipe for classic banana bread! It's definitely moist and delicious - which is what you'd expect from banana bread. I cut the sugar back to one cup and used half white and half brown. I also subbed fat free greek yogurt for the sour cream and added 1 tsp. of cinnamon. I baked it in a 9x5 glass baking dish at 350 for 50 minutes and topped it with a bit of turbinado sugar for some a little added "crunch". Perfect served warm with butter!

Creamy Fruit Dip

So simple and so delicious - especially in the summer! I took this to a neighbor's house and the kids loved it (so did the adults)! I skewered pineapple, strawberries, cantaloupe, red grapes and melon together on wooden skewers. It makes a great presentation without a lot of work. If you want to add a little flavor - add some flavored liquer to it or other extracts such as mint, orange, banana or coconut.

Baked Beans III

Wow! So easy and yet so good - ya gotta love it when a few simple ingredients come together for something so tasty! This definitely is a favorite at every BBQ meal and this recipe has a wonderful flavor probably due in part to bacon (which makes just about anything taste better)! Other than adding a bit of molasses (something my Grandma Helen taught me) I wouldn't change a thing. This is a great way to take a regular 'ol can of baked beans and turn them into something special without a lot of effort!

Rock's T-Bone Steaks

This steak rub Rocks! I cut the recipe in half for two good sized T-bones and it was perfect. I did use half the amont of salt though. It had just the right amount of spice and we melted a little butter over top of them when they came off the grill. I don't think any steakhouse could have compared. This is a definite keeper - these went great with grilled onions and Leslie's Saltly Grilled Potatoes from this site. Thanks Rocky.

Spicy Chipotle Turkey Wraps

All I can say is YUM! This is not your average turkey wrap...it's definitely spicy, but has a great smoky flavor from the turkey that perfectly compliments the creamy avocado and crisp veggies! I used Hellman's light mayo, flour tortillas and added some tomato slices. Oh, and to take this over the top I added some bacon - everything is better with bacon, right? These were absolutely delicious. Just perfect with a side of kettle cooked chips, a dill pickle and a tall glass of iced tea! Thanks for a great recipe, messy_jessie!

Quick Baby Back Ribs

There's nothing like really good baby back ribs! The smell alone from the grill is enough to make your mouth water! No matter what kind of rub you use they're bound to be good. We don't put our ribs directly on the grill until the end. After the rub, we put some BBQ sauce on the bottom of some foil (to prevent sticking) and wrap the ribs in the foil then place the ribs on the grill and close the lid. Cook for 45 minutes turning the packet a couple of times.. Then we remove them from the foil and place them directly on the grill and baste them with the BBQ sauce for 5 minutes or until done.

Nana's Southern Coleslaw

Well Krissy, for "just an old family recipe" this sure is delicious and it does remind me of KFC's version! To cut back on the amount of chopping I did as others as well as the submitter suggested and bought a bag of coleslaw mix. I also opted to lighten this up a bit by using Hellman's light mayo, reduced fat buttermilk, and 1% milk. I poured everything into a large tupperware container and refrigerated for a few hours - definitely the longer the better! Great side dish for bbq ribs!

Favorite Barbecue Chicken

Wonderful recipe - I doubled it and used chili sauce instead of ketchup and put the chicken in the sauce to marinate all day reserving some for basting. We did the whole thing on the grill and it was very good.

My Husband's Favorite Omelet

Great omelet! I didn't have any broccoli on hand so I used a bit of green pepper. I added some garlic and ham along with the bacon. This was perfect with whole grain toast and orange juice.

Baked BBQ Baby Back Ribs

Finger lickin' good! The key to "fall-off the bones" tender ribs is in the cooking method - low and slow is the way to go and this method is perfect for anytime you want ribs or if it happens to be raining and you can't grill. And, as Chef John states this works with any dry rub and bbq sauce. So, you can use your favorite combination or get creative -either way you're in for a treat! I used the rub in the recipe, but played with it a bit to use what I had on hand. I cut the recipe in half because we had a small rack of baby back ribs and since I didn't have dried chipolte pepper I subbed garlic powder instead. For the bbq sauce I opted for KC Masterpiece. We finished these on the grill over low heat basting just as the recipe states for the last 20 minutes. This was so simple and so delicious - perfect with a side of coleslaw and cornbread!

Red Skinned Potato Salad

I've been looking for the ideal red skinned potato salad and I think I found it. This was straight forward, simple and delicious. I added a couple more eggs, used green onion, half mayo and half miracle whip. It's goes great with BBQ chicken!

Black Bottom Cupcakes II

These are my husband's all time favorite cupcakes, and I decided to make them for his birthday. I definitely wanted a rich, dark, chocolate cake for these - so here's what I did: I used 1/2 c. of Hershey's cocoa, 1 Tbsp. of pure vanilla, and replaced the water with strong brewed coffee. I didn't change a thing with the cream cheese mixture except to add a little vanilla and make sure that the cream cheese and egg were at room temp. just as you do with cheese cakes. I used foil baking cups to bake these and got 18 cupcakes. Watch carefully - mine were done in 20 minutes. Cool and store in the fridge as they're best the next day.

Sweet Salsa and Cinnamon Chips

Wow! This is definitely very refreshing and not to mention a wonderful combination of colors and flavors. No matter what assortment of fresh fruit you use it's bound to be good so use your favorites and use the recipe as a guide. I added chopped peaches to mine and used fresh strawberries. Baking the chips keeps this a little healthier and lower in fat. So, for the cinnamon chips I used reduced fat tortillas and cut them with a pizza cutter which made things a lot easier. I sprayed them with butter flavored Pam and sprinkled them with the cinnamon sugar. I baked them at 350 for 8 minutes flipped them and baked them for another 7 minutes. They were crispy and delicious - next time I would double the amount because they went fast. This got a lot of compliments not only for taste, but for creativity. I'll definitely make this again - great recipe!
