Spinach Minestrone

I've made this a few times as written but lately I've been doubling the pasta and it comes out less like a soup and more like a stew. I prefer it that way. I do think it needs more flavoring but I haven't yet figured out what it is lacking. However, it's a great base recipe and I love making it for ease and nutrition!

Chili Mac

I thought it was okay, a little drier than I expected. But we ate it last night and tonight will reheat the leftovers with another can of tomatoes to see what happens.

Kabob Marinade

Wow - that's good! I used it on 1.5 pounds of moose steak and 1 pound of chicken, letting it marinate for about 8 hours. For the last two hours of marinating I added onion and green and red bell peppers. I skewered everything separately for their own cooking time and served it over rice. The steak was wonderful but the chicken was out of this world yummy. Will definitely use again!

Baked Turkey Meatballs and Garden Spaghetti

I liked this a lot and so did my son. There seems to be a little something missing in the flavor of the meatballs but it was still great! I'll make it again and try to find the ingredient I'm missing. Right off-hand I'm going to say worchestershire.

Best Ever Tuna Salad

Didn't use the crabmeat because I didn't have any but I'm anxious to try it! Even so, it was very tasty. Something seems to be missing but I can't quite put my finger on what it could be. Maybe after it marries overnight I'll feel differently. Either way, I'll be happily using this recipe from now on and I'll let you know if I find the missing ingredient :)

Oatmeal and Wheat Flour Blueberry Pancakes

This was a great base recipe. I had to make a few changes for taste though. I added a tablespoon of cinnamon and some vanilla. Also, there is WAY too much baking powder in my opinion and it left an aftertaste. Reduce the baking powder to 2 teaspoons. Other than that I love this healthy alternative to regular old pancakes!

Creamy Squash Soup

Rump Roast Au Jus

Sloppy Joes II

I used a small can of tomato sauce and tomato paste with a couple of dashes of worchestershire, a sprinkling of garlic powder and onion powder, and about a teaspoon of sugar in place of the ketchup just because it sounded more appealing. Also used lots of dijon mustard instead of just regular yellow. It was yummy!

Easy Caramelized Onion Pork Chops

What I love most about this recipe is all the ingredients are in the house all the time and it's SO easy to make! I had to add flour to the liquid to thicken it up in order to serve, however my husband requested that I make more sauce next time in order to have more to serve over the potatoes. So next time I think I will use a roux (or just flour) and more onions and water to make it into a gravy sauce.

Sweet Dinner Rolls

I made this with one cup of wheat flour substituted and without a bread maker. I shaped half the dough into croissants and half into biscuits. Both are very good.
