Foolproof Rib Roast

Even better if you pack the roast the day before in Montreal Steak Seasoning - pack it completely! Drop to room temperature and cook! YUM!

Hummus III

Used two whole cans of garbanzo beans and saved a little water from one to thin things out. Up'd the garlic to 4 cloves (yum) and sort of eye-balled everything else to makes sure I had plenty of flavor for using two cans. Very good, super easy and fast. I didn't mince the parsley, just tossed it all into the food processor! So good! Thanks for a great recipe!

Pumpkin Pie Bread

Followed other reviewers suggestions of reducing the white sugar a little and mixing brown and white sugar. I used 1/2 cup unsweetened apple sauce and 1/2 cup oil. Added a REALLY ripe banana and more pumpkin pie spice + cinnamon. Beautiful outcome, but you can definitely taste the apple element. Would make it again.

The Best Steak Marinade

I followed the suggestions of other reviewers and eliminated the extra salt, but followed all else as written...maybe added more garlic - but that is my thing! I had four large Top Sirloins and mixed the marinade and put it in a 2 gallon baggie with the steaks for 2 1/2 hours. Was wary it would be too strong per other reviews! I will definitely make this again, but will marinade for at least 4 hours. 2 1/2 was not enough time....it left me wanting more marinade flavor. Really good marinade. Both DH and I said, "Yum!"

Salsa Chicken

This was just okay for me. I cooked it in the crock pot and followed the directions of other reviewers who said it was amazing. Kinda reminded me of cafeteria food. It would be 3.5 stars. It was fine. Not good or bad. It was a dinner on the table. Won't make it again. One thing I did like was the Taco Seasoning in a baggie to coat the chicken. I think I would do that again on chicken cubes, make skewers and then bbq them for a mexican flavoring. Salsa chicken was fine. Nothing great!

Beet and Pomegranate Salad

Followed the directions to a "T" and had some problems. At the 1/2 hr time - there was very little liquid in the bottom of my bowl of marinade. Marinaded another 15 minutes (hoping for more liquid) and used a slotted spoon to remove the beets and garlic. Only 1/4 cup of liquid strained out. I thought I did something wrong and put the beets/garlic in a strainer over a bowl to try for more liquid because the recipe indicated it would be more than 2/3 cup.. Ended up with 1/3 cup total liquid. Pressed on and mixed it with the mayo/dill/pomegranate seeds. It is VERY Pink. If you love beets - this would be terrific. I like beets very much. I liked the marinade. I did not care for the pomegranate seeds in the salad. I keep having to remove seeds from my mouth and am being very careful chewing it. Boiling the beets, cleaning them, marinading them, mixing them.....a lot of work for one small side dish. I did like the marinade very much and would try that again.

Black Magic Cake

4.5 stars. It is good - but not the best cake ever. I would make it again for a more gourmet crowd. My men like their cake plain. The Coffee gives it an interesting taste. It looks beautiful and smells great. Over all....very good!

Amy's Chocolate Chip Cookies

Used Butter instead of Margarine. Everything else was exactly as written. OMG! New favorites. I had also baked a Black Magic Chocolate Cake (AR Recipe/birthday cake needed) and topped it with Pro Ganache from this site. Had extra Ganache and dipped some of the cookies 1/2 way into the Ganache. My men are in love!

Creamy Italian Chicken and Orzo Skillet

Like to make my own sauces - "BUT" had a serious coupon for this cream cheese Italian mixture, so I bought it. It would be fantastic as written, as the Cooking Creme is very tasty, thus the five stars. I am a "tweaker" - so this is what I did - if it inspires you to walk on the wild side and veer off the directions. I did it as a one pot meal. Little butter and EVOO to saute lots of veggies (Zucchini/Red Onion/Mushrooms/Sun Dried Tomatoes/Yellow Squash/lots of garlic and chopped tomatoes. Saute until lightly browned. Remove from pot and set aside. I didn't wash the pot. Using whatever was still in the pot (not much) I browned a whole box of Orzo in Butter (2 T.) until it browned lightly and then added a full box of chicken broth and cooked it down until it puffed (25 minutes) Added Cream Cheese Italian blend and mixed until Orzo was covered and then tossed back in the Veggie mixture and mixed. Served with a Salad. The whole family loved. Little kids would like this too. I also added red pepper flakes - which you could not do - because I wanted a little zing!

Bacon for the Family or a Crowd

Just cooked up a pound of regular cut bacon. Started out at 7 min at 350. Opened oven to turn it - wasn't necessary. Cooked another 7 min. Not cooking fast enough. Still did not turn it. Up'd oven to 425 and set timer for another 7 min. No turning and no draining - set another 7 minutes. 28 minutes total - perfect bacon. This is a keeper. It would be great to cook bacon this way if you are timing it to be ready with other dishes. Bacon is brown, moist and perfectly flat! Thanks!

