Sweet Potato Biscuits

I thought this was a good base recipe. I did substitute Buttermilk for the milk and added some sharp cheddar cheese & chives to the mixture. I also used butter and not shortening (just personal preference!) They turned out fabulous. I served them with thick cut ham slices and apple butter! Yummy!

Extra Easy Pumpkin Cookies

I used Pumpkin Spice Kisses to top them off which made them very pretty! I also rolled them with sugar before baking them (they are very sticky so I used 2 spoons to scoop and shape them, as well as dipping them in the sugar! Didn't have to get my hands sticky this way!) These are an easy and fun fall cookie. I'm not sure why there is any confusion...these are cake mix cookies so they will have a cake-like texture (not your normal "cookie" texture but more of a sponge-like feel to them!) I like them cold from the refrigerator!

Oatmeal Chocolate Coconut Chewy

I added a little less oatmeal and a little more coconut, just personal preference, and I made a batch with chocolate chips and a batch without. While they were tasty both ways, I liked them best without (could really taste the brown sugar and oats, YUM!) Great recipe! Really loved the coconut concept!

Creamy Twice-Baked Potatoes

These were SO good! I was licking the bowl and couldn't stop snacking on the filling. I baked 4 potatoes, took out the filling of all 4, but only used 2 potatoes to fill back up (so that the filling would be nice and thick, piled up high!) I also threw in a small handful of sharp cheddar cheese after mixing it together. Oh, I completely forgot to add the butter...it doesn't even need it! It's so rich from the cream cheese you won't miss it! You could add additional toppings like bacon and sour cream if you want to go the extra mile, but again, it doesn't even need it! Tasty!

Truck-Stop Buttermilk Pancakes

I give these 5 stars because of the texture...they were perfect, fluffy pancakes! I would however add a little more sugar next time to sweeten them up a bit more! I like to eat them hot off the griddle with some butter and I tasted mostly the buttermilk (not sweet enough to eat without syrup!) I also added vanilla, which I always do for pancakes. I cut the recipe in half and it still made a huge batch! Overall I thought it was a good recipe but would tweak it a tad next time (a little less buttermilk, a little more sugar!)

Whole Grain Breakfast Cookies

Fantastic "cookies" especially if you have kids! I did add 2 ripe mashed bananas (which was great because you couldn't even taste them and it added some fresh fruit to the breakfast) and used peanut butter. I added a few extra chocolate chips but wouldn't do that next time...didn't need it! I like to freeze them and have them on hand for a quick breakfast or snack! Great recipe to play with...next time I'm going to try using cinnamon chips.

Cheddar Bacon Hamburgers

These are the only burgers I make now. I follow the recipe exactly with the exception of using fresh cooked bacon vs. bacon bits. Always gets rave reviews. We like to serve it with sauteed red onion and avocado, but the meat is so flavorful, you could eat it with just a bun (or as a protein burger!) YUM!

Banana Crumb Muffins

So very tasty! I used 1 cup of flour and 1/2 cup of oat bran (and about 2 tbsp flax seed). You wouldn't have known the difference and I felt better about my boys gobbling them up! Great recipe!

Amazing Oven Roasted Potatoes

I was looking for a lighter potato recipe and this turned out nice! I added a little less salt then called for, and added some dried rosemary for a little extra flavor. I had to add a little more olive oil halfway through cooking so they didn't get too dried out, but they ended up delicious! Easy, healthy side dish!

Grilled Sweet Potatoes

I put my potatoes in the microwave for a bit to soften them before grilling them. Only took about 10-15 minutes this way. I also placed them directly on the grill (not in foil). This gave them a nice charred taste (and look!) I would use a little less brown sugar next time. They were a little too sweet for a grilled entree (I love them sweet cooked in the oven but not on the grill!) Definitely a fun dish to make!

Tomato-Cream Sauce for Pasta

I made this on a whim so I wasn't able to shop for all the ingredients...however it turned out fabulous! Probably our favorite sauce recipe yet!! All I had on hand was a can of diced tomatoes with jalapenos (which was great because we love a good kick) and I didn't have heavy cream so I used cream cheese instead (all I had!) I did everything else as listed. It was phenomenal! My husband about licked the bowl clean! :)

Macaroni and Cheese with Caramelized Onions and Bacon

My husband and I both enjoyed this. I used 2% Sharp Cheddar Cheese (because that is all I had on hand) and light Sour Cream. While I am not a low-fat cook, it was so flavorful with the bacon and onions, that I would use lighter cheese and less butter next time as well. Definitely add more bacon. I served it with Roasted Asparagus. A good comfort food meal and nice change from your typical Mac & Cheese dish. Oh, it definitely takes longer than the said 20 minutes to prepare. I think it took me about 45-50 minutes.

Candied Carrots

Very tasty. I just steamed a pound of baby carrots (uncut), then sauteed them in the butter/sugar mixture. We gobbled them up!

Spicy Sweet Potato Salad

Very good. I would add another jalapeno next time (could barely taste the 1) and I added celery for crunch. I think it's important to use a good brand of curry...it will make or break the salad. Good stuff!

Loved this! I used 3/4 cup of whole wheat flour (and then 1 1/4 cups white flour) I added a tbsp. of brown sugar and a little extra vanilla. My boys gobbled them up!

Butternut Squash Soup with a Kick

Amazing recipe. I love the kick but would definitely add 2 jalapenos next time (was very mild with just 1.) I used heavy cream in place of the evaporated milk only because it's what I had on hand (and it was delish!) I also like Dried Apple Chips on top for garnish. Going in my recipe box. Yum-O!
