Rise and Shine Pizza

Reviewed: Feb. 23, 2012
Delicious and perfect for a quick and easy breakfast! I modified this a bit to use what I had on hand. Instead of pizza dough I made this into a French bread breakfast. I toasted the bread first, scrambled the eggs then layered the ingredients. It baked up really nice and went great with OJ!

Grilled Apple and Swiss Cheese Sandwich

Reviewed: Feb. 22, 2012
OMG! I love apples and cheese, but never would have thought of the two in a grilled sandwich! This was a great for lunch. I used sliced Swiss cheese as I thought it would work better and thick sliced whole grain bread, but whatever bread you use this is bound to be delicious. This is definitely a case of don't knock it 'til ya try it!

Whipped Cream Cheese

Wonderful recipe that's so simple, yet so delicious and a great base for add-ins to customize to whatever your tastebuds happen to be craving! The possibilites are endless in terms of flavor combinations using fruits, jams or herbs and spices. Overall, very good and a nice change from plain cream cheese on bagels!

Fresh Tomato and Basil Pizza

Reviewed: Feb. 22, 2012
Tomato and basil are a classic combination and when paired with mozzarella you have something so simple and so delicious without a ton of effort! I used plum tomatoes that I added a little sea salt to along with the fresh cracked black pepper. I also baked it at 450 vs. 500. If you want to add a little pizzaz add some thin sliced red onion or roasted red peppers- perfect served with a garden salad and a nice wine for a quick meal or makes a great appetizer!

Poached Eggs Caprese

Reviewed: Feb. 19, 2012
Nice Italian twist on Eggs Benedict! This was perfect for Sunday breakfast. I toasted my English muffins and then added the rest of the ingredients, not bothering to heat antyhing in the toaster oven. I used plum tomatoes that I sliced less than thick and opted for fresh basil vs. pesto. I sprinkled everything with a bit of sea salt and fresh cracked black pepper - delicious!

Spinach Ranch Salad

Reviewed: Feb. 16, 2012
Easy and delicious, plus it was a great way to use up leftover grilled chicken! I subbed cherry tomatoes for the broccoli and added a couple of hard boiled eggs. I also used real bacon vs. bacon bits. This was great with warm rolls for a weeknight meal.

Toasted Waffle Ice Cream Sandwich

Reviewed: Feb. 16, 2012
Delicious! This is an oldie, but a goodie and it was a great way to use up some homemade waffles I made for breakfast. Instead of maple syrup I opted for hot fudge. Whatever combination of ice cream flavors or toppings this is sure to please!

Great Easy Waffles

Reviewed: Feb. 16, 2012
Wow! These definitely were easy and tasted great!I cut back on the milk a bit and used buttermilk vs. whole milk. They were crispy on the outside and tender on the inside. This recipe is perfect as-is, but if you want a sweeter waffle you can up the sugar to as much as you like. I upped it to about 4-6 Tbsp and was liberal with the vanilla. These are delicious topped with real maple syrup!

Strawberry Cheesecake Bites

Reviewed: Feb. 15, 2012
Wow! Delicious and a nice spin on chocolate covered strawberries! Not only is this cute and creative, but if you love the taste of cheesecake without all the effort (and without all the calories), then this little dessert is for you! It's got cheesecake, strawberries, and chocolate - what more could you ask for in two bites? I made this for my husband for Valentine's day and they were a big hit especially when accompanied by a glass of champagne! Thanks Alex for a great recipe!

Sunshine Toast

Delicious! Very easy and great for breakfast! Neat idea to combine your eggs and toast together. I waited until the egg was cooked and added a slice of cheese. Great with a side of Canadian bacon and OJ!

Barbecued Chicken Pizza

Reviewed: Feb. 9, 2012
Quick, easy, and delicious - perfect for a weeknight meal! Plus, it's a great way to use up leftover grilled chicken. And to think all I had to do was sautee some onions and peppers. I used red onion added a little yellow pepper for a little more color and sauteed everything with a little minced garlic for a flavor boost. I used a thin crust Boboli bread shell and some KC Masterpiece bbq sauce. I also used a Mexican blend cheese but I'm sure any cheese would do as long as it gets nice and bubbly!

Grilled Cheese, Cinnamon, and Apple Sandwich

OMG! I love apples and cheese, but never would have thought of the two in a sandwich! This was a great for lunch. I used whole wheat bread and and a Granny Smith Apple. I also subbed some mild cheddar cheese as I thought it would pair better than American. This is definitely a case of don't knock it 'til ya try it!

Fiber One® Chocolate-Peanut Butter Haystacks

Reviewed: Feb. 9, 2012
I'm an admitted peanut butter addict and LOVE anything with the stuff and could eat it by the spoonfuls (now if they could only come up with a great tasting fat free version). That being said I finally got around to trying this and I love the crunchy texture you get from the Fiber One cereal - great idea! This is so good and turns out it's good for you too. A quick and easy no-bake treat that you don't have to feel guilty about! (that is if you don't eat too many...)

Berry Good Smoothie II

Reviewed: Feb. 9, 2012
Berry good! I subbed a peach for the nectarine and froze my strawberries and blueberries cutting down on the ice. I also used skim milk and a little vanilla yogurt vs. dry milk powder which is something I typically don't have on hand....

Cholesterol King Heart Stopper 2000

Reviewed: Feb. 8, 2012
Wow! This is one BIG sandwich. It's actually more of a hoagie or sub depending on where you're from but one thing's for sure - it's delicious. I have to laugh as if the addition of some lettuce, tomato and other assorted "veggies" could some how make this seem "healthy". But, you have to splurge once in a while and I guess it's not called the "Heart Stopper 2000" for nothin'! There was no way we could finish this by ourselves so I sent the rest to work with my husband and he told me the guys renamed this "The Widow Maker" - LOL!

Honey Butter

Reviewed: Feb. 8, 2012
Wow! Where has this little recipe been all my life? It's amazing how two simple ingredients that you have around the kitchen can come together for something that tastes so good. You definitely have to use REAL butter, (not margarine) that's softened and you'll get great results. I used this on bagels, but can definitely see a lot of uses for this stuff and add-ins like orange zest.... Thanks for a great recipe!

Mommy's Banana Bread

Reviewed: Feb. 8, 2012
Fabulous banana bread! Moist, sweet with just enough spice and the cinnamon-sugar crust is a really nice addition - what more could you want from a banana bread? I used half white sugar and half brown sugar and added 2 tsp. of vanilla and used buttermilk instead of regular milk. I topped this with turbinado sugar vs. regular sugar for that little extra "crunch". This smelled wonderful while it baked and tasted even better!

Chocolate Banana Oatmeal Porridge

Reviewed: Feb. 8, 2012
Nice change from plain 'ol oatmeal. And the additional of chocolate for breakfast - yummy! This not only tastes delicious, but happens to be good for you too! I cut back on the sugar a bit (personal preference). I added a little cinnamon and a splash of vanilla. I topped this with some toasted walnuts - so good I almost didn't think it was breakfast!

London Broil, Aged Cheddar and Watercress on Croissant with Horseradish Mayonnaise

Reviewed: Feb. 3, 2012
Wonderful sandwich! Plus it was a great way to use up some leftover London Broil that I had grilled. I didn't bother re-heating the meat in a pan, just assembled the sandwich and had it cold subbing some butter lettuce for the watercress and adding some crisp bacon and thin sliced tomato - delicious!
