Eagles Tailgating Burgers

Reviewed: May 13, 2008
Did not change a thing. These are some of the best burgers ever. Perfect for the grill. UPDATE: We've made these a number of times now, so we don't always have all the ingredients on hand. You can substitute italian style bread crumbs for the garlic and herb, any type of full bodied beer will do (we used Michelob lager, beer just gives it more moisture). You can use parmesan instead of romano and you can use 1/2 to 1 Tbsp. of dried basil vs. fresh or just leave it out depending on your tastes. After mixing everything together and making the patties we always leave them in the fridge for a half hour to let all the ingredients time to settle before grilling.

Prize Winning Baby Back Ribs

Reviewed: May 16, 2008
This rub is the best. The ribs turned out great. We had to try this recipe a couple of times to get the technique to grilled ribs, but once we did it was great. We served this with Homesteader conbread from this site.

Blackened Chicken

Reviewed: May 19, 2008
This combination of spices is great and the sauce to go with it is a nice change from bottled ranch dressing. It goes great over salad the next day with the leftover chicken. UPDATE: I've been making this for a while now... 1/4 cup of REAL buttermilk for the water. Believe me, you'll taste the difference!

Rosemary Ranch Chicken Kabobs

Reviewed: May 26, 2008
Very tender chicken! I would use this marinade for chicken breasts as well. We reserved a little of the marinade and added more ranch dressing for a nice dipping sauce on the side. UPDATE: I've made these so many times now because they're just that good. You can cut down on the oil and substitute dried rosemary for the fresh if you don't have any on hand. I always use the sugar and 1 tsp. of salt vs. two. If you're looking to cut down on calories Hidden Valley Ranch Light Buttermilk Dressing works great with this recipe. I usually marinate this at least 6 hours. No matter what you do - it's bound to come out moist and delicious.

This is so easy! No need to add oil or butter the vegetables steam themselves. If you want a little flavor with not a lot of fat, add some reduced fat parmesean cheese before serving.

Very tasty! I added the curry and thought the allspice could have been reduced to 1 tsp. Extremely tender after marinating overnight. The dipping sauce was incredible! Very good served with rice or couscous.

Favorite Corn Bread

Reviewed: May 28, 2008
Used splenda instead of sugar and butter instead of shortening and it came out just fine. I've had better cornbread recipes from this site though. Leftovers were used for breakfast with strawberry jam.

Strawberry Streusel Muffins

Reviewed: May 28, 2008
Great recipe and a great way to use up fresh strawberries! I cut the recipe in half for 6 Texas sized muffins and this was so good I made this again making it into a bread using a greased 9x5 baking dish and baked it at 350 for 50 minutes and it turned out fabulous! So, whichever way you try this recipe you won't be disappointed...

Cinnamon Swirl Bread

Reviewed: May 28, 2008
Extremely easy and so good. I added a little vanilla to the mix and used brown sugar instead of white for the cinnamon sugar mixture and added nutmeg. I doubled the brown sugar mixture so there was enough to put on top of the bread to form a nice crunchy coating while baking.

Bacon Wrapped Chicken

Used cream of mushroom soup instead and put fresh mushrooms into bake with this which turned out great. Please cook the bacon first. There was no way I was going to use raw bacon - what a greasy mess that would be!

Chicken Marsala

Reviewed: May 28, 2008
This is a wonderful classic recipe! After reading some of the reviews I followed their advice and put the seasonings and flour in a bag to coat the chicken. I used all marsala wine for the sauce and doubled the amount of mushrooms. I removed the chicken from the pan while making the sauce and added a little half and half to it to make it creamy - it turned out great. I have made this three times now and have finally got around to reviewing it. This is a definite keeper!

Simply Parmesan Chicken

Reviewed: May 28, 2008
This definitely is quick, easy and delicious! Great recipe for a lighter version of a classic dish. I used Italian style bread crumbs and along with other ingredients I added some garlic. I topped this with a tomato cream sauce and some mozzarella cheese during the last five minutes and served with angel hair pasta! Perfect with a garden salad and warm bread!
