Grapefruit and Avocado Salad

I enjoyed this...It was a nice change from your typical salad. I added a little thinly sliced red onion to balance out the tart. Next time I might add a little Feta or Goat Cheese. A little of this goes a long way so keep that in mind when making the full amount..I think it serves more like 12 people.

Butternut Squash Soup

Incredible. Served with dried apple chips on top and sourdough bread for dipping. Was very rich and hearty (and I used low-fat cream cheese). Great for a cold night.

Pumpkin Chocolate Chip Cookies III

These are pretty tasty but I hate getting near the end of the batter and there are no chocolate chips left! If/when I make these again, I will use 3 cups of chocolate chips and definitely make with the nuts. Also, I will sandwich these with vanilla ice cream and freeze for a heartier treat! Yum!

Super Seven Spinach Salad

I really enjoyed this salad. I think the red onion was a little overpowering (and I love red onion in my salads) so I would cut back on the amount next time. I also made my own poppy seed dressing (altered it a tad from Poppy Seed Dressing III from this site): 1/2 cup mayo, 1/2 cup milk, 1/3 cup white wine vinegar, 1/3 cup + 1 tbsp. sugar, 1 tbsp. poppy seeds (you'll have some leftover to refrigerate!) I would also add some avocado next time (Yes, there will be a next time!)

Four Cheese Macaroni

Very good! I eliminated step 2 and just added the butter to the hot pasta and stirred for about 30 seconds until it melted (saves having to clean another pan!) I also added breadcrumbs to the top for some crunch! Served with some veggies and crusty bread. Tasty meal!

Ranch Burgers

These were very flavorful and moist...I used the whole Ranch package for 1 lb. of beef and used 1/2 package of dry onion mix...it was very salty though so next time I think I'd just use 1/4 package or use fresh onion like the recipe states. I also added some shredded cheddar cheese to the mix. I caramelized some onions to top them off with...very good!

No-Cream Pasta Primavera

Loved this healthy dish. I used whole wheat penne and because my husband won't eat a veggie-only dinner, I sauteed Cajun Chicken Sausage in some dry sherry along with the onions and garlic. I also used fresh Parmesan/Reggiano and added it to the pasta as well as on top. Delish!

Luscious Slush Punch

Very tasty! I froze Sprite in small ice cube trays and added that to the punch as well as garnishing it with orange slices. It was definitely a hit!

Absolute Mexican Cornbread

Really tasty! I used the whole can of green chiles without draining them (we love them) and we served this with the Boilermaker Tailgate Chili on this site. Very good and will definitely make again!

Yummy Quiche

I made this on a whim one day and didn't have a pie crust...so I made it as a casserole instead. I did saute the onion, personal preference, and also to make a "crust", I added about 5 slices of bread cubes to the top, drizzled with butter and sprinkled with paprika. It was great. I'm sure the quiche version would be just as tasty! I even got asked for the recipe! Thanks for sharing!

Broccoli Cheese Soup

Very good (and rich). I used fresh broccoli so I pureed it once it was cooked (with the broth/onion mixture). I also used half & half. Makes a huge pot of soup.

Balsamic Cream Sauce

This sauce is full of flavor. I made 2 batches...one was served over tortellini and husband devoured it. The second was served with whole wheat pasta, broccoli, chicken, sundried tomatoes & fresh corn cut from the cob. Both were great!

Award Winning Chili

Delish! My husband and I loved this. I think the steak sauce & wine give it that extra yum flavor. I used chili beans with jalapenos for a nice kick. Will be in my keeper list. Thanks.

Gorgonzola Pear Pasta

This is definitely a 5 star recipe because it took a whole 20 minutes to make and it was so full of flavor (my husband couldn't stop eating it.) I used a 1 1b. bag of whole wheat penne pasta, a 5 oz. container of gorgonzola and doubled the rest of the ingredients, with the exception of the pear which I tripled. I also used half & half only because that's what I had on hand. It was delicious. This will be in my keeper box. Thank you.

Lemon Cream Pasta with Chicken
