Sweet Banana Almond Oatmeal

This definitely is just as the submitter states "warm, sweet, and lusciously filling"! I love the combination of flavors and it's a great way to use up that last little banana - lol. I did opt to do a microwave version of this to cut back on time and to add a little protein I added a dollup of almond butter over top! Perfect with a glass of OJ!

Baked Ranch Chicken

It really doesn't get much easier than this... I used light Hidden Valley Ranch dressing and panko breadcrumbs that I seasoned with a little grated Parmesan cheese and dried parsley, The chicken was moist, tender, and flavorful. Great recipe if you're short on time or just love ranch dressing.

English Baked Potatoes

So simple and so delicious! I love it when a few ingredients you have in the kitchen come together to create something so good. I opted for a little kosher salt and cracked black pepper. Although you may feel tempted to add additional herbs or spices, this is really wonderful due to it's simplicity.

Broccoli with Buttery Crumbs

Great way to takes plain 'ol broccoli to a whole new level! I used a steam in bag of broccoli and cut the amount of butter in half. Next time I might add a little grated Parmesan cheese or shredded cheddar, but honestly this was great as is and perfect for a last minute side dish!

Tomato Basil Egg Salad Sandwich

Simple and delicious! I never would have thought to add basil to egg salad, but it really works. I cut the recipe in half and opted for Hellman's light mayo and in addition to the tomato slices I added thin sliced English cucumber. This perfect with a side of fresh fruit for a filling and flavorful lunch. Thanks for a great recipe!

Vanilla French Toast

Some recipes bring back wonderful childhood memories and this is one of those recipes! My Mom made the most wonderful French Toast and this recipe is spot on...I guess that's why the classics never die! Crisp, light, fluffy and just plain delicious these were perfect for Sunday breakfast topped with REAL maple syrup. I served these with fresh fruit and OJ for a great start to the day!

Family Favorite Apple Crisp

I LOVE apple crisp and this was no exception! It quickly became a "family favorite" in this house. It's staightforward recipe that produces a delicious result with the perfect balance of apples to topping. I served this warm with vanilla ice cream and whipped topping - YUM! Amazing Whipped Potatoes

So simple, yet oh so good! These mashed potatoes are creamy, rich and delicious - comfort food at it's best! And, while you can lighten them up switching out low fat ingredients for full fat - I chose to stick with the full fat version. Just as the submitter states - "These potatoes are a perfect compliment to ANY meal".

Slow Cooker Pork and Sauerkraut

Simple and delicious! Being that pork and sauerkraut is a New Year's Eve tradition I had to make this and boy was it good - not only for the ease of prep but for the taste. I didn't add the optional baby potatoes and used two bags of Boar's head sauerkraut. I also threw in a thin sliced Granny Smith apple and a little brown sugar (this takes away the tartness of the kraut). I made this before I went to bed New Year's Eve and it was done for New Year's day. Perfect with mashed potatoes and sweet peas!

Grilled Turkey and Swiss Sandwich

Fabulous sandwich! I love anything with Swiss so I had to give this a try. I opted for Hellman's light mayo and low fat Swiss. I added some thin sliced tomato and a couple of slices of bacon which proved to be wonderful additions. No matter what you add, you can't go wrong. Perfect with a side of fresh fruit!

Quick and Easy Pierogies

Oh, now this is comfort food at it's best! Rich, delicious, and very filling - not for those counting calories or for those of us like myself who made their New Year's resolution to get healthy LOL! I made this for my husband and this is pretty much the way my Mom used to make them for me as a kid. The only exception for me was I got my hands on homemade church pierogies thanks to my mother-in-law! And for those of you who've had a "church" pierogi you know what I'm talking about. Perfect topped with fresh chives vs. parsley and a side of sour cream - YUM!

Strawberry Spinach Salad With Feta and Bacon

Wonderful combination of flavors and textures! This salad was perfect for a light lunch - all I had to do was top it with some leftover grilled chicken. I used a fat free feta and tossed in some sliced almonds. For the raspberry vinaigrette, I used "Fresh Raspberry Balsamic Vinaigrette" from this site. Thanks for an easy, yet delicious recipe!

Fresh Raspberry Balsamic Vinaigrette

Great salad dressing and using fresh ingredients makes it all the better! I cut the recipe in half to give it a try and I'm glad I did. I opted to use a white balsamic which proved to be a good choice. I just put everything into my mini food processor, gave it a whirl and it was done in no time at all. I let it set in the fridge for about an hour to let the flavors blend together. This was a wonderful dressing for "Strawberry Spinach Salad with Feta and Bacon" from this site.

Elaine's Sweet and Tangy Loose Beef BBQ

Wow - now this is fabulous BBQ Beef! It's definitely sweet and tangy so prepare your tastebuds. I had my eye on this recipe for a while and made it for my Halloween party (just finally got around to reviewing it). Needless to say it was a BIG hit! I cut the recipe in half cutting back on the ketchup and used 1/2 cup ketchup with 1/2 cup of BBQ sauce. This is best prepared the night before due to the long cook time. Plus it's even better in the slow cooker the next day! I served this on mini kaiser rolls (sliders) along with kettle cooked chips and mini dill pickles - this may become a new Halloween tradition!

Healthy Mexican Chicken Bake

Simple, quick, and delicious! I needed something easy for a weeknight meal and this was a great way to enjoy Mexican without all the guilt! I sprinkled both sides of the chicken with the garlic powder and cumin plus a little chili powder. Since there's no need to brown the chicken first and opting out of the oil cuts back on the fat I sprayed an 8x8 baking dish with Pam and put the chicken topped with a 16 oz. jar of salsa in the oven and baked 350 for 45 minutes. The last 5 minutes I grated low fat Colby Jack cheese over top to melt. To make the presentation a little better to serve, I topped it with chopped green onion and sliced black olives. This was wonderful served with fat free plain greek yogurt (instead of sour cream),brown rice, and black beans. This has to be one of the easiest low fat meals ever!

Pumpkin Pie Muffins

Great muffins with all the fabulous flavors of Fall that taste just like pumpkin pie without all the fuss! I cut the recipe in half and got six Texas sized-muffins. I cut the sugar back to one cup and used half white and half brown sugar. I also opted for milk vs. water and added a generous tsp. of vanilla along with a handful of raisins I had on hand. This is a great base for add-in's such as dried cranberries, raisins, nuts, or chocolate chips. Before popping them into the oven I topped them off with some turbinado sugar for a little extra crunch. These baked up beautifully and were perfect with a piping hot cup of tea!

Very easy and very good! It takes no time at all to put this together for a quick weeknight meal. So, even if you're short on time you can have a nice Italian dinner without a lot of fuss and the leftovers freeze well. All I had to add was a nice garden salad and garlic breadsticks!

Pumpkin Waffles

Wow! If you love pumpkin, you're gonna love this breakfast treat! What a great way to spruce up regular 'ol waffles with a nice touch of autumn flavors. I used a heaping teaspoon of pumpkin pie spice vs. cinnamon, nutmeg, and ginger. I also added a generous helping of vanilla to the batter. Next time I might add walnuts or mini chocolate chips. These were oh so good topped with maple syrup and a dollup of whipped cream dusted with a little pumpkin pie spice - YUM!!!

Amazing Muffin Cups

Great recipe that combines everything you need for breakfast in a few bites! Plus they're great for "on the go". I used Ore-Ida hash browns and opted out of the red pepper. I used half the amount of cheese which proved to be a good decision and added a little half and half to the eggs to get them nice and fluffy. These were easy to put together and were done in no time at all. I'll definitely make these again. Perfect with a side of fresh fruit and a glass of OJ!
