Baked Tomato Slices

So simple, yet so delicious! This is very easy and makes a great side dish or light snack. If you love fresh ripe tomatoes, you'll love'em baked! These smelled wonderful and tasted even better. Once they came out of the oven I topped them off with a little shredded Parmesan cheese. And, while these are perfect on their own they went great with warm crusty bread and a nice glass of wine!

Kick'N Chicken with Mango Salsa

Yum! This was a great combination of sweet and spicy! The mango salsa was absolutely delicious and paired nicely over top grilled chicken. I used lime juice and to season the chicken I opted to use Mrs. Dash Fiesta Lime Seasoning Blend. The chicken came out moist and flavorful! I served this with a side of Spanish rice, sliced avocado and warm tortillas - great recipe!

Lemon Basil Grilled Chicken

Great recipe! The combination of citrus and herb complimented each other very nicely. I threw everything into a ziploc bag and let it marinate for about 4 hours. The result was a light, lemony grilled chicken with a hint of basil. This was so easy to put together for a weeknight meal and went great with grilled potatoes and baked tomato slices!

Jordan Marsh Style Blueberry Muffins

Fabulous recipe! I used butter instead of shortening and doubled the vanilla. I baked these in a Texas size muffin tin and topped them with turbinado sugar vs. regular sugar. I baked them at 400 for about 25 minutes. These smelled great and tasted even better! They were moist, flavorful and bursting with blueberries! Great with a piping hot cup of tea!

Apple Cinnamon White Cake

Absolutely delicious and takes virtually no time at all to put together - not to mention it's very pretty when it comes out of the oven. I did add two apples vs. one and opted for buttermilk vs. milk. Other than that, I wouldn't change a thing...except maybe for the cooking time. There's no way this would bake at 350 for 30-40 minutes and be cooked all the way through. I baked mine for 50-55 minutes and it came out moist, nicely spiced and bursting with apples! This is a great base for add-in's such as raisins or walnuts but it's perfectly fine all by itself and goes great with a nice cup of tea! Thanks for a great recipe!

Broiled Asparagus with Lemon Tarragon Dressing

Quick and easy side dish that's really good! We love asparagus and this was a nice way to dress it up a bit. The dressing wasn't overpowering and it gave it a nice creaminess with a bit of tanginess. Overall, very tasty!

Slow Cooker Scalloped Potatoes with Ham

Very easy and tasty - my husband is a big fan of ham and scalloped potatoes so I just had to make this for him! I did tweak the recipe a bit. I more than doubled the amount of ham and used a whole vidalia onion layering it in the crock pot first along with light shredded cheddar cheese. I mixed 98% fat free cream of mushroom soup with an equal can of fat free half and half vs. water. I used fresh minced garlic vs. powdered. I poured that over everything and let it go on high for 4 hours. Since it didn't seem creamy enough I added 4 oz. light cream cheese and another 1/2 cup of shredded cheese. I cooked it for another two hours and it thickend up and was a lot creamier. My husband asked for seconds so it's a definite winner!

Pork Tenderloin with Creamy Dijon Sauce

Delicious! And, I must admit I really didn't think this was going to turn out as good as it did but boy was I surprised. I used boneless pork loin chops and didn't bother with the browning. I opted for fresh garlic vs. garlic powder and used about a half a cup of marsala wine that I had left and added just a dash of browning sauce. It all went into the crock pot on low for the whole day and the result was a tender, creamy and absolutely delicious meal without a lot of effort. If my husband didn't already know it was a crock pot recipe he might have thought I slaved all day LOL. This was great served with mashed potatoes and garlic green beans!

California Club Chicken Wraps

All I can say is YUM! This is not your average chicken wrap...it's definitely taken up a notch and has a great smoky flavor from the bacon that perfectly compliments the creamy avocado and has a nice kick from the chipolte mayo! I used Hellman's light mayo along with fat free greek yogurt. There was a lot of "dressing" left over, but that's OK. Next time I might try the ranch dressing option. I used flour tortillas and left out the onion altogether. These were absolutely delicious and a great way to use up some leftover grilled chicken. Perfect for a quick and easy weeknight meal served with a side of kettle cooked chips and dill pickles! Thanks for a great recipe!

Dessert Quesadillas with Peanut Butter, Chocolate, and Marshmallow

Delicious! And, with a combination of marshmallow, peanut butter and chocolate it's sure to be a winner. This was so easy to put together and made for a quick and easy dessert. I opted to use up some mini marshmallows I had on hand and the crunchy peanut butter really took these over the top. Perfect when you have a craving for something sweet! Be sure to serve with a tall glass of ice cold milk for a real treat that's great for kids of all ages!

