Hot Off the Grill Potatoes

Great recipe! There's nothing like something "Hot Off the Grill" and this was no exception. I used a small foil pan lightly sprayed with Pam vs. a foil packet to make things easier. I also used Land O Lakes light butter and I'm sure whatever "butter spread" you use it'll turn out good. This was a nice combination of herbs and all I added was a little minced garlic. I opted out of the bacon, but I'm sure it would be a nice addition. I covered the pan with foil and these were delicious - perfect accompaniment to grilled chicken!

Marinated Barbequed Vegetables

Wow - fabulous recipe! Grilled veggies are so good and this was very easy to put together. It really gave this already vibrant dish a nice herbed flavor. I added a little fresh rosemary along with the basil and I used some red and green peppers, red onion, and cherry tomatoes in addition to the other veggies. I put everything into a ziploc bag along with the marinade, tossed everything to coat and let it go for a couple of hours. I skewered the veggies and basted with the leftover marinade. Very simple and very tasty!

Chicken on a Stick

Delicious and it doesn't get much easier than this! I opted out of the meat tenderizer and used Kraft light Italian dressing. I cut the chicken in to cubes for kabobs and poked it a bit with a fork. I added a couple tablespoons of olive oil, some rosemary, Italian seasoning, white wine and minced garlic. I put everything into a ziploc bag and let it marinate all day. So simple and yet so good!

Chef John's Banana Bread

Fabulous recipe for an all time favorite! And, I must admit I did make this using those last three overly ripe bananas, lol! I doubled the vanilla and to give it a little spice I added 1/2 tsp. of cinnamon and 1/4 tsp. of nutmeg. I also subbed 1 Tbsp. of buttermilk vs. milk. You could do half brown sugar and half white sugar depending on what you have in your kitchen. And, this is great with or without the nuts and chocolate chips! I topped this with a little turbinado sugar before popping it in the oven for a little extra added crunch on top. I baked it at 350 for a little over an hour and just as Chef John states, it's "scrumptious"!

Totally Vegged-Out Burgers

These are great - especially if you're trying to eat healthy! This is packed with veggies and the yogurt mixture really does make this. I did add a little garlic to the mixture vs. lemon-pepper seasoning salt. For some reason I just can't seem to get my husband to try a veggie burger, but I think they're great! I put this on a toasted mult-grain deli flat - YUM!

Dannon Tropical Berry Smoothie

Perfect for a quick and easy breakfast! I froze my fruit first, so no need for a cup of ice cubes. I did cut back on the OJ a bit and used fat free vanilla Greek yogurt. Easy to throw together and tasty!

Fresh Guacamole

Great guacamole - very fresh and definitely on the zesty side! I did cut back on the red onion, used fresh garlic vs. garlic powder and opted out of the Worcestershire and additional hot sauce as a personal preferenc. Great with warm tortilla chips!

Fruit Salsa with Cinnamon Tortilla Chips

Wow! This needs to come with a warning: Highly Addictive! This was a beautiful combination of colors and flavors. And no matter what assortment of fresh fruit you use it's bound to be good so use your favorites and use the recipe as a guide. I added chopped peaches to mine I baked the chips vs. frying to keep this a little healthier and lower in fat. So, for the cinnamon chips I used reduced fat tortillas and cut them with a pizza cutter which made things a lot easier. I sprayed them with butter flavored Pam and sprinkled them with the cinnamon sugar. I baked them at 350 for 8 minutes flipped them and baked them for another 7 minutes. They were crispy, sweet and delicious - next time I would double the amount because they went fast. This got a lot of compliments not only for taste, but for creativity. I'll definitely make this again - great recipe!

Erin's Pico de Gallo

I cut this recipe way back...and eyeballed the ingrediens a bit because of that. This is very simple, but then again that's the essence of pico de gallo. I used a homemade taco seasoning blend vs. a mix and opted for fresh lime juice, adding a little sugar for sweetness.

Calico Rice

Great side dish and a wonderful compliment to Mexican food! I opted to use chicken broth vs. water for a little extra flavor and used half cumin, half chili powder. I also omitted the salt as dry onion soup mix has enough of that by itself. This definitely give plain 'ol rice a lot of pizzaz. It's chock full of veggies making it colorful and the spices make it flavorful. This was fine as is, but a great base for add-ins such as black beans or corn. Very tasty!

