Grilled Turkey and Swiss Sandwich

Fabulous sandwich! I love anything with Swiss so I had to give this a try. I opted for Hellman's light mayo and low fat Swiss. I added some thin sliced tomato and a couple of slices of bacon which proved to be wonderful additions. No matter what you add, you can't go wrong. Perfect with a side of fresh fruit!

Quick and Easy Pierogies

Oh, now this is comfort food at it's best! Rich, delicious, and very filling - not for those counting calories or for those of us like myself who made their New Year's resolution to get healthy LOL! I made this for my husband and this is pretty much the way my Mom used to make them for me as a kid. The only exception for me was I got my hands on homemade church pierogies thanks to my mother-in-law! And for those of you who've had a "church" pierogi you know what I'm talking about. Perfect topped with fresh chives vs. parsley and a side of sour cream - YUM!

Strawberry Spinach Salad With Feta and Bacon

Wonderful combination of flavors and textures! This salad was perfect for a light lunch - all I had to do was top it with some leftover grilled chicken. I used a fat free feta and tossed in some sliced almonds. For the raspberry vinaigrette, I used "Fresh Raspberry Balsamic Vinaigrette" from this site. Thanks for an easy, yet delicious recipe!

Fresh Raspberry Balsamic Vinaigrette

Great salad dressing and using fresh ingredients makes it all the better! I cut the recipe in half to give it a try and I'm glad I did. I opted to use a white balsamic which proved to be a good choice. I just put everything into my mini food processor, gave it a whirl and it was done in no time at all. I let it set in the fridge for about an hour to let the flavors blend together. This was a wonderful dressing for "Strawberry Spinach Salad with Feta and Bacon" from this site.

Elaine's Sweet and Tangy Loose Beef BBQ

Wow - now this is fabulous BBQ Beef! It's definitely sweet and tangy so prepare your tastebuds. I had my eye on this recipe for a while and made it for my Halloween party (just finally got around to reviewing it). Needless to say it was a BIG hit! I cut the recipe in half cutting back on the ketchup and used 1/2 cup ketchup with 1/2 cup of BBQ sauce. This is best prepared the night before due to the long cook time. Plus it's even better in the slow cooker the next day! I served this on mini kaiser rolls (sliders) along with kettle cooked chips and mini dill pickles - this may become a new Halloween tradition!

Healthy Mexican Chicken Bake

Simple, quick, and delicious! I needed something easy for a weeknight meal and this was a great way to enjoy Mexican without all the guilt! I sprinkled both sides of the chicken with the garlic powder and cumin plus a little chili powder. Since there's no need to brown the chicken first and opting out of the oil cuts back on the fat I sprayed an 8x8 baking dish with Pam and put the chicken topped with a 16 oz. jar of salsa in the oven and baked 350 for 45 minutes. The last 5 minutes I grated low fat Colby Jack cheese over top to melt. To make the presentation a little better to serve, I topped it with chopped green onion and sliced black olives. This was wonderful served with fat free plain greek yogurt (instead of sour cream),brown rice, and black beans. This has to be one of the easiest low fat meals ever!

Pumpkin Pie Muffins

Great muffins with all the fabulous flavors of Fall that taste just like pumpkin pie without all the fuss! I cut the recipe in half and got six Texas sized-muffins. I cut the sugar back to one cup and used half white and half brown sugar. I also opted for milk vs. water and added a generous tsp. of vanilla along with a handful of raisins I had on hand. This is a great base for add-in's such as dried cranberries, raisins, nuts, or chocolate chips. Before popping them into the oven I topped them off with some turbinado sugar for a little extra crunch. These baked up beautifully and were perfect with a piping hot cup of tea!

Johnsonville Italian Sausage Rigatoni

Very easy and very good! It takes no time at all to put this together for a quick weeknight meal. So, even if you're short on time you can have a nice Italian dinner without a lot of fuss and the leftovers freeze well. All I had to add was a nice garden salad and garlic breadsticks!

