A Giant YUM! I doctored this a bit....followed other reviewers suggestions. 1/4 tsp. of cayenne was plenty for zing - but not bite. I used a whole can of fat free chicken broth and slow simmered 1/2 of a large sliced sweet onion with 1 red pepper, 3 cloves of minced garlic, artichoke hearts quartered and drained (canned in water) and simmered until soft. Actually had to add some water towards the end - my veggie cooking had become more like broth. I added Paprika, dried Basil, Parsley, and used cut up cooked chicken from Costco in the sauce at the very end. This was amazing! Used it over Rotini noodles.
Cannot wait to try this again. Hubby LOVED it - said it tasted like something he would order in a restaurant. I want to add broccoli, sun dried tomatoes, summer squash, more garlic, more onions, carrots and serve it under BBQ'd chicken breasts or grilled salmon.
