Spinach Enchiladas

I felt the filling would've been better suited for manicotti, instead of enchiladas. There was too much spinach, in my opinion, pretty overpowering.

Grilled Tofu Skewers with Sriracha Sauce

I really didn't care for the sesame oil. If I make this again, next time I'll swap out for a milder oil instead, the sesame oil, sriracha and jalapeno were overpowering all together.

Banana Muffins II

Really good. I might have accidentally added 1/4 cup more of sugar...I lost count! I also added a teaspoon of vanilla, and a teaspoon of cinnamon.

Authentic Kicked-Up Syrian Hummus

This was very, very good! Next time, I'll use a little bit more of the juices from the garbanzo beans. I like my hummus a little thinner, it's easier to spread and to dip!

This was good, but it didn't make enough. I tripled the recipe. And, I added salt--about a pinch per cup. I'll use this recipe again and again!

Old School Mac n' Cheese

This might be my new favorite macaroni and cheese recipe! I added 1/4 cup of onions to the recipe when I was melting the butter. Next time, I'll scale down the cayenne. It was so good, but a little too much.

Sweet Potato-White Potato Salad

Good, but I felt it could've used a little spice. Next time I might add either some cayenne, or some chopped jalapeno. For the record, sweet potatoes looked a LOT better than the potatoes in this salad. Just use all sweet potatoes instead!

Cake Mix Cookies IV

My Mom used to make these a lot when I was growing up, except she made them in a pyrex and cut them into bar cookies. She usually added raisins or chocolate chips, and drizzed frosting on top. I did the same, and baked it for 20 minutes. Probably could've gone a few minutes longer. So fast and easy!
