Grilled Deli Sandwiches

This definitely is "an outstanding sourdough sandwich"! The combination of veggies, meats and cheeses is delicious. I cut the recipe in half and it's definitely worth the time to make. I sauteed my veggies in olive oil vs. veg. I toasted the bread first before layering the sandwich and topped it with "Garlic Aioli" from this site. This definitely isn't for those counting calories, but once in a while you have to splurge. The is most certainly filling so all that was needed on the side was a dill pickle - YUM!

Chocolate Banana Bread

I love bananas and chocolate combined, so I had to give this a try....it was so moist and so delicious - a really nice take on traditional banana bread! I cut the recipe in half and used half white sugar and half brown sugar. I added an extra banana, subbed non-fat plain yogurt for the sour cream, kept the cocoa powder at 1/4 cup and to enhance the chocolate flavor I added 1/2 tsp. of vanilla and 1/2 tsp. of salt. It smelled wonderful and tasted even better!

Crispy Breakfast Quesadilla

So easy and so delicious, plus by using Egg Beaters it lightens it up a lot. You can put just about anything in a tortilla and it's bound to taste good. I used the Southwestern flavor and light Cheddar cheese. You could easily sub your favorite breakfast meat, but I stuck to the recipe and used ready to serve bacon. For some reason, I just couldn't get myself to use the jelly or jam. Instead I served this with homemade salsa and a side of light sour cream. Perfect for breakfast with a side of fresh fruit.

Peanut Butter Banana Smoothie

Since the combination of bananas and peanut butter in a smoothie intrigued me I decided to give this a try. I LOVE peanut butter and could eat it by the spoonfuls...(too bad they don't make a fabulous fat free version). Just as the submitter states it's refreshing and tasty! I froze my banana so I only used a little ice and to lighten this up I used skim milk (a bit less than called for to get the desired consistency) along with reduced fat peanut butter. Not only is this good, but it's good for you too and perfect for breakfast or a nice snack!

Baked Meatball Sandwiches

Very simple and perfect to throw together for a weeknight meal. The meatballs were simple to make and turned out very good. I used Italian style bread crumbs and added a little more Parmesan cheese. I didn't use jarred sauce - sorry Classico... I used "Best Marinara Sauce Yet" that I froze just to keep on hand to thaw for occasions just like this. I put the rolls under the broiler and then assembled the sandwich. My husband loved these!

Sweet Grilled Chicken Sandwich

Very easy and very good! This definitely is a nice change of pace from plain 'ol grilled chicken and has a nice Asian flair! I threw the chicken and teryaki sauce into a ziploc bag and added just a little fresh garlic and sesame oil. I let that marinate for about 4 hours. I used fresh pineapple vs. canned and the grilled pineapple complimented the teryaki flavor very nicely.

Gramma Bertha's Banana Cake

Wow Gramma Bertha - this is one heck of a banana cake! This definitely IS a cake which is fabulous because sometimes banana cakes tend to taste more banana bread. This recipe is so easy to put together and doesn't require a lot of ingredients - nothing fancy, just plain good! I used 1 cup of white sugar and 1/2 cup of brown sugar and like most others I smashed my bananas vs. slicing. I also added 1 tsp. of vanilla and 1/2 tsp. of cinnamon along with a 1/2 tsp. of salt. And to take an already delicious cake over the top I added a whole bag of mini-chocolate chips! It was done in exactly one hour and turned out moist, tender and delicious! No icing needed, just a dusting of confectioners' sugar over top once it cooled. Thanks for sharing your Gramma's recipe LISAPAV!

Lemon Blueberry Yogurt Parfait

This definitely is an easy and delicious treat for breakfast that not only tastes good, but is good for you too! I love berries and yogurt so this was right up my alley and the lemon and blueberry flavors complimented each other nicely. I used a low fat lemon flavored greek yogurt and added a little lemon zest to pretty it up a bit. You could easily sub wheat germ or granola for the graham crackers. This is a light and refreshing treat for any time of day that you don't have to feel guillty about! Thanks for a great recipe Linda (LMT)!

Easy Black Bean Taco Salad

Definitely easy and tasty! This does make for a simple weeknight meal. I used lean ground beef and "Taco Seasoning II" from this site and didn't bother with the water, just seasoned the beef and browned it. I de-seeded a few plum tomatoes before dicing and used a light Mexican blend cheese. I added some chopped black olives and green onion for a better presentation and cut back on the sour cream and chips using just enough for each salad. To lighten it up a bit I used light sour cream and baked chips...

