Crispy Panko Chicken Breasts

Excellent! This was very easy and perfect for a weeknight meal. I'm not big on frying but I wanted to give this a try and I'm glad I did. To save time I bought thin sliced chicken breasts. I did add a little milk to the egg mixture and a little grated Parmesan cheese and chopped parsley to the panko bread crumb mixture. This was done in no time at all and came out very crispy, moist and tender! Definitely a recipe I'd make again.

Sausage Mushroom Pizza

YUM! This was perfect for pizza night! I love pizza and this was delicious plus the Reynolds foil made for easy clean up. I opted to use store bought individual pizza shells that I brushed with garlic infused olive oil. I also subbed thin sliced tomato for the mushrooms as my husband isn't a huge fan of mushrooms on pizza. I also added some thin sliced onion. The fresh basil really made this pop. So easy and so good - perfect with a glass of wine!

Easy Flank Steak Fajitas

Simple and delicious plus it's easy clean up - not bad for a quick meal! The marinade was really good and didn't take long at all - basically the time it took to prep the veggies, make the foil packets and whip up some homemade guacamole! I cooked the steak on the grill vs. a foil packet simply because I couldn't bring myself to "steam" a good piece of meat. I put the foil packets for the veggies and tortillas on the grill as well. I did poke a few holes in the veggie packets to allow some of the steam to get out so they weren't soggy. Overall, very good especially with all the fixen's - cheese, salsa, guacamole, and sour cream!

Tom's Scrambled Egg Sandwich

Egg sandwiches are a staple in this house - in many shapes and forms. I was curious to try this one as it had the addition of mayonnaise and mustard. I used toasted whole grain bread and opted to add a slice of cheese. I liked the mayo and mustard combo, but will probably go back to my old standard...ketchup. My husband enjoyed his and of course had to add some bacon! Overall, very good especially with a side of fresh fruit and OJ. Definitely one of those "don't knock it until ya try it" kind of recipes - and I'm glad I tried it!

Homemade Sloppy Joes

Boy does this recipe bring back memories! I haven't had sloppy joes since I was a kid. Definitely a "retro" kinda meal that dare I say...tastes better than my Mom's! This was so easy and so good - perfect for Sunday football. I doubled the recipe using 96/4 ground beef, one red pepper and one green pepper, half ketchup and half Bennetts Original Chili Sauce along with a generous splash of white wine vinegar, and brown sugar to taste along with the rest of the ingredients. I highly recommend watching Chef John's video. It's only a few minutes long and was very helpful. You really do need to add the water and let it simmer down for at least 30 minutes - and don't be afraid to add the cayenne it really does make a difference but doesn't make it "hot". All I did was keep it warm in a crock pot during the game. I served these on slider rolls with chips and pickles to rave reveiws. Thanks Chef John for another awesome recipe!

Marinated Chicken Bruschetta

Very easy and tates fabulous! I pound my chicken down thin and poke it with a fork a few times before marinating. I do spice up the salad dressing a bit with fresh basil and romemary along with some minced garlic and a generous splash of white wine vinegar. I let this marinate for at least four hours. I never refrigerate the tomatoes and left off the dressing just using a little olive oil, vinegar, salt and pepper. Once the chicken came off the grill I topped it with the tomato mixture, fresh basil and some shredded Parmesan and Romano cheese. Great served wtih "Warm Herb Garlic Bread" from this site.

Warm Herb Garlic Bread

Delicious! And, while this bread is great all by itself, the addition of butter, garlic, herbs, and Parmesan cheese really take these over the top. Plus it's very easy and you have garlic bread in no time at all. Perfect accompaniment to any meal!

Bacon and Tomato Fried Egg Sandwiches with Horseradish Mayo

Wow - now this is an egg sandwich! My husband could live on these every morning and this was a nice way to change it up a bit. I opted for sourdough bread as that's what I had on hand. But no matter what type of bread you use it's bound to be good. I opted to use the "Basil-Mayo" variation which proved to be a nice compliment to the tomatoes. This made for a great breakfast, but honestly I would eat this any time of day!

French Toast Pancakes

Nice little recipe - and since I'm a fan of both pancakes and french toast, I had to give this a try. And, while I did up the amount of vanilla, cinnamon, and nutmeg overall these turned out really good. This is definitely a nice twist on two classic breakfast dishes. Great topped with butter and real maple syrup and served with some OJ and fresh fruit.