Pumpkin Waffles

Wow! If you love pumpkin, you're gonna love this breakfast treat! What a great way to spruce up regular 'ol waffles with a nice touch of autumn flavors. I used a heaping teaspoon of pumpkin pie spice vs. cinnamon, nutmeg, and ginger. I also added a generous helping of vanilla to the batter. Next time I might add walnuts or mini chocolate chips. These were oh so good topped with maple syrup and a dollup of whipped cream dusted with a little pumpkin pie spice - YUM!!!

Amazing Muffin Cups

Great recipe that combines everything you need for breakfast in a few bites! Plus they're great for "on the go". I used Ore-Ida hash browns and opted out of the red pepper. I used half the amount of cheese which proved to be a good decision and added a little half and half to the eggs to get them nice and fluffy. These were easy to put together and were done in no time at all. I'll definitely make these again. Perfect with a side of fresh fruit and a glass of OJ!

Miniature Apple Muffins

All the flavors of fall come together in this bite-sized little treat that's nicely spiced with the perfect amount of sweetness! These baked up beautifully in no time at all. The kitchen smelled wonderful which was an indicator that these would taste delicious. I opted to use half white Splenda and half brown sugar Splenda and added a generous splash of vanilla. I thew the apple in my mini-food processor vs. grating. You can easily sub nuts or dried cranberries for the raisins. Perfect with a piping hot cup of tea!

Cafe Style Grilled Chicken Sandwiches

Simple, quick and not to mention delicious! I did cut back on the oil for the marinade using about half the amount. I topped the grilled chicken with Swiss cheese, bacon, shredded lettuce, tomato, and mayo. I also opted to broil rolls vs. pan frying bread. All I had to add was a side of Ore-Ida french fries for a quick weeknight meal!

Baked Ziti with Johnsonville Italian Sausage

Great recipe - and a great combination of flavors! The only thing I did differest was using fresh spinach instead of eggplant. I love the addition of the kalamata olives! This was a nice twist on regular baked ziti. It paired great with a garden salad, warm bread, and a glass of wine.

The Munroe Melt

Wow - now this is a sandwich! And, it had my husband's name written all over it - the more the better! This is perfect for a quick weeknight meal when you don't have time to cook, or just don't feel like it. I lightly toasted the roll before assembling it and left off the tomatoes until after it was done. Be sure you have an appetite and a lot of napkins ready because this makes one heck of a meal. I served it with pickles and kettle cooked chips - YUM!

Grilled Bacon Apple Sandwich

OMG! I love apples, bacon, and especially peanut butter but never would have thought of this combination in a grilled sandwich! This was oh so goey and good. It was a great blend of sweet and salty with just the right amount of spice from the cayenne. It definitely gives your taste buds a work out. I used thick sliced whole grain bread, but whatever bread you use this is bound to be delicious. This is definitely a case of don't knock it 'til ya try it!

Breakfast Muffins

Quick, easy, and delicious! Plus it's a great way to use up ripe fruit. The batter was a little dry, so I used a bit more milk and added a couple Tbsp. of veg. oil. This recipe is a great base for whatever add-in's you have on hand. For the fruit I used peaches and added some vanilla and cinnamon. I baked these in a Texas sized muffin tin and topped them off with a little turbinado sugar before popping them in the oven for a little extra sweetness and crunch. These baked up beautifully in about twenty minutes. Perfect with a cup of tea!

Creamy Dill Dip

Excellent! Plus you can modify this to make it healthier and lower in fat. I cut back on the mayo (used Hellman's light), opted for fat free plain greek yogurt in place of the sour cream and added 4 oz. of light cream cheese. I combined all the ingredients and let it set overnight - perfect with cucumbers, carrtos, red peppers, and celery. A really nice snack you don't have to feel guilty about!

Maple Basted Roast Turkey with Cranberry Pan Gravy

Nothing beats a roast turkey! And although it was a little on the sweeter side, overall it was very tasty. My husband wasn't a huge fan of the gravy, but it was a nice departure from traditional turkey gravy.

Stuffed Green Peppers

Very simple, yet very tasty! I used four peppers vs. six (all depends on the size). I also opted to sub Butterball ground turkey vs. beef with great results. I added a little garlic to the meat while cooking and didn't add the celery because I didn't have any on hand. Once they came out of the oven I sprinkled the tops with grated Parmesan cheese. Perfect with a side of mashed potatoes!