Yummy Guacamole

Yummy! This was smooth and creamy with just the right amount of flavor - nothing artificial, no jarred salas or other oddities to make it some sort of "creation". I cut the recipe in half to give it a try. I de-seeded the tomatoes, used one jalapeno, a few pinches of kosher salt, opted out of the black pepper and added a little more than 1/4 tsp. of cumin - it went great with warm tortilla chips and ice cold margaritas!

Great for parties, but a bit on the strong side! Use good quality tequila or you're gonna be in for a headache... After cutting back on the tequila and using crushed ice this was pretty good.

Amish Macaroni Salad

My husband LOVES Amish Macaroni Salad which is typically very sweet and saturated with dressing. I gave this a try and am so glad I did! This most certainly is colorful and flavorful. Like others, I cut back on the sugar (a little over 1/4 cup) which was a good idea. I used a vidalia onion finely chopped and half light Miracle Whip and half Hellman's light mayo. I also added an additional hard boiled egg. This definitely needs to set overnight so the dressing can get soaked up a bit by the macaroni but otherwise excellent!

Spicy Chipotle Turkey Burgers

These turkey burgers were delicious and just as the submitter states "spicy, yet wonderful"! I used minced garlic vs. powder, vidalia onion and cut back on the onion powder and seasoned salt. I also added 1/2 tsp. of smoked paprika for a little flair. These came out moist and full of flavor. I served these on toasted 7 grain rolls with fresh crisp lettuce and thin sliced tomato - YUMMY!

Brunch Scones

Wonderful scone recipe - I froze the butter and then grated it into the dry ingredients. I also added a tsp. of vanilla and an additional Tbsp. of sugar, as I love a sweet scone. I used half and half instead of milk and after the egg wash topped them off with turbinado sugar for that extra added crunch. These are delicious with currants or raisins and a wonderful base for add-in's like dried cranberries and orange zest or mini chocolate chips. Delicious, light and moist - perfect with a cup of tea!

Margaritas on the Rocks

Oh yum! I love the frozen version of a margarita, but this was even better! I cut the recipe in half and boy is this strong. Be careful, because these do go down easy and are perfect for when you've had "one of those days"...

Salsafied Chicken and Rice

Simple, quick, and delicious! Everything in one pan for easy clean-up which was a plus. I needed something easy for a late night supper for me and my husband and this was perfect. I did season the chicken with "Taco Seasoning II" from this site before browning. And I used Ortega's Thick and Chuncky salsa - a bit more than called for actually. This was done in no time at all! I used a Mexican blend cheese and to make the presentation a little better I chopped some green onion and sliced black olives on top and served with a side of light sour cream. This has to be one of the easiest meals I've ever made off of this site!

Hot Off the Grill Potatoes

Great recipe! There's nothing like something "Hot Off the Grill" and this was no exception. I used a small foil pan lightly sprayed with Pam vs. a foil packet to make things easier. I also used Land O Lakes light butter and I'm sure whatever "butter spread" you use it'll turn out good. This was a nice combination of herbs and all I added was a little minced garlic. I opted out of the bacon, but I'm sure it would be a nice addition. I covered the pan with foil and these were delicious - perfect accompaniment to grilled chicken!

Marinated Barbequed Vegetables

Wow - fabulous recipe! Grilled veggies are so good and this was very easy to put together. It really gave this already vibrant dish a nice herbed flavor. I added a little fresh rosemary along with the basil and I used some red and green peppers, red onion, and cherry tomatoes in addition to the other veggies. I put everything into a ziploc bag along with the marinade, tossed everything to coat and let it go for a couple of hours. I skewered the veggies and basted with the leftover marinade. Very simple and very tasty!

Chicken on a Stick

Delicious and it doesn't get much easier than this! I opted out of the meat tenderizer and used Kraft light Italian dressing. I cut the chicken in to cubes for kabobs and poked it a bit with a fork. I added a couple tablespoons of olive oil, some rosemary, Italian seasoning, white wine and minced garlic. I put everything into a ziploc bag and let it marinate all day. So simple and yet so good!

Chef John's Banana Bread

Fabulous recipe for an all time favorite! And, I must admit I did make this using those last three overly ripe bananas, lol! I doubled the vanilla and to give it a little spice I added 1/2 tsp. of cinnamon and 1/4 tsp. of nutmeg. I also subbed 1 Tbsp. of buttermilk vs. milk. You could do half brown sugar and half white sugar depending on what you have in your kitchen. And, this is great with or without the nuts and chocolate chips! I topped this with a little turbinado sugar before popping it in the oven for a little extra added crunch on top. I baked it at 350 for a little over an hour and just as Chef John states, it's "scrumptious"!
