Lemon and Raspberry Trifle in Mason Jars

Wow! Now this was an excellent dessert that made a great presentation! It really didn't take a lot of time or effort to create something special that provided a wonderful ending to dinner. To lighten this up a bit, I used angel food cake vs. pound cake along with reduced fat mascarpone cheese (not easy to find I might add). I used a mix of blueberries, raspberries and blackberries (any combination of berries on hand will do) layering everything into over-sized wine glasses and topped it off with light whipped cream. These definitely tasted as good as they looked!

Blueberry Cream Cheese Pound Cake I

Fabulous - plus it's so simple to make! You'd really never know it was a boxed cake - it's that good! It's very moist and bursting with blueberries - what more could you ask for from such a simple recipe! I did opt to use 1/4 cup of melted butter and a couple of Tbsp. of oil. Other than that, I wouldn't change a thing! This cake is perfect when you don't have time to make a scratch cake but want something that tastes like you did! It baked perfectly in no time at all. Once it was cooled I dusted it with a bit of powdered sugar. Since everyone liked this so much I decided to make another one and changed it up a bit by adding the juice of one lemon, 1/2 tsp. of lemon extract and 2 Tbsp. of lemon zest to heighten the lemon flavor. I can't wait to try this with other fruit combinations!

Almond Mandarin Salad

In a word - Fabulous! And, just as the submitter states, "oh so good and refreshing"! This was a great combination of flavors and gave a nice presentation. The dressing was spot on and like others I subbed dijon for the dry mustard. I opted for thin sliced red onion vs. green and topped this with grilled chicken. This was so easy to throw together and made for a tasty, light summer meal. All I had to do was serve it with warm rolls and a nice glass of wine! Thanks for a great recipe - it's one I'll definitely make again.

Crunchy Berry Parfait

Simple and delicious! Plus it not only tastes good but it's good for you too! These are perfect for breakfast or a really nice "guilt free" snack. I opted to use fat free greek vanilla yogurt and threw in a few blackberries as well. This is a great base for whatever add-in's you like and no matter what kind of fruit you have on hand it's bound to be tasty!

Spicy Egg Salad English Muffins

Wonderful! And not to mention a spicy modern take on a regular breakfast sandwich which was a welcome departure from what I typically make. I added a little sliced tomato for some additional color and flavor. Next time I might try this with regular bacon - either way it'll be delicious. This was so good served with fresh fruit and a hot cup of tea! Thanks for a great recipe Occasional Cooker!

Grilled Rosemary Chicken Breasts

Very tasty and just as the sumbitter states this is easy and light with exceptional flavor! Lemon and rosemary pair well together and this was no exception. I pounded the chicken down thin and poked it with a fork. I put everything into a ziploc bag and let it marinate for about 6 hours turning it a few times during marinating. Wow - not only was this simple but very tender and bursting with fresh flavor! Thanks for a great recipe Semigourmet!

Sizzling Steak Fajitas

So good! I let the meat marinate overnight which really infused the flavor. Very easy, yet tastes like you slaved for hours. After the meat and veggies were in the tortilla, I added some sliced avocado and a little cheese. Perfect with a side of salsa and sour cream!

Shredded Chicken Tacos

Delicious! These were so easy to make and perfect for a quick meal. Like others, I used boneless, skinless chicken breasts. Since I didn't have corn tortillas I opted to use flour tortillas for a wrap and added some shredded cheese, diced tomato, and lettuce with some sour cream on the side. I served this with Spanish rice - YUM!

Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad

Fabulous! And, not to mention a wonderful Greek twist on a classic grilled steak! Since my husband loves steak this proved to be a nice change of pace from our standard way of preparing these. The cucumber and tomato salad was a delicious accompaniment - all we did to complete the meal was add a baked potato and a nice glass of wine!