Chef John's French Toast

Wow! I've been making french toast for years and thought I was doing it right..."if it ain't broke don't fix it". I never knew about a "classic restaurant method". I just did it the way my Mom and Grandma taught me and never would have thought to lightly fry and place it in the oven. Since I love french toast I had to give this a try and I was pleasantly surprised. This came out crisp, light, fluffy and just plain delicious. I topped it with a dusting of powdered sugar and REAL maple syrup. It was perfect served with fresh fruit and OJ! Thanks for a great recipe Chef John and an update on a truly classic breakfast favorite!

Peanut Butter, Bacon and Honey Sandwich

Wow! Great combination of sweet and salty! I love peanut butter so I had to give this a try and I'm glad I did. I was a bit liberal with the peanut butter and the honey added a nice touch of sweetness. This proves that bacon really does make everything taste better...even a peanut butter sandwich!

Wow - now this is a sandwich! And, just as the submitter states it's a BLT on steroids! My husband loves anything with bacon so I had to make this for him and I'm glad I did. It's rich, meaty, and absolutely delicious. While it's not something you'd make everyday unless you're looking to clog your arteries it's nice to splurge once in a while. I added the bacon at the end and served this with a bunch of napkins... Thanks for a great recipe Hot Grandma!

Avocado Banana and Walnut Muffins

Delicious! I opted to use half brown sugar and half white sugar and since most banana muffins have a little spice I added 1 tsp. of cinnamon along with a couple heaping teaspoons of vanilla. These came out very moist and tasted so good my husband had no idea there was avocado in it - until he noticed the light green color... What's great about these muffins are the avocado takes the place of butter or oil yet they still have all the moistness and flavor you'd expect. I topped these with a little turbinado sugar for some added crunch and popped them in the oven. They baked up beautifully in exactly 20 minutes. I never baked with avocado before but now I'm going to!

Delicious! Sometimes the simplest recipes turn out to be some of the best. I subbed Johnsonville's Italian Ground Sausage for the beef patty which proved to be a wonderful choice. This "anytime" burger was great for breakfast served with a nice big glass of OJ!

Pork Carnitas with Cilantro Tomatillo Sauce

Delicious! The pork comes out moist, tender, and full of flavor - plus it was easy to make. I used pork tenderloin (on sale) and combined all the spices in a ziploc bag then tossed in the pork so it was evenly coated. After browning, I cooked it in the crock pot for 4 hours on high with a minimal amount of water. The last hour I tossed in the onion. The tomatillo salsa needed just a little more flavor so like others I added in some garlic, red onion, a pinch of salt and a little fresh lime juice. I served these over white corn tortillas that I warmed in the oven topped with salsa, avacado slices, sour cream and a splash of fresh lime. Great with a side of Spanish rice and a margarita on the rocks! Thanks for a great recipe Mazola!

Sweet and Spicy Salmon with Grapefruit Salsa

Great recipe - the rub was fabulous! I subbed tilapia for the salmon to give it a try and no matter how much I pleaded with my husband to at least try fish he wouldn't...(maybe next time)so I ended up using the rub on pork for him which actually turned out very good. Since I wasn't a fan of the grapefruit salsa after making it I ended up going with a mango salsa instead. Overall, it was a nice blend of "sweet and spicy".

Vanilla-Pear Breakfast Oatmeal

Wonderful combination of flavors to start your day! This was so easy and so good plus it was very filling. This is a great way to perk up regular morning oatmeal. Since I didn't have fresh raspberries on hand I topped it off with a dollup of fat free greek vanilla yogurt, additional toatsted almonds and dried cranberries. I really didn't need the brown sugar as it was sweet enough as is.

Reindeer Sandwiches

Too Cute! I'm an admitted peanut butter addict so I had to find an excuse to try this so when I had my niece over I figured it would be a fun thing to do and she just loved it! It's an easy, quick, inexpensive, healthy and delicious snack that I felt good about giving her. Plus it was really fun to make! You can sub almond butter or nutella for peanut butter and chocolate chips for the eyes. I didn't have cherries on hand so I used dried cranberries. No matter how you create your "reindeer" you'll love this not only for its simplicity but for the smiles it brings. Thanks for a great recipe!

Coffee Cake in a Mug

This may not be pretty to look at, but it sure does taste good! I must admit I tried this out of a sweet tooth craving and being that this makes a cake for one in under 5 minutes I figured what do I have to lose? It's simple, easy and really hits the spot when you want something sweet without a lot of effort. Perfect with a cup of hot tea!