Chocolate Ganache S'mores

Teenagers (6 of them; 15-19 years old) rated this 10 stars. I didn't taste it - it looked like a cavity in the making and I don't like marshmallows. They ate the 13X9 tray in an hour. Not kidding! I used different sizes of marshmallows because I thought that would make it visually interesting. DO NOT TAKE YOUR EYES OFF IT when it is under the broiler. 1 minute is too long to brown marshmallows. Re-reading recipe today, I realized I forgot the cinnamon. Did not matter to the boys. Good, fun, recipe! Thanks and I took two pix to document it!

High Temperature Eye-of-Round Roast

Packed this roast in Montreal Steak Seasoning (spice jar from Costco) and put in a large baggie for 3 hours. Dropped to room temperature and then followed the directions and the suggestions of other reviewers. I left my gas oven off for 1 hour after cooking it for 7 min a lb. and then turned the oven back on to 185 for the last 1 1/2 hours. Let it rest out of the oven on the stove top and then sliced super thin. Had a great dinner and wonderful sandwich meat for the next day. Served with a Red Tomato/Blue Cheese/Italian Dressing Salad and it was the perfect summer meal. Where was this when I was driving my kids to baseball/football etc. practices! Will become a staple!

Banana Chocolate Chip Dessert

I had high hopes for this as an alternative to my constant Banana Bread. I pulled it out of the oven and had workers at my house. They each ate a big piece. My family came home - tasted it and said; "Don't make this again". Tried serving it to neighbors who stopped by. They ate part of the serving and left it. I asked them if they wanted to take any home - they said; "That is okay - thanks anyway!" Won't be making this again. Sorry.

Banana Banana Bread

4 1/2 Stars. I used 7 very ripe mashed bananas to reach the 2 1/3 c. requirement of bananas. Cooked for almost 75 minutes - I kept checking it and it wasn't clean toothpick ready - but I had added chocolate chips per other reviewers suggestions. I added Apple Pie Spice (Hearty Tsp!). Everything else the same. 12 year old gave it a thumbs up. 16 year old said it wasn't sweet enough! Learned from another reviewers suggestion to not use two whole eggs when they are XL Eggs. That really helps! Good recipe - but uses A LOT of banana for only one loaf! Would make this again. It is a healthier version of Banana Bread than my other Recipe!

Hubby said, "4 1/2 Stars add more sugar to the dough" Kids said "5 Stars"! I followed the other reviewers suggestions and did 3 teaspoons of Baking Powder (no Tartar in pantry). Took the great suggestion of putting Cinnamon/Sugar Coating in a gallon sized baggie (you can put your whole hand in to retrieve) - that worked fantastic! I scooped the dough with the melon baller and dropped on parchment. When I was done scooping, I made little balls and filled the Cinnamon Sugar Baggie with a batch of balls and then removed and put on the tray. Everything else was the same as stated in recipe. 8 minutes cook time on parchment paper and immediate removal from pan to cooling on tile counter and they came out great. Melon Ball scoop netted 60 small cookies. The family is eating them so fast I would double the batch next time! Good cookie. Smells amazing and would make it again! 16 year old asked that I make them "bigger" next time. One other suggestion from a reviewer - I only buy XL Eggs. I cracked one egg and only used the yolk and used 1 whole other egg. I think that is why some of my other cookies have gone flat. Never thought about the size of the eggs. I learn from this site everyday! Thanks everyone!

Spinach Brownies

Delish! Used 12 oz. fresh mozzarella cheese, 16 oz frozen spinach (not chopped) 1/4 cup butter as suggested by other reviewers. Mixed 1/2 WW Flour and 1/2 AP Flour. Small onion chopped that I nuked in the microwave with the butter.Added granulated garlic and fresh ground pepper. Did I say DELISH? I will use this for an appetizer for 4th of July. Nothing in this will die in the heat and it is savory and wonderful! UPDATE! Made this exactly as written except sub'd in Broccoli - chopped, that I had microwaved. So Good!

Throw it Together Cake

Eliminated nuts due to allergy issues. Followed recipe exactly after that. Came out great! WATCH THE TIMER! Removed from the oven at 47 minutes and toothpick was clean and cake was perfect. 55 minutes would have killed this. I was worried that there wasn't enough batter for a 13 X 9. It is a great brunch recipe and alternative to my constant Banana Bread. 4 1/2 stars. Was good! Submitted three pix because I couldn't decide which pix was best. Thanks for the recipe!

Jim's Cheddar Onion Soda Bread

A M A Z I N G ! My kids now request "Jim's Bread". I heard my 12 yr old explaining that he didn't know who Jim was, but his bread is really good! The onions have to be minced and you can have bread on the table (2 large loaves) inside of an hour. Not messy and so so good! My Kitchen Aid Mixer and the dough hook rock this! I have made this with fresh basil and sun dried tomatoes and roasted and chopped garlic. The original recipe is still the best. Going to make it as pizza crust and spread it out super thin! SO SO GREAT! Thanks for the recipe! I have made it once a week since I found this!
