Pizza Roll-Ups

Great little recipe! It's perfect for a quick and easy lunch or snack plus it's much better and the frozen stuff. I used lean ground beef and snuck in some veggies - onions and peppers that I sauteed with the ground beef. I also added some garlic along with the oregano for some added flavor. I used "Pasta/Pizza Sauce" from this site and had some extra for dipping - YUM!

Basic Beef Pizza

Very easy to put together and tastes great! And, while this is very "basic", it's a wonderful base for add-ins to make it suite your tastes. I used half lean ground beef and half sausage. I skipped the salt and sauteed some onion. pepper and garlic along with the sausage and beef. I used pre-made pizza dough and "Pasta/Pizza" sauce from this site then topped the whole thing off with some sliced pepperoni to really make this extra "meaty". Excellent for pizza night!

Perfect Breakfast

I love eggs and I love avocados, so I just had to make this! I sauteed some onion, red pepper and a little garlic and scrambled the eggs. Once the egg mixture was done I topped it over the toast. I used some shredded cheddar cheese vs. Parmesan as I had a little left on hand. I made two of these and mine was fabulous all by itself, but to my husband's I added a couple of strips of bacon to take it over the top (plus it was a good way to get my husband to give it a try)! This really is a delicious combination of flavors and "perfect" for a hearty breakfast!

Mediterranean Bagel Snacks

Delicious sandwich with a wonderful Mediterranean flair! You could easily use pita or bagels - whatever you have on hand to make these little treats. I used "Hummus IV" from this site and added a little feta cheese. I chose not to cut these up, but rather my husband and I ate them as sandwiches. Very easy and very filling!

BLT Crescent Sandwiches

This is definitely not your "run of the mill" BLT! And to say that is really saying something because I've had a lot of them in my lifetime! Combining bacon, lettuce and tomato is just as classic a combination as peanut butter and jelly in my book. But, perk it up with the addition of creamy guacamole and this combination of flavors and textures takes this classic to a whole new level. I used a thick cut smoked bacon, crisp iceburg lettuce, tomatoes seasoned with cracked black pepper, and, "Guacamole" by Bob Cody from this site. I also added a little Hellman's light mayo to take it over the top. Perfect for a quick and easy lunch or weeknight meal and great paired with tomato soup!

"Spa"ctacular Frozen Grapes

"Spectacular" little recipe! Ya just gotta love it when a few items you have laying around the kitchen turn into something a little extra special... I've frozen fruit before, but never grapes. And while they're delicious with or without sugar - that addition gave regular 'ol grapes a little pizzaz. I did use less sugar than called for and opted for Spenda which made the amount even less. This was so easy and tasted oh so good - very nice little treat without any guilt.

Grilled Turkey Reubens

Nice take on the traditional "Reuben" sandwich, one of my favorites! Plus it's quick and easy to put together. Since homemade dressing is a sinch to make to make I opted for "Creamy-Style Russian Dressing" from this site vs. using mayo and hot sauce. I also used low fat Swiss cheese and these were delicious- a definite keeper and one I'll have to remember for Thanksgiving leftover turkey!

Reuben Roll-Ups

While there's nothing quite like the classic "Rebuen Sandwich" this definitely makes for a quick and easy alternative and a nice appetizer. Plus it's a lot less messy held together in a roll-up! Instead of pizza dough, I used crescent rolls. I also used a homemade dressing - "Thousand Island Dressing" by Darlis Wilfer from this site and had enough left over for dipping. Very tasty and a nice take on the famous Reuben!

Venia's Tuna Salad

Nice take on tuna salad and great for a low-carb light meal! I loved the concept, but I did change this up as I thought the amounts of the ingredients listed might be a bit much. For a 6 oz. can of tuna I used about 2 Tbsp. of Hellman's light mayo, 1 Tbsp. of chopped celery, 2 tsp. of chopped red onion, a little garlic powder, salt, pepper, and a splash of red wine vinegar. I let that chill while I hollowed out a large tomato and made a bed of lettuce on a plate. I then spooned the chilled tuna salad inside the tomato and served it with a couple slices of melba toast. This turned out to be a really good low fat lunch that I didn't have to feel guilty about!

