Fiesta Stuffed Peppers

Tasty. I actually cooked the meat first (because I didn't read the directions right) so I only had to bake them for 30 minutes. I also topped them with cheese and then added more salsa and a little sour cream once they were cooked. Very good.

Delicious Black Bean Burritos

My favorite thing about this delicious recipe is the leftovers the next day...I like to dip tortilla chips into the mixture and eat it like queso. YUM!!!! (Burritos are great too, and we also like to make them as quesadillas!) :)

Fettuccine with Sweet Pepper-Cayenne Sauce

Delicious! Very tasty for such an easy recipe. I added sweet onion and a splash of white wine to the sauce, and topped off with crumbled bacon and a little more parmesan cheese. Served with warm Rosemary bread. Will be a regular in our home. Thanks.

Cha Cha's White Chicken Chili

This was really good. I wanted a bit creamier version so I substitued one cup of cream for the broth and it was great (makes a huge pot so I wasn't too worried about the extra fat content). **Warning** this is spicy! My husband and I love spicy and I only used 1/2 the cayenne based on other reviews...it was almost too much. I would cut down the jalapenos and cayenne if you don't like too much kick. Otherwise, great meal served with warm cornbread or rolls. Thanks!

Winter Fruit Salad with Lemon Poppyseed Dressing

Awesome! After reading some reviews, I decided to make this salad exactly as called for. There are so many feta/apple salads out there...I love the concept of cashews and swiss cheese. The dressing is refreshing (a bit like lemonade). Thanks for a keeper!

Cobb Salad

This is a hearty salad. I added a few cashews to it and used the ranch dressing you make (adding buttermilk and mayo to it). My husband gobbled it up.

Bacon and Tomato Cups

I would've given this 4 stars but since my husband loved these, I gave it a 5 (he is hard to please). I made them in a large muffin pan (to make the portions bigger) and we had them for dinner with a salad. I thought it was good, but would add less mayo and possibly some blue cheese dressing next time. Worth making again and experimenting.

Cajun Style Baked Sweet Potato

Love this recipe. I like to chop the sweet potatoes up into chunks and pour the seasoning all over it and roast it that way. This marinade is also good on other vegetables...red peppers, red onion, potatoes, asparagus, etc. Good Stuff!

Salsa Chicken

I made 2 great meals out of this. For sake of time, I used canned shredded chicken and I put the chicken, seasoning and salsa in the crockpot and cooked it for a few hours. I put it on tostadas and added the cheese and sour cream to it, along with some beans. The next night, I made tacos out of it, used corn tortillas and added some avocado. Awesome, easy recipe that can be so versatile.

Mustard Sauce for Ham

Very good. I served this as a dip with our ham and swiss melts. Tasty. I haven't heard of tarragon vinegar so I used white vinegar and added some tarragon to the sauce. Turned out great. Will be in my keeper list. Thanks.

Chocolate Peanut Butter Cup Cookies

Followed Looders popular review by using 1/2 butter, 1/2 crisco, 1/2 lt. and 1/2 dk. brown sugars, less cocoa powder and mini peanut butter cups. I was taking this to a potluck and made them as bars instead (put them in a glass 13x9 pan and baked for 20 minutes). Were full of flavor and very chewy and moist...everyone raved. I give them 5 stars for that (I thought they were a little on the sweet side and would've given them 4). Great party dish.

I have been making these for years and they are so versatile as far as what you can put in them. My personal favorite is to add chopped ham or turkey slices with jalapeno (canned jalapenos work great). So tasty with a nice kick!

Apple-Banana Oatmeal

I thought this was great. It only takes 5 minutes to make and it's very healthy. The brown sugar isn't necessary because the fruit sweetens it naturally (I dumped some on the first time I made it and it was way too sweet). I do use a little extra cinnamon, golden raisins, I top it with more banana, and I like to use steel cut oats if I have a batch already made up. Thanks for a tasty and healthy breakfast!

Pizza Dip

Excellent recipe..been making it for a long time. I like to add sour cream to the cream cheese mixture, 1 tsp of oregano and 1/2 tsp of cayenne pepper, which gives it a little kick. Great with chips and toasted baguette slices.

Artichokes

I just put all the seasonings in the water (or sometimes I'll use chicken broth) with a little olive oil, garlic and onion powder, a bay leaf, lemon juice, a little parsley, a splash of white wine, and then steam them. I love dipping them in blue cheese dressing. Yum! My husband doensn't like to eat vegetables but he loves these!

Banana Pudding IV

This didn't last long at the party I brought it to. I used a small package of vanilla pudding and 1/2 of a small package of butterscotch pudding with just 2 cups of cold whole milk (instead of 3). Great flavor! Makes a lot!!!