Sarah's Easy Shredded Chicken Taco Filling

Definitely easy and not to mention very tasty! I love beef tacos, but chicken is a great alternative. Plus this recipe is perfect for times when you want something simple and quick to put together. I cooked my onion in olive oil vs. vegetable oil and since I had "Seasoning for Tacos" from this site already made I used a little of that for seasoning. Delicious in warm soft or hard shell tacos with all the fixin's - shredded cheese, chopped tomatoes, shredded lettuce, hot sauce and sour cream. Thanks for a great recipe Baker Bee!

Double Tacos

Great recipe and a fabulous combination of crunchy and soft! I followed the submitter's advice for the cooking instructions... I used lean ground beef and for the seasoning I used "Seasoning For Tacos" from this site. I'm not the biggest fan of Velveeta, but my husband loves it and this really worked for this recipe. This was so good with all the fixin's - chopped tomatoes, shredded lettuce, picante sauce, and sour cream! Thanks for a great recipe cwoods81!

Seasoning For Tacos

Great "Seasoning For Tacos"! This is much better than the packaged stuff and so easy to put together! This recipe is perfect as is, but I love to play with stuff so I cut back on the salt, used half regular paprika and half smoked paprika and added some ancho chili powder. Wow! This is a definite keeper and perfect to store in a mini tupperware container along with my other spice mixes to have on hand. Great for tacos, seasoning chicken, throwing into chili or anything else you can think of adding it into that might need a bit of spice!

Caesar Salad Pinwheels

Well, you just can't go wrong with a classic like Caesar salad! And since I love the salad I figured I'd try the sandwich which proved to be just as good. And if you don't have a Caesar Salad Kit on hand you can easily do what I did and use light cream cheese mixed with a little garlic and Italian seasoning, Romaine lettuce, shredded Parmesan and Romano cheeses and add use your own croutons or leave them out altogether. For the Caesar dressing I used "Caesar Vinaigrette' from this site. I made wraps into this vs. pinwheels and since this was more of a meal than an appetizer I added some grilled chicken - YUM!

Rice on the Grill

I would have never thought to cook "Rice on the Grill"... This was a nice change of pace and like many others, I like the concept but tweaked it a little to suite our tastes. I opted out of the mushrooms as well as the ketchup and instead added a little chopped celery and carrots. Overall, very easy and perfect for when you want to cook your entire meal on the grill.

Mom's Beef Shish Kabobs

Simple and straightforward marinade for shish kabobs! I used olive oil vs. veg. along with low sodium soy sauce. For the mustard, I used dijon left out the salt and cut the pepper in half. I reserved some of the marinade for the veggies and marinated the meat all day in a ziploc bag. I skewered the veggies (adding some cherry tomatoes) and meat separate basing the veggies with the reserved marinade. Overall, very tasty!

Chef John's Buttermilk Biscuits

OMG! These biscuits are incredible! They're so "deceptively" easy to make and they come out light, moist, and fluffy. Plus they rise nice and high -what more could you want from a buttermilk biscuit! I baked these on a baking sheet lined with parchment paper and brushed the tops with melted butter during the last five minutes of baking...WOW what a great biscuit!

Chef John's Scones

Wonderful scone recipe - I froze the butter and then grated it into the dry ingredients. I added a little more sugar, as I love a sweet scone. I used half and half instead of milk and after the egg wash topped them off with turbinado sugar for that extra added crunch. This is a great base for add-ins like dried cranberries and white or dark chocolate chips. These come out of the oven beautiful... almost look too good to eat!

Honey Butter Spread

Wow - honey and butter are fine all by themselves, but combine the two and you have something really special! Ya just gotta love when two simple ingredients that you have around the kitchen take your everyday baked goods or breakfast items over the top! You definitely have to use REAL butter, (not margarine) that's softened and you'll get great results. I used this on bagels, but can definitely see a lot of uses for this stuff. Heck, I'll spread this over anything. You can do add-ins like cinnamon or orange zest for something a little different.... Thanks for a great recipe!

Pizza Roll-Ups

Great little recipe! It's perfect for a quick and easy lunch or snack plus it's much better and the frozen stuff. I used lean ground beef and snuck in some veggies - onions and peppers that I sauteed with the ground beef. I also added some garlic along with the oregano for some added flavor. I used "Pasta/Pizza Sauce" from this site and had some extra for dipping - YUM!