Buttermilk Strawberry Shortcake

What a simple, easy, and delicious dessert! I had some buttermilk I had to use up and this was just perfect. For the shortcakes, I froze the butter and grated it which is much easier. After dropping these onto a baking sheet lined with parchment paper and did an egg wash (one egg well beaten with 1 Tbsp. of water) and then topped it off with the turbinado sugar which provided a nice little crunch. These baked up beautifully and tasted wonderful. I served them with "Easy Whipped Cream" from this site. This recipe is a definite keeper!

Simple Strawberry Sauce

There's nothing quite like fresh strawberries and if I had a penny for everytime I made this, well...let's just say I'd have more than a dollar! Sometimes the simplest recipes are some of the best and you can easily sub Splenda for the sugar and get great results. This is perfect over shortcake, pound cake, ice cream, pancakes, and waffles - the possibilites are endless.

Basil Tomato Soup

There's nothing like homemade tomato soup and this was no exception. I started off knowing I didn't want a creamy soup - just a plain tomato basil soup so I started out knowing I wasn't going to be putting the butter or cream in... I did add 1 Tbsp. of minced garlic, 1 tsp. of vinegar, 2 tsp. of sugar, along with some salt & pepper. This was done in no time and it was delicious - perfect with grilled cheese!

Grandma's Italian Grilled Cheese Sandwich

There's just something about ooey, gooey melted cheese between a couple of slices of cripy bread... I LOVE grilled cheese and this is a nice twist with a bit of an Italian flair! This was so easy and so good! I opted to sandwich some mozzarella cheese slices in between with some thin sliced tomato and fresh basil to take the already awesome recipe over the top! Thanks for sharing a great recipe rae!

Hummus IV

OMG! Who would've thought a little can of garbanzo beans could transform into something so delicous! It doesn't get easier or much simpler than this! I cut the recipe in half and put everything into a mini food processor, used a little sesame oil as I didn't have any tahini and just back just a bit on garlic. I also added in the reserved bean liquid as needed along with just a splash of lemon juice vs. the whole amount. I served it topped with a bit of paprika and surrounded by homemade pita chips - YUM!

Garlic Pita Bread Bites

Delicious! In fact they're so good, it's hard to eat just one! I did opt for olive oil vs. butter, but WOW were these good. You could eat them all by themselves but we dipped them in "Hummus IV" from this site which took them over the top. My only caution is watch your baking time as they can burn easily. Overall, a definite keeper!

Greek Salad with Spinach & Feta Chicken Sausage

Great salad with a delicious combination of textures and flavors giving it a nice "Meditteranean" flair! I wasn't able to find "Spinach and Feta" chicken sausage so I opted for the "Roasted Garlic" version by al fresco instead. I used cherry tomatoes and drizzled some "Absolutely Fabulous Greek/House dressing" from this site over top. I never thought sausage in a garden salad would be so good!

Banana Berry Smoothie II

Great smoothie! I love the combination of strawberries and banana. I froze my fruit and used fat free vanilla greek yogurt and skim milk. I did cut back on the skim milk a bit to get it to the consistency I wanted. This was perfect for a light breakfast that was a breeze to make!

Delicious Ranch Dressing

This definitely is a "Delicious" ranch dressing! And just as the submitter states, the fresh herbs really do make it stand out. I'm used to ranch dressing recipes that call for a mix of mayo, buttermilk, and sour cream but this was a pleasant surprise as I didn't have any sour cream on hand. I opted for low fat buttermilk and Hellman's light mayo - I think any mayo you use would be fine. I also subbed dill for the cilantro and wow - perfect over mixed greens!

Roasted Garlic Chicken Sausage Caesar Salad

Delicious and a nice twist on traditional Caesar salad! Who knew chicken sausage could be low in fat and tasty? I must admit I was a bit skeptical about adding sausage to salad, but it was a pleasant and surprising change of pace. I grilled the sausage vs. frying and opted to use sun-dried tomatoes vs. cherry. I added some croutons and shredded Parmesan for a little added flavor - what's a Caesar salad without those... For the dressing I used "Caesar Vinaigrette" from this site. This is very easy to put together and perfect for a quick and easy lunch or weeknight dinner.
