I was a prepackaged, ready-made cook who thought putting a piece of toast in the toaster took more time than what I wanted to spend in the kitchen. Then I was diagnosed with Celiac Disease in January 2011 and my life changed. Now, I cook several times a day. I am constantly updating my diet to more healthy foods. I eat a lot of vegetables, very little red meat, and some chicken and fish. I avoid all gluten. I am actually really enjoying cooking, and trying new foods.

Learning what hummus was, how to make it, and discovering that it has become somewhat of an addiction for me. I eat hummus almost daily, but I prefer it warm, and apparently a lot of people find that to be strange.

My cooking tragedies
I cannot eat anything containing gluten. I am also allergic to mushrooms. I loved my gluten filled foods, and they were even better if they included mushrooms. Now I avoid them at all costs.
