Coconut Curry Tofu

This was good, but I think using regular coconut milk and regular soy sauce would make it so much better! I'm used to the curry at my favorite Thai restaurant being so much more flavorful and creamy with the coconut.

Grilled Baked Potatoes

These were very good, and an easily adaptable recipe too for different spices. I used new white potatoes, and this cooking method was not long enough. They needed more time boiling or more time on the grill to get them finished. I will make this again though!

Lemon Square Bars

I made this using key limes instead of lemons and it still came out beautifully! Squeezing and draining those limes was a little more effort, but so worth it!

Fresh Tomato Salsa

There was no way I was using 5 serranos, too painful! I subbed one jalapeno instead and it was perfect. I also added a clove of chopped garlic. Will make this again!

Minnesota Broccoli Salad

This was the first thing finished at a barbecue this weekend. I had never made a broccoli salad using anything other than raw broccoli, so I was concerned I would mess it up. It turned out perfect! I wish I had made more though, I've already been requested to make it again!

Cabbage Fat-Burning Soup

All the veggies in the soup really appealed to me, but I don't know if I'd make it again. Maybe without the onion soup mix? This was the first time I've ever used that soup mix and it was pretty salty. I also added garlic. If I make it again I'll add garbanzos and some different seasonings instead of the soup mix.

Peanut Butter Muffins

I have to agree with everyone, the method of cutting the peanut butter and cold butter really makes this good and interesting! I wanted to try the recipe as written to see how it was before I modified it. I have a sweet tooth, so my first instinct was yeah, it's not sweet enough. The peanut butter flavor is pretty light too. But overall, I think these were perfect muffins. Nice and light and fluffy! If I made it sweeter, I think it'd be a cupcake, not a muffin. As it was, it was perfect with a chai tea this morning! I think those peanut butter chips would be great in this, as would chocolate chips. If you add more sugar and make it a cupcake, add chocolate frosting! MMMmmm!

Delicious Black Bean Burritos

I wish these were spicier! Next time I'll add the whole jalapeno and maybe a little chile powder as well. I ended up opening my burrito and adding some fresh spicy pico de gallo. Perfect! I will make these again for sure, so fast and easy!

This was excellent! I barbecued the sausages because I'm a vegetarian and didn't want it in the sauce, but the sauce was delicious! I can't wait for leftovers!

Pasta and Bean Casserole

I only used about 12 ounces of gemelli pasta because I didn't want it to be too bland. It wasn't spicy at all with the jalapeno, I wouldn't leave it out! I mixed in a few ounces of cream cheese and mixed in the mozzarella too before I baked it.

Imitation Meatloaf

I love all the ingredients separately, but apparently not together. Maybe it was just too much filler (bread crumbs, wheat germ?) and not enough good stuff? Plus, I followed directions exactly and it was still a soggy, hard-to-slice mess.

Delicious Raisin Nut Banana Bread

I was honestly surprised this tasted so awesome! I thought for sure I would see cereal flakes, but you would never know it's in there. I used Raisin Bran Crunch, but it seems like a perfect way to use up any cereal in your house. I also added a dash of cinnamon and a dash of cloves. Perfect with my morning cup of coffee!

Black Beans a la Olla

This was a great dish, but I wish I had let it simmer longer. If I made it again, I might even let it sit in the crock pot for a few hours on low. It was great over rice, spicy but the perfect amount. I also used it as a filling in burritoes with cheese.

Parmesan Potato Wedges

Since I was already baking chicken in the oven, I decided to bake these rather than risk soggy potatoes. I covered them and baked them for 30 minutes before uncovering them and baking them another 30 minutes. They were done, but not crispy. Next time I would not cover them at all, and maybe put them on a baking sheet instead of a pyrex. Good flavor, not gritty as some people have said, and these would be perfect dipped into a garlic sour cream dip. For some reason they didn't taste that good with ranch or ketchup.

Garlic Cheese Chicken Rollups

This was so easy to make, and was declared 12 out of 10 stars! I used cream cheese, mixed with fresh chopped garlic and dried chives instead of the cheese the recipe asked for. I cooked it for 50 minutes and it was done perfectly.

Chili Potato Burritos

These burritos seemed dry inside and very dense and heavy. While the taste was okay, it seemed almost dry to me. If I make this again, I would rather do the potatoes differently. I think next time I would cut them into small pieces and bake them (covered) with the spices to cook them. Then I would put together the potatoes and cheese in the tortillas, but keep them on the smaller/lighter side. It also lends itself to adding other things, like beans, onions, olives, etc.

Spicy African Yam Soup

I think I put too much peanut butter in, which ruined it for me. I doubled it, and wished I hadn't. If I try it again I think I'll keep PB the same, get hot salsa instead of medium or add some hot sauce to it!

Party Pinwheels

These are my favorite pinwheels, so addicting! Instead of using a Ranch packet, I use the same amount of seasonings used in the Ranch Dressing II from this site (just omit the mayo and sour cream).