HERDEZ® Hot Chipotle Mocha

Wow! While I'm not a big coffee drinker this recipe called for a bit of chocolate so you had me right there! This definitely was a nice departure from other coffee drinks and had a little hit of spice. Perfect for when you want something sweet but don't want to overindulge. HERDEZ® Mexican Cornbread

Moist, delicious, and full of flavor - what more could you ask of for from a cornbread recipe? This definitely was a nice change from regular cornbread plus, it had a nice little "kick" to it which made it a perfect accompaniment to a warm bowl of chili. Thanks Paula for a wonderful recipe!

Marinated Greek Chicken Kabobs

Wow! This was a big hit! I never realized what yogurt could do to chicken. This was incredibly moist, tender, and juicy with just the right amount of herbs and spices. I opted to use fat free plain greek yogurt along with fat free feta cheese and chopped sun-dried tomatoes and fresh basil. I couldn't resist adding a little fresh minced garlic and a couple of sprigs of fresh rosemary. I threw everything into a ziploc bag (minus the veggies) and let the chicken marinate for three hours. I skewered the veggies separate from the chicken as they cook at different rates. Overall, very tasty!

Grilled Veggie Skewers

Very good and good for you too! It's hard to get my husband to eat veggies, but when they're grilled he really enjoys them. I opted to add some fresh garlic and a couple of splashes of lemon juice. I also opted out of adding the pinepple as I wasn't sure how that would taste with basil and oregano. Great accompaniment to grilled chicken!

Easy Mayonnaise Biscuits

Great little biscuit that's easy to throw together when you need something in a pinch! I've made them with milk and with low-fat buttermilk and the result is a light and fluffy biscuit. Don't be afaid of the mayo, you can't taste it! Ya gotta love when a few ingredients you have in the pantry come together to make something so good. And, they take virtually no time at all. I can't wait to experiment with them by adding some herbs and cheddar or parmesan cheese!

Raspberry-OJ-Banana Smoothie

Wonderful smoothie! And, it's great for breakfast or anytime you want a cold refreshing treat bursting with fresh fruit flavor. I opted to freeze my fruit and use fat free greek vanilla yogurt and a few ice cubes. Overall, very tasty! Thanks for a great recipe lutzflcat!

Pineapple Chicken Tenders

Delicious! This is so simple and takes only a few ingredients to produce a sweet and tender chicken. I opted for low sodium soy sauce, brown sugar splenda (cut the amount in half), and fresh pineapple juice. I didn't bother boiling anything, just threw it all in a ziploc bag and let it marinate for 30 minutes. I skewered the chicken with fresh pinapple and it was fabulous! I must admit the first time I made this I made a huge mistake by marinating this for over two hours because I forgot it in the fridge. The acid in the pineapple turned the chicken into "paste" - lesson learned....

Hammy Egg Maple Bagel

Great combination of sweet and salty! And, I guess this is another one of those "don't knock it 'til you try it" recipes. I used two bagels with one egg, two slices of ham, and a slice of cheese to make two sandwiches. I opted for reduced-fat cheddar and next time I might sub bacon for the ham. Overall, very tasty!

Hawaiian Chicken Kabobs

Oh my! These are absolutetly delicious! I've made these twice now with excellent results and it's now become one of my husband's favorites. To "health" this up just a little I used low sodium soy sauce, fresh garlic, brown sugar Splenda and replaced the sherry with rice wine vinegar. I mixed it altogether along with the sesame oil and ginger. I put three quarters of the marinade along with the chicken into a ziploc freezer bag and let it marinate all day. The remaining marinade I put into another ziploc bag along with fresh pineapple, viadlia onion, and red and yellow peppers. I skewered the meat separate from fruit and veggies as they cook at different rates. I love when so few simple ingredients combine to create something really special. This was wonderful served with rice!

Spring Asparagus Ham and Egg Sandwich

Wonderful - not to mention a nice departure from the regular breakfast sandwich! I opted to roast my asparagus in the oven at 400 for ten minutes drizzled with a little garlic-infused olive oil. When it was done I then wrapped it with the proscuitto. I added a little sliced tomato for some additional color and flavor. This was so good served with fresh fruit and a hot cup of tea!