Bowl of Oatmeal Cookie

Yummy and so easy to make for a quick and hearty breakfast! Definitely add the optional raisins and for a little crunch I added some chopped walnuts. I topped it off with a dollop of greek vanilla yogurt and a sprinkle of cinnamon and nutmeg. Thanks for a great recipe!

Heinz® Classic Meatloaf

Delicious - I guess that's why the classics never die and this is definitely comfort food at it's best! The addition of some veggies was a nice touch. I did add just a pinch of crushed red pepper flakes to give it a little kick and I also added a little dijon mustard to the ketchup to up the flavor a little. Overall, perfect served with "Garlicky Potatoes" from this site.

Grilled Chicken, Tomato and Baby Greens Salad with Blue Cheese

Nice take on a classic cobb salad! This was a great way to use up some leftover grilled chicken I had on hand. I did up the amount of bacon - who doesn't love bacon, right? And I added an additional hard boiled egg. Like others, I opted to make my own blue cheese dressing and my favorite by far is "Absolutely the BEST Rich and Creamy Blue Cheese dressing" from this site and the title is very fitting. Since my husband is a die hard ranch dressing fan I opted to use "Chef John's Ranch Dressing" - also from this site. This made for a great throw together weeknight meal that turned out fabulous. Great served with warm crusty bread.

Chef John's Ranch Dressing

Excellent! I love ranch dressing, and this was no exception. I was a bit skeptical about the addition of tarragon and Worcestershire but it worked out beautifully. I opted to use low fat ingredients and after a couple hours in the fridge the flavors blended together perfectly...much better than store bought!

Open-Faced Grilled Tuscan Chicken Sandwiches with Fresh Mozzarella

Wow! This was so easy and so delicious! I marinated the chicken for about an hour and it turned out moist and juicy. The only thing I added was fresh sliced tomatoes and some roasted red peppers for some added color and flavor. Other than that, I wouldn't change a thing. This was perfect for a quick and easy weeknight meal and went great with a glass of wine!

Garlicky Potatoes

YUM - classic comfort food at it's best! I did cut back on the garlic just a bit and opted for light sour cream and milk vs. heavy cream to cut back on fat and calories. These were creamy and delicious. A perfect side dish for just about anything!

10-Minute Tomato Basil Salad

So simple, yet so delicious! I had some fresh garden tomatoes from my neighbor and this was the perfect way to use them up. I opted for white wine vinegar and a little sea salt along with some fresh minced garlic. Perfect with warm crusty bread!

Italian Meatballs and Peppers by PAM®

Delicious - and this was so easy to put together! Definitely a "fix it and forget it" kind of meal that's perfect for when you don't want to heat up the oven. I used a 14.5 oz. can of diced tomatoes and added a jar of marinara sauce along with the tomato paste. Instead of frozen bell pepper strips I used two fresh bell peppers cut into small strips along with a thin sliced onion. I uppped the spices a little bit, added a pinch of red pepper flakes, a splash of wine, and a Tbsp. of brown sugar to cut the acidity of the tomatoes. Since I'm not a huge fan of frozen meatballs I used "Starr's Savory Meatballs" from this site. I let this go on high for one hour and another six hours on low. Perfect with a garden salad, warm bread, and a glass of wine!

Polish Kielbasa and Pierogies

So easy and so tasty! This was perfect for a delicious weeknight meal that tastes like you spent hours. It's definitely a classic and I guess that's why the classics never die. My husband is a huge fan of kielbasa and he really enjoyed this. I was lucky enough to get my hands on some homemade "church" pierogies - and for those of you not familiar with these you're definitley missing out. Perfect topped with a dollop of sour cream and served with a nice garden salad!

Starr's Savory Meatballs

Great meatball! These were full of flavor with a nice cripy outside - plus they were baked not fried. I used Italian style bread crumbs and subbed a bit of the ground beef with Johnsonville Italian Sweet Sausage. These were perfect topped with marinara sauce and a dollup of ricotta cheese! All I need to do was serve these with pasta, a garden salad, warm bread and of course a nice glass of wine! Thanks for a great recipe!
